CREAMY GOLDEN CARROT SALAD
This as a family recipe I got from my Aunt...I had stayed with them for the summer one year and she would make this for me...Her and I would make a huge bowl of it and eat the whole thing...It is so creamy sweet and delectable you can't stop eating it...When you marry the Mayo and marshmallow cream it is to die for....

- 1. In large bowl, add shredded carrots, pineapple drained, raisins rinsed but not soaked...
- 2. Creamy Dressing: in microwavable bowl, stir together May and Marshmallow cream, heat in microwave approx 1 minute at a time till Marshmallow Cream is melted and mixed with Mayo...Pour over Carrot, Pineapple, Raisin Mixture and stir well...Chill 1 to 2 hours...Serve chilled you may sprinkle a little Nutmeg on top when serving..
- 3. You may decide to do only Raisins or only Pineapple...I prefer both...The dressing mixture has a sort of roasted Marshmallow flavor to it... ENJOY!

- Mix carrots and raisins together in a large bowl. Whisk mayonnaise, lemon juice, and salt together in a small bowl until smooth. Pour lemon juice mixture over carrot mixture and stir until carrots are completely coated. Refrigerate until chilled, at least 30 minutes.

- In a large bowl, mix first 6 ingredients. Stir in remaining ingredients. Refrigerate, covered, until serving.

BAREFOOT CARROT SALAD
Steps:
- Place the raisins in a small bowl and cover with boiling water. Allow to sit for 5 minutes and then drain.
- Fit a food processor with the grating blade. Cut the carrots in half and place in the feed tube so they are lying on their sides. Process in batches. Place the grated carrots in a medium bowl, add the lemon juice and toss.
- For the dressing, whisk together the sour cream, mayonnaise, sugar and salt. Pour the dressing over the carrots and add the pineapple and raisins. Toss together and serve.
