1 cup mayonnaise
1 cup Mexican blend cheese, shredded (half Monterrey jack or half Cheddar)
1/2 cup parmesan cheese
1 (4 ounce) can green chilies, chopped
1 (4 ounce) can jalapenos, diced
1 cup panko breadcrumbs
1/2 cup parmesan cheese
1/4 cup butter, melted

Steps:

  • Combine the first 6 ingredients in a mixer or food processor and blend until smooth.
  • No need to drain the cans of chillies or jalapenos, it is a personal option. Spread the dip into a greased casserole dish.
  • In a bowl, combine the panko breadcrumbs, the additional 1/2 c Parmesan cheese and melted butter. Sprinkle crumb mixture evenly over the dip and bake in a preheated 375 degree oven for about 20 minutes until the top is browned and its bubbling around the edges.

This is one of my favorite dips ever! I could eat it for a meal, really! I like it best with On The Border Cantina Thins. When I first made it, I followed another recipe but found it unlike the original Chuy's dip, so I altered it and I think this is right on the money! Make sure you add the milk a little at a time until you reach your desired consistency. (Most of the copycat recipes I've seen are thick, but I remember it being thin at Chuy's.) My husband high-fived me when he first tasted it. Enjoy!

1 (1 ounce) packet hidden valley ranch dressing mix
2 garlic cloves, finely chopped
1/2-3/4 cup jalapeno pepper, finely chopped

  • Heat oven to 400°F.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Beat eggs and mustard in shallow dish until blended. Measure flour into second shallow dish. Combine corn flake crumbs, garlic powder and onion powder in third shallow dish.
  • Dip 1 chicken strip into flour, turning to evenly coat both sides of strip with flour; gently shake off excess flour. Repeat to dip chicken strip in egg mixture, then cereal crumb mixture. Place on prepared baking sheet. Repeat with remaining chicken strips and coating ingredients.

1/2 of a yellow or white onion, diced
1 jalapeño, finely diced (omit seeds if you don't want it as spicy)
½ teaspoon garlic powder
¾ teaspoon salt
Freshly ground black pepper
1 (5-ounce) bag of fresh spinach or about 1 cup of frozen spinach
1 (12-ounce) jar marinated artichoke hearts, drained and chopped into ½ inch pieces
1/2 cup plain greek yogurt (whole milk or 2% is great)
8 ounces plain cream cheese
1 cup shredded mozzarella cheese, divided
1/2 cup grated parmesan or pecorino romano cheese
For serving:
Tortilla chips, pita chips, crackers or veggie sticks for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a 10-inch cast iron skillet over medium heat and add olive oil. Saute onion for 5 minutes or until it begins to cook down and soften. Next stir in jalapeno, garlic powder, salt and pepper and cook for another minute or so.
  • Add in spinach and cover the pan with a lid until spinach wilts. Turn off heat and stir in cream cheese, breaking it apart with a spoon until it melts. Stir in greek yogurt and mix until well combined. Add in chopped artichoke hearts, parmesan cheese and ½ cup of the mozzarella cheese, stirring well to combine.
