BEST EVER SCALLOPED POTATOES - CREAMY, CHEESY, LOTS OF FLAVOR
I spent years developing this recipe to finally being what we refer to as the best ever scalloped potatoes. Every time I had an issue of what was wrong with the dish I figured out a way to correct it. I love to hear people's honest opinions as it helps me to become a better cook. - In a large covered casserole dish spray entire dish with a cooking spray and then spread 1 entire can of Cream of Mushroom soup evenly on the bottom (best way I've found to prevent the potatoes from sticking & adds flavor).
- Chop the onion into very small pieces & set aside.
- In a separate bowl mix 1 can of Cream of Mushroom soup, the Sour Cream and 1 TSP of Dry Lipton Onion Soup Mix (added for the flavor of the seasonings which makes it extra tasty).
- Peel & Slice the Potatoes Thin.
- LAYER #1: Start layering in the casserole dish with the Cream of Mushroom soup on the bottom: Layer of POTATOES then spread approx 6 spoonfulls of the SOUP & SOUR CREAM mixture on top, then ONIONS then ½ cup of CHEDDAR CHEESE.
- LAYER #2: POTATOES then approx 6 spoonfulls of the SOUP & SOUR CREAM mixture, then VELVETA CHEESE squares distributed evenly across.
- LAYER #3: POTATOES then all the remaining SOUP & SOUR CREAM mixture then the remaining 1 cup of CHEDDAR CHEESE.
- Sprinkle the chives evenly across the top.
- BAKE COVERED in the oven at 300 degrees for about 1½ hour.
- BAKE UNCOVERED for approx another 1 hour or as needed until done and top is slightly browned (test with a fork and make sure the potatoes are done). Note: Baking uncovered at the end helps reduce the excess moisture.

CREAMY CHEESY POTATOES
Comfort food at it's best! I don't usually measure when I make this dish, so the ingredients are approximations. You may need more or less of an ingredient to suit your tastes. If you want a cheesy dish, use the cheddar cheese soup, otherwise use the cream of mushroom to use as a creamy base.

- Preheat oven to 350 degrees.
- Season potatoes to taste.
- Spray a casserole dish with non-stick cooking spray.
- In a bowl, combine milk, soup and sour cream.
- Combine potatoes with milk and soup mixture. Add 1 cup cheddar cheese.
- Spread evenly into casserole dish and push a tblsp of butter into the mixture at 4 different places. This will help to prevent sticking while the dish cooks. Top with remaining cheese.
- Bake for about 30-45 minutes or until cheese starts to brown.

- Preheat oven to 350 degrees.
- Rub potatoes with salt.
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet.
- Cook over medium high heat until evenly brown.
- Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes.
- Slice potatoes in half lengthwise and scoop the flesh into a large bowl set skins aside for filling.
- To the potatoes add sour cream, heavy cream, butter, salt, pepper, 1/2 the green onions and cheeses saving 1/4 cup cheddar for topping.
- Mix with a hand mixer until well blended and creamy.

- 1. Preheat oven to 350 F. Spray casserole dish with cooking oil spray or grease casserole dish with shortening.
- 2. Saute onion in butter.
- 3. Add 1/4 cup flour, salt, mustard, and pepper to onion and butter.
- 4. Gradually add milk/cream whisking to make a nice white sauce. Stir and cook until thick.
- 5. Add shredded cheese, potatoes and ham (if so desired). Stir all ingredients together. Add a bit more milk if needed. The potatoes will absorb some of the milk so you may need a little more.

- 1. Cut a large piece of heavy duty foil (or regular foil doubled up), about 18x22 inches.
- 2. Place the sliced potatoes (peeled or not, your choice) and onions on the foil. Dot with the butter, then sprinkle the cheese, parsley, Worcestershire over all. - Preheat the oven to 350°F. Grease a 9-x-13-inch baking dish with 1 tablespoon of the butter. Take the potatoes out of the freezer while you are preparing the rest of the ingredients. Heat a large, deep skillet (or Dutch oven) over medium-high heat, then melt 6 tablespoons of the butter in it. Add the onions and cook, stirring occasionally, until the onions start to soften, 3 to 4 minutes. Sprinkle the flour over the onions and stir to incorporate. - Boil cubed potatoes for 20 to 25 minutes, until just tender. Drain.
- Melt fat-free margarine in a saucepan; saute onion until tender.
- In a measuring cup, combine milk and flour; add to onions.

DAD'S CREAMY & CHEESY AU GRATIN POTATOES | AMBITIOUS KITCHEN
My dad's famous cheesy, creamy au gratin potatoes made with three types of cheese for an incredible, easy side dish everyone will love!

- Preheat the oven to 375 degrees F. Spray a 2 quart square baking dish (or an 8x12 is good) with nonstick cooking spray or grease with butter or oil.
- Place sliced potatoes in three tight slanted rows as indicated in the photos. You don't want them to be overly tight, make sure you leave enough space so the potato slices are slightly slanted. Add in onion slices in between the rows and on top of potatoes. Basically wherever you can fit them.
- Next make your sauce: add in 2 tablespoons of butter and place over medium heat. Once butter is melted, whisk in a little bit of the flour and then slowly add in milk, a little bit at a time, alternating with the flour and vigorously whisking away any lumps. Bring mixture to a simmer; it should be a similar consistency to creamy gravy.
- Turn heat to low and stir in shredded cheddar cheese, garlic powder, salt and pepper. Taste and add more salt and pepper, if necessary.
- Pour the sauce evenly over the potatoes and onions to cover them. Don't worry, the sauce will get nice and creamy while baking.
- Cover the pan with foil, then bake for 45 minutes.
- After 45 minutes, remove foil, sprinkle top of potatoes with 1/2 cup shredded gruyere (or more cheddar) and ¼ cup parmesan. Return to the oven and bake for 30-45 more minutes or until potatoes are done and nice and golden brown on top. (Potatoes are done when the middle of the potatoes can be easily pierced with a fork.) Remove from the oven and garnish with fresh chopped parsley. Enjoy!

An easy way to make delicious potatoes as a side dish, or as a breakfast. I got this recipe from a long-ago recipe booklet, but changed it up a bit to make it less fattening, but no less yummy.

- 1. Cut potatoes into thin french fry strips, and lay the fries in a 9x13-inch glass pan
- 2. Pour the cream over the top of the fries. Salt and pepper the potatoes very generously.
- 3. Sprinkle at least 2 cups grated cheddar cheese over the top. Sprinkle parsley flakes on top of the cheese.
- 4. Spray a bit of cooking spray on one side of a sheet of foil. Lay the foil over the baking dish, sprayed side down. Poke 2 or 3 holes in the foil to allow steam to escape.
- 5. Bake in a preheated 400-degree oven, on the center rack, for 1 hour and 15 minutes, or until potatoes are tender.
- 6. During the last 15 or 20 minutes of baking, lower the oven rack one notch, so the bottom of the potatoes will be brown and crispy.
