Easy Cheesy Crock Pot Chicken and Rice Casserole with veggies. Simple and SO yummy! A family favorite healthy crockpot meal. This easy crock pot recipe is made with real ingredients, gluten free, and freezer friendly. Even kids love it!*Update 4/11/19: Updated the amount of chicken broth because a few people reported having issues with the rice coming out crunchy. I have never had this problem and have made it successfully several times with the original 2 1/2 cups chicken broth.*

1 cup long-grain brown rice
1 1/2 cups diced carrots (about 4 medium)
1 small shallot
1 tablespoon Dijon mustard
1 1/2 pounds boneless, skinless chicken breasts (or chicken thighs)
1 1/2 teaspoons garlic powder
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 1/2-3 1/2 cups low-sodium chicken broth
1 cup frozen peas
1/2 cup nonfat plain Greek yogurt
1/2 cup freshly grated sharp cheddar cheese (divided (I love white cheddar for this))
Chopped fresh parsley (optional for serving)

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Add the rice, carrots, shallot, and Dijon mustard, and stir to combine. Arrange the chicken breasts on top, then sprinkle with the garlic powder, thyme, salt, and pepper. Pour in the chicken broth. Cover and cook on HIGH for 1 1/2 to 2 1/2 hours, until the chicken is cooked through.
  • Remove the chicken to a plate and cover to keep warm. Stir the rice, vegetables, and broth, then re-cover and continue cooking on high until the rice is tender, about 1 additional hour.**
  • Uncover and stir in the peas and Greek yogurt. Dice the chicken and stir it in with 1/4 cup cheddar cheese. Sprinkle the remaining cheese over the top, then re-cover and cook for a few additional minutes on high until the cheese is melted. Serve warm, sprinkled with fresh parsley as desired.

1 cup diced yellow onion ((about 1 medium onion))
2 tablespoons salted butter
2 chicken breasts ((cut into 1-2" pieces))
1 cup long grain white rice ((uncooked))
½ teaspoon garlic powder
½ teaspoon dried thyme or fresh thyme
½ teaspoon salt
3 cups low-sodium chicken broth
8 ounces frozen mixed vegetables
3/4 cup sour cream
1 cup sharp cheddar cheese ((shredded))
parsley ((optional garnish))

Steps:

  • Add butter and onion into a skillet over medium high heat and cook until onions are translucent, about 3 minutes.
  • Add in chicken and cook until chicken is opaque, about 3 more minutes. It's okay if chicken is not cooked through yet. It will continue cooking later on.
  • Stir in rice, garlic powder, thyme, salt, and chicken broth. Bring to a boil.
  • Once boiling, turn down heat, and cover. Simmer for 15 minutes.
  • Stir in frozen mixed vegetables, cover, and let cook for an additional 3-5 minutes until vegetables are cooked though.
  • Take pan off heat and stir in sour cream and cheese. Return the pan to stove and over low heat, let the mixture cook until cheese is melted, about 1-2 minutes.
  • Garnish with parsley, optional and serve. Enjoy!

3 tablespoons Simple Truth butter
1 medium onion (, chopped)
2 cloves garlic (, minced or pressed)
2 teaspoons kosher salt
1 teaspoon Private Selection dried thyme
1 1/2 cups long grain white rice
1 carrot (, diced)
3 cups Simple Truth chicken broth
1 12-ounce can evaporated milk
1 pound skinless, boneless chicken (, (about 2 breasts or 4 cups))
1/2 teaspoon freshly ground black pepper
1 10-ounce bag frozen peas (, or 1 15-ounce can of peas, drained)
1 cup shredded cheddar cheese

Steps:

  • Melt the butter in a large skillet or dutch oven over medium to medium-high heat. Add the onion, garlic, 1 teaspoon of the salt and the thyme. Cook until the onion softens, about 5-7 minutes, stirring occasionally. Add the rice and carrot and cook for 2-3 minutes.
  • Add the chicken broth and evaporated milk and stir in the chicken, the remaining salt and the black pepper. Bring to a boil then reduce to a simmer. Stir, cover with a lid and cook for about 15 minutes, stirring so the rice doesn't stick to the pot.
  • Stir in the peas and add more chicken broth or water if the mixture is too thick. Sprinkle with the cheese and cover with the lid to melt the cheese, and serve.

I find this recipe to be very flavorful and easy to prepare. My Littles always like it. I use a low sodium chicken broth and low fat cream of mushroom soup. The rice comes out very creamy and the chicken is always tender and delicious. Great hearty meal for fall, or anytime.

4 boneless chicken breasts, halved
2 cups uncooked brown rice
1 (10 ounce) can cream of mushroom soup
8 ounces milk
5 cups chicken broth
1 lb baby carrots
1 medium onion, loosely chopped
2 garlic cloves, minced
4 celery ribs, cut into bite sized pieces
1/4 teaspoon ground red pepper (cayenne)
1 teaspoon salt (or more to taste)
1 teaspoon black pepper
1 tablespoon lemon pepper

Steps:

  • Add rice to slow cooker.
  • Combine Cream of Mushroom Soup, Milk, Chicken broth, salt, black pepper, and ground red pepper. Add this to slow cooker.
  • Add carrots, onions, celery to slow cooker.
  • Add chicken on top.
  • Cook on Low for 8-10 hours.
  • Season with Lemon Pepper to taste.
