1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced
1 pound ground chicken
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
  • Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
  • Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
  • Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
  • Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
  • Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.

2 pounds fresh broccoli, coarsely chopped
1 large onion, coarsely chopped
½ cup water
¼ cup all-purpose flour
1 (14 ounce) can evaporated milk, divided
salt to taste
1 cup cubed sharp Cheddar cheese
2 tablespoons dry bread crumbs, or to taste
1 tablespoon butter, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish.
  • Place broccoli and onion into a saucepan, pour in water, and bring to a boil. Reduce heat to low, cover, and cook until broccoli turns bright green and starts to become tender, 8 to 10 minutes.
  • Whisk flour and 1/4 cup evaporated milk together in a bowl until smooth. Stir remaining evaporated milk and salt into broccoli. Gently stir flour mixture into broccoli mixture and bring to a simmer; cook until thickened, 2 to 3 minutes. Remove from heat and stir in sharp Cheddar cheese, mixing until cheese has melted into the sauce.
  • Cook and stir bread crumbs with butter in a small skillet over medium heat until butter has melted and crumbs begin to give a toasted fragrance, 1 to 2 minutes. Remove from heat.

2 tablespoons butter
¼ teaspoon salt
2 tablespoons all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese, cubed
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 4 to 6 minutes; drain.
  • Melt butter in a large saucepan over medium heat. Stir in salt, flour, and milk. Cook, stirring constantly, until thick and bubbly. Stir in cream cheese until melted. Remove from heat, and stir in broccoli.

1 medium onion, chopped

2 cups long grain brown rice
4 cups chicken broth
2 (12 ounce) packages frozen broccoli
2 teaspoons extra virgin olive oil
1/2 medium onion, diced
2 garlic cloves, minced
1 lb boneless chicken breast, diced
1 teaspoon salt
2 cups 1% low-fat milk or 2 cups almond milk
3 tablespoons unbleached white flour
1/3 cup organic plain Greek yogurt
1 1/2 cups shredded cheddar cheese

Steps:

  • Spray a 9x13" baking dish with cooking spray and set aside.
  • Bring broth to a boil in a medium pot. Once boiling, add rice. Reduce heat to medium-low and simmer, covered, for 45 minutes. Meanwhile, cook broccoli according to package directions and set aside.

1 -2 tablespoon minced fresh garlic

1 cup shredded old cheddar cheese
1/2 cup sour cream

3 (10 ounce) bags frozen broccoli florets
2 tablespoons olive oil
8 tablespoons unsalted butter, divided

1 yellow onion, finely chopped

Steps:

  • Cook the broccoli according to your package's directions (I usually just microwave it in a bowl with a few tablespoons of water until it's done). Drain and transfer to a 9" x 13" baking dish and set aside.
  • Heat oil and 2 tablespoons butter in a 10" skillet over medium-high heat. Add mushrooms, and cook, stirring, until browned, about 5 minutes; transfer to a bowl and set aside.
  • Add 3 tablespoons butter to skillet and melt. Remove from heat add bread crumbs and sage; season with salt and pepper and set aside.

1 cup milk (I used 2%)
1 teaspoon poultry seasoning
1/2 cup flour
2 cups water, divided
1 cup uncooked quinoa, rinsed

1 pound boneless skinless chicken breasts
2 teaspoons seasoning (like Emeril's Essence or any basic blend you like)
1/4 cup shredded Gruyere cheese (any kind will work)
3 cups fresh broccoli florets

Steps:

  • Sauce: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Cover with foil and bake for 30 minutes. The broccoli keeps growing and growing. It's a darn hardy vegetable plant that gives and gives. Once you take the first crown, then the darling plant proceeds to take on many different baby crowns, that are tender, and perfection plus! I really like that a simple, yet, flourishing plant can bring that much enjoyment to our day. I particularly like this recipe, as it can be a whole dinner for us some evenings. Although Dennis does require "meat" at most meals, he could just as happily toddle off with a large scoop of this casserole and a fork, and he proclaims he is in heaven. Just a simple, farming, boastful dish of warmness and total soul comforting veggies. I agree, this is not a skinny dish, but you can make it that way just by changing the fat to low fat and increase the spices. Come'on -- try it, I promise it won't hurt a bit.

Steps:

  • Cook broccoli and drain.
  • In skillet, warm 1 tablespoon of oil, and add onions and cook for 3 minutes until soft and translucent. Quickly add garlic and cook for 30 seconds. Add rest of ingredients except eggs. Mix all these ingredients and let bubble a slightly, take pan off heat.
  • Spray casserole dish with cooking spray. Put broccoli into casserole dish. Mix soup, cheese mixture with broccoli and stir well, adding eggs slowly, and mixing well. NOTE: Leave 1/2 French Fried Onion topping for topping.
  • Bake 350 degrees for 15 minutes add rest of topping, and bake addition 10 minutes.

1 can(s) cream of mushroom soup
1 c mayonnaise
3/4 c chopped pecans
1 medium onion, chopped
2 pkg frozen chopped broccoli, cooked and drained
1 c shredded cheddar cheese
1 Tbsp butter, melted
1/4 c soft bread crumbs

Steps:

  • 1. In a bowl, beat eggs; add soup, maonnaise, pecans, and onion. Stir in broccoli; pour into a greased 2 quart shallow baking dish. Sprinkle with the cheese. Combine butter and crumbs; sprinkle on top. Bake, uncovered, at 350 degrees for 30 minutes.

1 can (6 oz) albacore tuna in water, drained
1 can (18 oz) Progresso™ Vegetable Classics creamy mushroom soup
1/4 cup milk
1 1/2 cups garlic bagel chips (from 6-oz bag), broken into pieces

Steps:

  • Heat oven to 350°F. Cook and drain pasta as directed on package, adding broccoli 5 minutes before pasta is done cooking.
  • Return cooked pasta and broccoli to pan; stir in tuna, soup and milk. Spoon into ungreased 8-inch square (2-quart) glass baking dish.
  • Bake 15 minutes. Sprinkle with bagel chips. Bake 10 to 15 minutes longer or until bagel chips are lightly browned and casserole is hot.

6 cups frozen chopped broccoli
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 cup fat-free mayonnaise
1 cup shredded reduced-fat cheddar cheese
1/2 cup egg substitute
1 small onion, finely chopped
3 tablespoons butter, melted
1/4 cup reduced-fat butter-flavored crackers (about 6 crackers)
Refrigerated butter-flavored spray

Steps:

  • Place 1 in. of water and broccoli in a large saucepan; bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender.
