A wintertime comfort food at its best. I cook for 8 people with big appetites, so halve this recipe for a smaller group. If you like green bean casserole, try adding green beans and some fried onions on top for a tasty twist. Remember, homemade broth has the best flavor, but you can substitute store-bought or chicken or turkey broth.

1 pound ground beef
1 cup dried shiitake mushrooms
5 cups beef broth
16 ounces barley
1 sweet onion, diced
4 cloves garlic, chopped
1 teaspoon ground black pepper
1 teaspoon salt
½ teaspoon celery seed
1 teaspoon dried parsley
1 cup heavy cream
1 cup frozen green beans

Steps:

  • Cook and stir ground beef in a large skillet over medium heat until crumbly, evenly browned, and no longer pink, 7 to 10 minutes. Drain excess grease, and transfer beef to a slow cooker.
  • Place shiitake mushrooms into a food processor and pulse several times to cut the mushrooms into small pieces.
  • Stir shiitake mushrooms, beef broth, barley, sweet onion, garlic, black pepper, salt, celery seed, and parsley with the ground beef in the slow cooker.
  • Cook on Low for 5 hours.
  • Stir heavy cream and green beans into the soup and cook 1 hour more.

There is nothing better than a nice big bowl of homemade creamy mushroom and barley soup with some lima beans. Using a slow cooking crock pot for this recipe makes it a very easy one to make and enjoy.

1 portabella mushroom (two small or one big one)
8 ounces white button mushrooms (small package)
1 carrot (medium size)
3 cups beef stock (can or beef cubes)
1/4 cup barley
2 tablespoons margarine (or butter)
2 tablespoons basil leaves (fresh basil finely chopped)
1/8 teaspoon dried sage
1/8 teaspoon dried thyme
1/8 teaspoon garlic salt
1/8 teaspoon Mrs. Dash seasoning mix
1 pinch white pepper
1/4 cup lima beans (frozen)
1/4 cup half-and-half cream
1/4 cup bristol cream, Harveys
1/4 lb swiss cheese
1/4 cup basil (slightly chopped) or 1/4 cup arugula leaf (slightly chopped)

Steps:

  • PREPARATION:.
  • Cut the stems off the portabella mushrooms, slice into ¼ inch thin pieces and then cut each in half, set aside.
  • Clean the white button mushrooms and slice into big pieces, set aside.
  • Clean the carrot and then cut into diagonal slices, set aside.
  • Cut into thin slices the swiss cheese and set aside.
  • COOKING INSTRUCTIONS:.
  • This recipe is based on using a slow cooking crock pot set to 4 hours, high/fast cooking and will depend on you model crock pot; Step #1, 2 hours cooking time, Step #2, 1 1/2 hours cooking time and Step #3, ½ hours cooking time.
  • Step #1- In a crock pot add the stock, barley, portabella mushrooms, carrots , margarine, 2 tablespoons fresh chopped basil leaves, sage, thyme, garlic salt, Mrs. Dash, pinch of white pepper, a quick stir and cook for 2 hours.
  • Step #2- Next add the white button mushrooms and lima beans, a quick stir and cook for 1 ½ hours.
  • Step #3- Next add the half & half cream, Harvey's Bristol Cream, a quick stir and cook for ½ hour.
  • Ladle soup into individual bowls, topped with some swiss cheese and place in a microwave for about 2 minutes to melt the cheese.
  • Finally add some chopped basil/arugula leaves on top of each individual bowl and serve.
  • Enjoy!
  • NOTES:.
  • You can serve this soup with a bowl of sour cream on the side and allow guests to add to their soup as desired.
  • This soup can be served for as a main meal in the evening or for a hearty nice lunch as well.

1 cup mushroom, sliced
1 onion, chopped
1/3 cup barley, cooked
1 (26 ounce) can fat-free cream of mushroom soup
3 cups water
1/4 teaspoon dried thyme leaves, crushed
1/4 teaspoon pepper
chopped fresh parsley

Steps:

  • Melt butter in saucepan.
  • Add mushrooms and onion and cook until tender.
  • Add barley and cook until lightly browned.
  • Add soup, water, thyme and pepper.
  • Heat to a boil.
  • Cover and cook over low heat 40 minutes or until barley is done.
  • Garnish with parsley.

Make this vegetarian by swapping the beef broth out for your favorite vegetable broth, and change up the kinds of mushrooms you use to find your favorite combo. Reconstituted dry mushrooms can be used for a portion of the fresh, as well.

1 lb cremini mushroom, stemmed and sliced
3 medium carrots, scrubbed and chopped
1 cup pearl barley
4 cups beef broth
2 cups nonfat milk
1 bay leaf
1 teaspoon thyme
1 tablespoon soy sauce
2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons olive oil
salt
pepper

Steps:

  • Heat olive oil over medium heat in a large pot and add carrots and mushrooms, stirring occasionally until they soften and begin to brown.
  • Sprinkle mushrooms and carrots with flour, and cook for a minute or two to cook off the raw flour taste before adding the barley and cooking another 1-2 minutes.
  • Add bay leaf, thyme, broth and milk and bring to a boil. Reduce heat and simmer partially covered for 20 to 30 minutes, until barley is very tender.
  • Mix cornstarch with just enough cold water to dissolve it and add it to the pot along with the soy sauce and lots of black pepper. Taste and add salt, if needed. Remove bay leaf.
  • Serve hot with crusty bread and a sprinkle of parmesan.

3 cups fresh sliced mushrooms
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/3 cup butter or 1/3 cup margarine
1/3 cup flour
3 cups chicken stock
2 cups milk (including 1/2 cup evaporated milk to make up the 2 cups)
1/2 cup quick-cooking barley
1 teaspoon Worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon dry parsley flakes
1 dash pepper

Steps:

  • Sauté mushrooms, onion and green pepper in butter or margarine.
  • Blend in flour and continue cooking over medium heat until flour is browned.
  • Gradually add broth and milk.
  • Stir until thickened.
  • Add barley, Worcestershire sauce, salt, parsley and pepper.
  • Bring to a boil over medium heat, stirring frequently.

4 c water
1 1/2 tsp beef bouillon
1/4 c barley, dry
1 tsp olive oil
1/2 c chopped onion
2 minced garlic cloves
5 c sliced mushrooms
2 Tbsp vermouth, dry
1 c evaporated skim milk
1/4 c sliced green onions
1/4 tsp pepper
5/8 tsp salt

Steps:

  • 1. Combine water and bouillon granules in a large dutch oven.
  • 2. Bring to a boil.
  • 3. Add barley and return to boil.
  • 4. Cover, reduce heat and simmer 1 hour or until tender.
  • 5. Remove 1/2 cup barley, using a slotted spoon; set both mixtures aside.
  • 6. Coat a medium skillet with cooking spray; add oil and place over medium heat until hot.
  • 7. Add onion and garlic and saute 2 minutes.
  • 8. Add mushrooms and vermouth; cook an additional 2 minutes, stirring frequently.
  • 9. Cover, reduce heat; simmer 5 minutes.
  • 10. Remove from heat.
  • 11. In processor, add 1/2 cup drained barley, 1/2 cup mushroom mixture and milk.
  • 12. Process until smooth.
  • 13. Add pureed barley mixture and remaining mushroom mixture to dutch oven.
  • 14. Bring to a boil and remove from heat.
  • 15. Stir in remaining ingredients. Serve warm.
