The base of this easy-to-prepare salad is a slaw mix that you can pick up in the produce aisle at the local supermarket. Our Test Kitchen suggests the broccoli slaw mix or a standard cabbage, carrot, and red cabbage slaw combination. We love the addition of the toasted pecans and scallions for adding a nice savory touch, and that satisfying crunch, and the golden raisins add an unexpected hint of sweetness. 1 cup mayonnaise
1 cup chopped toasted pecans
1 cup golden raisins
1/2 cup chopped scallions
2 tablespoons apple cider vinegar
2 tablespoons grated lemon zest plus 2 Tbsp. fresh juice (from 3 lemons)
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 (12-oz.) pkg. broccoli slaw mix

Steps:

  • Stir together mayonnaise, pecans, raisins, scallions, vinegar, lemon zest and juice, salt, and pepper in a large bowl until combined. Add slaw mix; toss gently until thoroughly coated. Refrigerate 30 minutes. Toss gently, and serve.

Shredded broccoli is mixed with tart granny smith apples, chewy dried cranberries and crunchy sunflower seeds tossed in a simple creamy dressing!

32 ounces broccoli slaw mixture
1 granny smith apple
1 teaspoon lemon juice
1 cup dried cranberries
½ cup sunflower seeds
½ cup mayonnaise
2 tablespoons vinegar
1 tablespoon sugar
1 teaspoon celery seed
salt & pepper to taste

Steps:

  • Cut granny smith apple in half and remove seeds. Cut into fine julienne slices and toss with lemon juice.
  • Mix all dressing ingredients and set aside.
  • Combine all ingredients in a large bowl. Add dressing and toss to combine.
  • Refrigerate at least 1 hour before serving.

1 cup mayonnaise
¼ cup apple cider vinegar
2 tablespoons white sugar
⅛ teaspoon celery seed
1 (3 ounce) package Oriental-flavored ramen noodles, broken into small pieces
1 tablespoon olive oil
1 tablespoon sesame oil
¼ cup slivered almonds
1 (12 ounce) package broccoli coleslaw mix
½ cup chopped onion
¼ cup unsalted sunflower seeds

Steps:

  • Mix mayonnaise, vinegar, sugar, celery seed, and ramen noodle seasoning packet in a bowl; chill in refrigerator.
  • Heat olive oil and sesame oil in a skillet over medium heat; cook and stir ramen noodles and almonds until toasted, stirring frequently, 3 to 5 minutes. Remove from heat and cool.
  • Combine ramen noodles, almonds, broccoli coleslaw mix, onion, sunflower seeds, and dressing in a bowl; stir to coat.

FENNEL SLAW

Number Of Ingredients 7

3 teaspoon Mexican dried oregano
Juice of a lime (about 1 tablespoon)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra virgin olive oil
3 bulbs fennel (about 3 pounds)
2 red bell peppers, cored, seeded and julienned

Steps:

  • In a dry pan, toast the oregano for 1 to 2 minutes, until golden but not burned.
  • In a small bowl, whisk the lime juice, salt, pepper and oregano together. Drizzle in the olive oil, whisking constantly until emulsified.
  • Trim the stalks of the fennel down to the bulb and discard. Quarter the bulbs and trim away the triangle of core at the base. Slice the fennel as thinly as possible.
  • In a serving bowl, toss the fennel, red pepper and the dressing together until the vegetables are evenly coated. Serve immediately or refrigerate, covered, for up to 1 hour before serving, and toss again just before serving.
