I was looking for an easy and fast Mexican casserole and I got a few ideas from a couple recipes here on Zaar and then added my own touches and ingredients. This is an extra creamy casserole, just delicious! And this is a very versatile recipe. Use whatever type of meat you'd like, delete the onions for an even faster prep time, add jalapeños, etc. Delete the tortillas and it is an awesome enchilada filling or even an appetizer dip.

1 (1 lb) rotisserie roasting chicken
3/4 cup medium yellow onion, chopped (about half medium onion)
1 (16 ounce) can refried beans
1 (8 ounce) can Rotel tomatoes & chilies
1 (10 3/4 ounce) can Campbell southwest-style pepper jack soup
3/4 cup sour cream
3/4 cup shredded taco blend cheese
3 large flour tortillas
1 (1 1/4 ounce) package taco seasoning

Steps:

  • Pull apart chicken into bits and/or tiny strips into a large bowl.
  • Over medium heat sauté onions to desired texture.
  • Mix together chicken, taco seasoning, refried beans and Rotel tomatoes (with juices) and onions.
  • Mix together Southwest style condensed soup & sour cream in medium bowl.
  • In a medium casserole dish spread half the sour cream mixture on the bottom.
  • Then tear 1 tortilla into pieces on top of sour cream mixture.
  • Add 1/2 chicken mixture on top of that & then a layer of cheese.
  • Repeat layers and sprinkle cheese on top.(For an extra crunchy top, add an extra layer of torn tortilla between 2 cheese layers).
  • Bake at 350°F for 20 minutes or until heated through.
  • Both the chicken mixture & sour cream mixture can be mixed ahead of time & stored in the fridge.

This casserole is a favorite of everyone who has it. Every time I ask, "What would you like for dinner/your birthday/major event?" I am always surprised that the request is this simple casserole. My mother-in-law made this for my husband when he was a kid and it is still his favorite, and now my family requests it as well.

2 lbs boneless skinless chicken breasts, cooked and chopped into bite-sized pieces
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes and green chilies
1 (10 ounce) can chicken broth
8 ounces Velveeta cheese, shredded
1 (15 ounce) bag nacho cheese flavored tortilla chips, crushed
cooked rice
salt and pepper

Steps:

  • Prepare chicken and rice.
  • Preheat oven to 350°F Mix together soups, tomatoes, and broth.
  • In a large casserole dish, layer half of chicken, soup mixture, and cheese. Repeat.
  • Top with crushed chips.
  • Bake for 45 minutes or until bubbling; serve over rice.
  • NOTE: The chips get pretty dark--if you are afraid they will burn cover the casserole.

1 pound ground beef
¾ cup diced onion
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon salt
½ teaspoon ground black pepper
2 (10.75 ounce) cans condensed cream of chicken soup
1 cup milk
1 (8 ounce) container sour cream
2 (4 ounce) cans diced green chiles
10 (6 inch) flour tortillas, cut in half
1 (16 ounce) package shredded Mexican blend cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard most of the grease. Add onion, garlic powder, cumin, chili powder, salt, and pepper to the beef and cook until onion is soft, about 5 more minutes. Remove from heat.
  • Mix condensed soup, milk, sour cream, and green chilies together in a large bowl until well blended. Add beef mixture and stir until incorporated. Transfer just enough beef mixture to cover the bottom of a 9x13-inch baking pan. Layer with 1/2 of the tortillas, 1/2 of the remaining beef mixture, and 1/2 of the shredded Mexican cheese. Repeat layers once more with remaining tortillas, beef mixture, and cheese.
  • Bake in the preheated oven until bubbly and cheese is melted, 30 to 45 minutes.

2-1/2 lb. baking potato es (about 7)
1/4 cup butter
1 small onion, chopped
1/4 cup flour
2-1/2 cups milk
1-3/4 cups KRAFT Shredded Queso Quesadilla Cheese with a TOUCH OF PHILADELPHIA, divided
2 Tbsp. GREY POUPON Dijon Mustard
1/4 cup KRAFT Grated Parmesan Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
  • Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups shredded cheese; cook and stir 1 min. or until melted. Stir in mustard.
  • Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
  • Bake 25 to 30 min. or until heated through. Top with remaining cheeses and bacon; bake 5 min. or until shredded cheese is melted.
