SLOW COOKER CREAMY POTATO, CABBAGE, BROCCOLI AND CHEESE SOUP
I wanted something a little healthier than regular potato soup. This has some extra veggies and fewer processed ingredients and is wonderful on a cold day. I had to guess on the cooking time as I was home for this and ended up cooking on high because I couldn't wait to eat it.

Steps:
- Place everything except cabbage and cheese in a 6 quart crockpot.
- Add as much cabbage as will fit and still leave about an inch of space between the top of the food and the lid.
- Add water to almost cover the ingredients (about 2 cups when I made it).
- Cook on low until soft my guess is 6-8 hours then use an immersion blender to cream everything.
- add in cheeses and blend again, or let melt and stir.
- This is a nice hearty soup for the cold snap we are having. It needed a bit more flavor so I added the tony's at the end. Adding bits of ham at the beginning might work for that as well.

CREAMY BROCCOLI & CHEESE SOUP
A warming creamy soup made with broccoli and cheddar cheese

Steps:
- warm the olive oil in a large soup pot and add the onions. Cook until soft and golden in colour. Add the potatoes and continue to stir for a few minutes.
- Add the chicken stock and bring to the boil. Add the broccoli florets and reduce to simmer.
- Continue to simmer for around 20 minutes or until the potatoes and broccoli are soft.
- Blend until smooth and then stir in the cream. Continue to simmer on a low heat and gradually add the cheddar stirring continuously for around 10 minutes. Season and serve.

- In a large soup pot over medium heat, melt butter; add shallots and sauté for 3 minutes.
- Add flour and whisk briskly to form a roux. Slowly stir in broth.
- Add potatoes, broccoli, cauliflower and spices. Bring to a boil; reduce heat and simmer for about 15 minutes or until all veggies are very tender.
- Using an immersion blender/blender/food processor, puree to desired consistency.
- Return to pot over med-low heat and stir in cheeses and milk. Stir often until cheese is melted.

THICK AND CREAMY BROCCOLI CHEESE SOUP
This recipe came from my husbands Uncle Robbie, who is a great Cook. We were visiting him in Memphis on a cold and snowy day gathering groceries for the next few days. I mentioned how great a bowl of TGI Fridays broccoli cheese soup would be. The next thing I know we gathered the ingredients and were savoring this soup. I am so glad we did not go to the restaurant!!

Steps:
- Steam Broccoli by either putting in Microwave safe dish with lid and a small amount of water, or on stove in a covered sauce pan and small amount of water.
- Cook just until soft.
- Oil skillet 1/8" in bottom.
- Heat, then add 3 TBS Butter.
- Add 2 Tbs Flour, chopped Green onion bottoms and ground Pepper.
- Cook until Yellow in color, just enough so the flour is not raw.
- Add 2 Cans of Chicken Broth.
- Stir quickly, using whisk if you have one.
- Add Steamed Broccoli and any pan liquids.
- Add Green Onion tops, and Simmer 15-20 minutes on Med heat.
- This will slightly reduce liquid and impart flavors. The broccoli breaks apart and "makes" the soup. If you would like whole pieces of broccoli, keep some out to add at the end. This way they will not overcook.
- Reduce heat.
- Add Colby and American Cheeses.
- Cook on low 1 minute.
- Add 1 Cup Half and Half slowly, so it will not clump.
- Here you must watch temperature, so keep it on low.
- Cook 10 minutes.
- Add Cornstarch to water and stir.
- Pour in 1/2 of cornstarch mixture and stir.
- Then pour in 2nd half of mixture and stir.
- Turn heat off and stir until thick.

I saw some members add in mushrooms, garnish with bacon pieces, green onions and even a dollop of sour cream! Others have added chopped chicken to it. - Bring cream cheese to room temperature ( I microwave it on 4 for 1-1.5 minutes.)
- Pour broth and cream cheese into slow cooker, heat till smooth. Meanwhile, in a pot sautee onion in 2T. butter till almost transparent.
- Then add thawed broccoli and cook till tender.
- Add broccoli/onion mixture to slow cooker.
- Pour in cream and 2 cups of cheese.
- Heat through till cheese completely melts.

I found a couple that looked good, but wasn't exactly what I would do, so changed it up here and there until I came up with a creamy, dreamy recipe that will comfort any soup lovin' soul. - 1. In an almost large pot, steam your broccoli for 10 min and set aside. Dump out water and return pot to stove.
- 2. On medium heat melt butter and sauté onions until tender (approx 5 min). Add garlic and stir for 1 minute. Add flour and stir continually for 1 minute.
- 3. Slowly add chicken broth and stir until thick. Add evaporated milk that you have poured into a 2 cup measuring cup filled the rest of the way to the line with water. Stir until it begins to bubble. Turn off heat and take off of burner and then add steamed broccoli and cheese. Stir until melted and enjoy!
- 4. Serves 4 big eaters or 6 - 8 regular eaters.

A little restaurant we frequented when growing up made a soup very similar to this one. I made my own version of it and I think I've got it pretty darn close to theirs. - 1. In a large dutch oven, melt 2 tablespoons butter, then add onion, garlic and celery. Saute over med heat until tender crisp. Pour in chicken stock and broccoli and bring to a boil, then turn down heat and simmer for 10 - 15 minutes or until broccoli is tender. Carefully pour mixture into a blender, food processor or use a hand held blender to rough puree. I don't make mine completely smooth as we like a little texture. Pour back into pot, and keep the mixture warming over low heat. In a medium saucepan, melt the 4 1/2 tablespoons of butter and add the flour, whisk and cook over medium heat for a minute or two. Whisk in the cream and milk. Cook and stir until thickened. Pour the milk mixture into the warm broccoli mixture and stir well. Add desired amount of cheese and stir until melted. Add the cooked pasta, salt and pepper. Continue cooking until all is heated through. Taste and see if you want more seasoning or cheese. If so add it. Serve in bowls with shredded cheese, croutons, etc etc. I added some cubed ham I had left from Easter. Delicious!

This is an easy soup to make. The tomatoes give it more of a "zing" than other broccoli soups. I usually don't puree it completely smooth, but some prefer it that way.

- Place onion, broccoli, tomatoes (with juice), broth, pepper, and curry powder in a large soup pot. Bring to a boil. Reduce heat slightly and cook until broccoli is very tender; about 12-15 minutes.

- 1. Melt butter in lg pot over medium heat. Add onion and garlic. Cook, stirring for 5 mins. Whisk in flour. Whisk in light cream slowly. Whisk until smooth.
- 2. Pour in chicken broth. Add bay leaves and nutmeg. Season w/ salt and pepper. Bring to a simmer. Reduce heat to med-low. Cook, stirring occasionally, until thickened, about 20 mins.
- 3. Add broccoli and carrot. Simmer another 20 mins. Discard bay leaves. Puree soup, in batches in a blender. Return to pot. Add cheese, whisk until cheese is melted.

CREAMY BROCCOLI-CHEESE SOUP
Rich, creamy, and so delicious! We like this soup thick and pureed without big chunks of broccoli, nor do we like spice in it. If the soup seems to thick for your liking at the end of cooking, add a splash of milk or chicken broth to thin it out. This recipe can easily be doubled.

- Melt the butter in a stock pot over medium heat, and then add the onions. Cook the onions for 2 to 3 minutes, and then sprinkle the flour over the top. Stir to combine.
- Pour and whisk in the milk and half-and-half. Add in the broccoli, salt, and black pepper. Cover and simmer for 10 minutes.
- After 10 minutes, transfer soup to a blender and puree completely.
- Return the puree to the cooking pot, and stir in the freshly shredded cheese. Stir until cheese is melted and the soup is smooth and creamy and heated through. (Taste test to see if more salt and pepper is needed. You can also add some spice at this time if you like spice in your soup). Note: Use any cheese or combination of cheeses you like. I use a combo of sharp and med. cheddar. Freshly shredded Cheddar cheeses melt much better than bagged cheese.
- Serve immediately in either bread bowls, or soup bowls. Garnish with shredded cheese.
