1/4 cup Miracle Whip
3 Tbsp. milk
1/2 Tbsp. red wine vinegar
2 tsp. sugar
Salt and Pepper (to taste)
2 cups sliced cucumbers

Steps:

  • Whisk together Miracle Whip, milk, vinegar, sugar, salt and pepper until well blended. Add sliced cucumbers to the mix and combine until all cucumbers are covered. Serve immediately or refrigerate before serving.

I don't remember where I got this recipe from but it sure is good. It makes a great dish for gatherings. Everybody seems to want the recipe.

1/2 cup sour cream
1/2 cup Miracle Whip
1/4 teaspoon salt
1 tablespoon sugar
2 tablespoons vinegar
1 medium onion
2 medium cucumbers
dill weed or fresh chives, to your tasting

Steps:

  • Peel Cucumbers and scoop out seeds with a spoon.
  • Cut into bite size pieces and sprinkle with salt (no special amount).
  • Let drain for about an hour then rinse cucumbers well with cold water.
  • Cut onions into bite size pieces and add to cucumbers.
  • Mix sour cream, miracle whip, salt sugar, vinegar, and dill weed or chives together and pour over cucumbers & onions.

1 bunch green onions with tops, chopped
1 cup mayonnaise
1/4 cup evaporated milk

This is such a yummy blend of cucumbers and onions in a sweet creamy sauce. When I was young my Grandma would make this for me all the time. That was over 30 years ago. It is a wonderful go to recipe for those hot summer days when you don't want to cook. I prefer using Vadalia onions, but any yellow onion will do. I try not to use too big of cucumber (diameter) because there are too many seeds. I have even substituted splenda for the sugar and light miracle whip with good results. (However, the juice doesn't flavor as long with the splenda). Finally, the cook time is the refrigerator marinate time. I hope you enjoy.

3 -4 large cucumbers
1 large yellow onion
1 cup Miracle Whip
1/2 cup sugar
1/4 cup white vinegar
1/4 teaspoon salt (or to taste) (optional)
1/4 teaspoon pepper (or to taste) (optional)

Steps:

  • Peel and slice cucumber and onions thinly. The best results are even slices. I use a mandolin for this step.
  • Place sliced cucumber and onions in a medium bowl that has a lid.
  • In a small bowl mix together the Miracle Whip, sugar, vinegar. Add salt and pepper if using. Pour over top of the cucumbers/onions. Place the lid on the bowl and give it a shake or two.
  • Marinate 6 hours or overnight in the refrigerator.
  • Do not add more liquid. Juice will keep for a long time. Just keep adding onions and cucumber as they get low until you no longer get the wonderful flavor on the cucumbers. Then it is time for a new batch.

1 c miracle whip (or mayo)
1 onion (optional)
2 pinch salt & pepper

  • 1. Peel cucumbers. Slice cucumbers. Place in bowl of water with 1/4 teaspoon of salt. Let sit in fridge from 1-4 hours.
  • 2. Drain cucumbers. Add rest of listed ingredients. Use more miracle whip is you want it thicker. Use more milk/vinegar to thin. Really season to your liking.
