BAKED APPLES WITH BROWN SUGAR
Great comfort food. Best to make fresh but you can prepare the apples well ahead of time and just refrigerate until ready to bake. They'll brown up a little bit from exposure to air but that won't matter once they're cooked, all bubbly, brown and delicious.

- Preheat oven to 350 degrees F.
- Wash and dry apples. Cut the apples in half and remove the core but leave any stems intact. Place apples in baking dish. Divide butter among each core cavity. Top each apple half with a tablespoon of sugar and dash with cinnamon.
- Bake apples until the flesh is tender and they're bubbly and perfect looking, about 30 minutes. Serve with Creamy Custard Sauce.
- Heat the melted ice cream in a small saucepan over low heat until hot. Meanwhile, put the yolks in a mixing bowl and whisk until smooth. While whisking, slowly drizzle about 1 or 2 tablespoons hot melted ice cream into the yolks until blended. While whisking constantly, slowly add the rest of the hot liquid to the yolk mixture. Pour the mixture back into the saucepan and return to low heat.
WARM APPLES AND ICE CREAM

- Preheat a medium skillet over medium to medium-high heat. Peel and quarter the apples. Core each quarter. Slice the apples up. Add butter to the skillet, then apples. Saute 7 or 8 minutes, add sugar, cinnamon and cloves and cook 2 minutes more. Spoon the sauteed apples into dessert dishes and top with ice cream, whipped cream, and garnish with grated nutmeg.

- Mix the oats, 1/2 cup flour, and brown sugar in a bowl; cut in the butter or margarine until crumbly. Place half of the mixture in the bottom of a greased 8x8" baking dish.
- Combine the apples, 1 tablespoons flour, cinnamon, salt, water, and granulated sugar; place in the baking dish over the oat mixture.
- Cover with the remaining oat mixture. Bake at 350 degrees for 45 minutes.

- Place sweetener, pudding mix, cornstarch, cinnamon, and salt in a microwave-safe medium-large bowl.
- Add 1/3 cup of cold water, and stir until blended. Place apple chunks in the bowl, and toss them in the liquid mixture.
- Cover the dish and microwave for 2 1/2 minutes.
- Allow it to thicken and cool for a few minutes before removing it from the microwave.
- Meanwhile, place the granola bar in a sealable plastic bag and crush with a rolling pin or can, until you have small crumbly pieces.
- Once apple mixture is cool enough to handle, stir in the granola pieces, and then devour immediately!
