This is my spin on Alfredo sauce. We love cream cheese, mushrooms and garlic. So I decided to try different ways of creating this tasty dish! Serve with fettuccini, and sliced crusty bread for mopping!

2 tablespoons butter
2 portobello mushroom caps, thinly sliced
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups milk
6 ounces grated Parmesan cheese, or to taste
1 clove garlic, crushed
1 tablespoon minced fresh basil leaves
ground white pepper, to taste

Steps:

  • Heat 2 tablespoons of butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until softened, about 5 minutes. Set aside.
  • Meanwhile, melt the cream cheese and 1/2 cup of butter in a saucepan over medium heat, stirring occasionally. Stir in the milk and Parmesan cheese, mixing until smooth. Add in the garlic, basil, and white pepper. Simmer for 5 minutes, then remove the garlic. Stir in the cooked mushrooms before serving.

CREAMY COTTAGE CHEESE ALFREDO PASTA



Creamy Cottage Cheese Alfredo Pasta image

Forget the heavy cream and butter, this healthy alfredo style sauce is made with just cottage cheese and garlic! It's rich and comforting, yet far lighter than traditional alfredo. Best of all, the entire dinner comes together in the time it takes to boil a pot of water. You can either use plain cottage cheese or a chive flavored cottage cheese. Feel free to swap out the frozen peas for chopped broccoli or asparagus. Don't forget to reserve 1/2 cup of the pasta cooking water before draining (I like to place a measuring cup in my colander so I don't forget!).

Salt and freshly ground black pepper
1 small garlic clove, peeled
2 cups (1 16-oz) container cottage cheese (not low-fat)
1 pound spaghetti or linguini
1 cup frozen peas
1/2 cup grated parmesan cheese, plus more for serving
Chopped chives, for serving (optional)

Steps:

  • Bring a large pot of water to a boil, and season it with salt.
  • In a mini food processor (or high speed blender), process the garlic until finely chopped. Add the cottage cheese, and process until smooth (easiest sauce EVER!!). Scrape the sauce into a large heat-proof bowl.
  • Cook the spaghetti in the boiling water according to the package directions. During the last 2 minutes of cooking, scoop out 1/2 cup of the cooking water (reserve it), and add the peas to the pot. Once the pasta is al dente, drain it (with the peas). Immediately transfer the hot pasta and peas to the bowl with the cottage cheese. Add the parmesan cheese, season well with salt and pepper, and toss to combine. Add a few splashes of the pasta cooking water, tossing until the sauce is loose enough to evenly coat the spaghetti.
  • Twirl the spaghetti into bowls and garnish with more parmesan cheese and a sprinkle of chives, if you'd like. Devour!

3 cups penne pasta, uncooked
1 cup milk
1 cup BREAKSTONE'S 2% Milkfat Low Fat Cottage Cheese
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed, softened
1 clove garlic, coarsely chopped
1/4 cup plus 1 Tbsp. KRAFT Grated Parmesan Cheese, divided
2 cups tightly packed coarsely chopped fresh spinach
1 cup halved grape tomatoes

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, blend milk, cottage cheese, Neufchatel, garlic and 1/4 cup Parmesan in blender until smooth; pour into large skillet. Cook on medium heat 5 min. or until heated through, stirring constantly.
  • Drain pasta. Add to sauce in skillet along with the spinach and tomatoes; mix lightly. Cook on medium-low heat 2 to 3 min. or until heated through, stirring occasionally. Remove from heat. Sprinkle with remaining Parmesan.
