2/3 cup all-purpose flour
2/3 cup cornmeal
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 large egg, room temperature
1 cup buttermilk
3 tablespoons butter
3 chipotle peppers in adobo sauce, drained and chopped
6 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the first 6 ingredients. In another bowl, whisk egg and buttermilk., Place butter in an 8-in. cast-iron or other ovenproof skillet; heat skillet in a 425° oven until butter is melted, 3-5 minutes. Meanwhile, stir egg mixture into dry ingredients just until moistened. Fold in peppers and bacon., Carefully swirl the butter in the skillet to coat the sides and bottom of pan; add batter. Bake at 425° until a toothpick inserted in the center comes out clean, 18-22 minutes. Cut into wedges; serve warm.

This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

2 (10 ounce) packages frozen corn kernels, thawed
1 cup heavy cream
1 teaspoon salt
2 tablespoons granulated sugar
¼ teaspoon freshly ground black pepper
2 tablespoons butter
1 cup whole milk
2 tablespoons all-purpose flour
¼ cup freshly grated Parmesan cheese

Steps:

  • In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

8-10 ears corn (still in the husk)
1-2 red bell peppers, diced
2-6 fresh jalapenos, diced (depending how spicy you like it!)
1 1/2 c heavy cream
salt and freshly ground black pepper to taste
1 1/2 stick salted butter, cut into pieces

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2. Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. (I do this inside the bowl because it goes everywhere if you cut it on a board.)
  • 3. Add the red bell peppers, jalapenos, heavy cream, salt to taste, a generous amount of pepper and butter and mix it well. Pour into a 9 by 13-inch baking dish. Bake until thoroughly warmed through, 30 to 45 minutes.

5 cups frozen corn (, thawed and excess moisture removed)
3/4 cup heavy cream
1 1/2 tablespoons granulated sugar
3/4 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
pinch of cayenne pepper
pinch of ground nutmeg
1 cup whole milk
2 tablespoons all-purpose flour
1/2 cup freshly grated Parmesan cheese
finely chopped fresh parsley (, for garnish)
finely cracked black pepper (, for garnish)

Steps:

  • In a large nonstick skillet, melt butter over medium-high heat. Add onion and sauté until softened and translucent, stirring frequently, about 2-3 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add corn, heavy cream, sugar, salt, pepper, cayenne pepper, and nutmeg. Stir to combine and cook for about 1 minute.
  • In a measuring cup or bowl, thoroughly whisk together the milk and flour until flour is fully incorporated; slowly pour into the corn mixture and stir to combine. Cook, stirring constantly for 4-5 minutes, or until thickened and corn is cooked through.
  • Remove from heat and stir in the Parmesan cheese until melted.

75g butter
1 onion , finely chopped
3 corn cobs
1 tsp sugar
125ml single cream
grated cheddar or mozzarella

Steps:

  • Heat 75g butter in a heavy-based pan until foaming and fry 1 finely chopped onion for about 5 mins. Cut the kernels off 3 corn cobs and add to the pan with 125ml water. Turn down the heat, cover and cook gently for 10 mins. Add 1 tsp sugar and 125ml single cream, season and cook, uncovered, for 5 mins more. Sprinkle the top with 50g grated cheddar or mozzarella and cook for a couple more mins until melted.
