Creamy broccoli casserole that is a great way to get kids to eat their vegetables! If you are going to freeze or refrigerate until later, do not add the crumbs until you are about to cook it.

2 pounds fresh broccoli, coarsely chopped
1 large onion, coarsely chopped
½ cup water
¼ cup all-purpose flour
1 (14 ounce) can evaporated milk, divided
salt to taste
1 cup cubed sharp Cheddar cheese
2 tablespoons dry bread crumbs, or to taste
1 tablespoon butter, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish.
  • Place broccoli and onion into a saucepan, pour in water, and bring to a boil. Reduce heat to low, cover, and cook until broccoli turns bright green and starts to become tender, 8 to 10 minutes.
  • Whisk flour and 1/4 cup evaporated milk together in a bowl until smooth. Stir remaining evaporated milk and salt into broccoli. Gently stir flour mixture into broccoli mixture and bring to a simmer; cook until thickened, 2 to 3 minutes. Remove from heat and stir in sharp Cheddar cheese, mixing until cheese has melted into the sauce.
  • Cook and stir bread crumbs with butter in a small skillet over medium heat until butter has melted and crumbs begin to give a toasted fragrance, 1 to 2 minutes. Remove from heat.
  • Transfer broccoli mixture into the prepared baking dish and sprinkle crumbs atop casserole.
  • Bake in the preheated oven until bubbling and browned, about 30 minutes.

Slow Cooker Creamy Potato, Cabbage, Broccoli and Cheese Soup image

I wanted something a little healthier than regular potato soup. This has some extra veggies and fewer processed ingredients and is wonderful on a cold day. I had to guess on the cooking time as I was home for this and ended up cooking on high because I couldn't wait to eat it.

1 cup chopped onion
2 teaspoons minced garlic
1 cup chopped celery, 2 stalks
12 ounces frozen broccoli florets
8 medium potatoes, cubed golden potato
1/2 teaspoon pepper (or more)
1/2 teaspoon paprika (or more)
4 cups chicken stock
2 cups water (more or less)
1 small cabbage, chopped
8 ounces neufchatel cheese (cream cheese)
1 cup shredded Mexican blend cheese (not the taco seasoning type, or cheddar if you like)
tony chachere's original creole seasoning

Steps:

  • Place everything except cabbage and cheese in a 6 quart crockpot.
  • Add as much cabbage as will fit and still leave about an inch of space between the top of the food and the lid.
  • Add water to almost cover the ingredients (about 2 cups when I made it).
  • Cook on low until soft my guess is 6-8 hours then use an immersion blender to cream everything.
  • add in cheeses and blend again, or let melt and stir.
  • This is a nice hearty soup for the cold snap we are having. It needed a bit more flavor so I added the tony's at the end. Adding bits of ham at the beginning might work for that as well.

This recipe came from my husbands Uncle Robbie, who is a great Cook. We were visiting him in Memphis on a cold and snowy day gathering groceries for the next few days. I mentioned how great a bowl of TGI Fridays broccoli cheese soup would be. The next thing I know we gathered the ingredients and were savoring this soup. I am so glad we did not go to the restaurant!!

2 lbs fresh broccoli
1 cup green onion (chopped and tops and bottoms separated)
2 (10 ounce) cans chicken broth
1 lb colby cheese
1 -1 1/2 lb American cheese or 1 -1 1/2 lb cheddar cheese
1 cup half-and-half
2 tablespoons flour
3 tablespoons butter
1 tablespoon fresh ground pepper
1 -2 tablespoon cornstarch (to thicken)
1/2 cup water
1 tablespoon oil

Steps:

  • Steam Broccoli by either putting in Microwave safe dish with lid and a small amount of water, or on stove in a covered sauce pan and small amount of water.
  • Cook just until soft.
  • Oil skillet 1/8" in bottom.
  • Heat, then add 3 TBS Butter.
  • Add 2 Tbs Flour, chopped Green onion bottoms and ground Pepper.
  • Cook until Yellow in color, just enough so the flour is not raw.
  • Add 2 Cans of Chicken Broth.
  • Stir quickly, using whisk if you have one.
  • Add Steamed Broccoli and any pan liquids.
  • Add Green Onion tops, and Simmer 15-20 minutes on Med heat.
  • This will slightly reduce liquid and impart flavors. The broccoli breaks apart and "makes" the soup. If you would like whole pieces of broccoli, keep some out to add at the end. This way they will not overcook.
  • Reduce heat.
  • Add Colby and American Cheeses.
  • Cook on low 1 minute.
  • Add 1 Cup Half and Half slowly, so it will not clump.
  • Here you must watch temperature, so keep it on low.
  • Cook 10 minutes.
  • Add Cornstarch to water and stir.
  • Pour in 1/2 of cornstarch mixture and stir.
  • Then pour in 2nd half of mixture and stir.
  • Turn heat off and stir until thick.

2 c chopped broccoli
1 c mayonnaise
1 1/2 c sour cream
1 c shredded sharp cheddar cheese
1 1/2 c shredded mozzarella or italian blend cheese
2 clove garlic - smashed
1/3 c bacon bits
1/2 c finely diced red onion

Steps:

  • 1. Preheat oven to 425. Boil broccoli until just tender, then chop into small pieces, place in a large bowl. Add diced onion, bacon bits and garlic. Mix ingredients together thoroughly.
  • 2. Add Mayo, sour cream, 1 cup of cheddar and 1 cup of the mozzarella (save the 1/2 cup mozzarella for topping) until everything is binded together. Place mixture in a baking dish.
  • 3. Sprinkle the last 1/2 cup of mozzarella over the top of the mixture and place in the oven for approx. 10-15 minutes until cheese is fully melted...(or until you see a slight golden color to the top).
  • 4. Remove dip from oven and serve hot with bagel crisps, crackers, veggies, chips or whatever you'd like! (This dip is also great as a sauce over baked boneless skinless chicken breast!)

10 -12 ounces broccoli, thawed
8 ounces cream cheese
1 (8 ounce) can chicken broth
1 cup heavy whipping cream
6 slices bacon, crumbled
1 medium onion, diced

2 bunches of cut up and steamed broccoli
12 ounces evaporated milk
1/4 cup butter
4 ounces Velveeta cheese, cut into chunks
salt and pepper

Steps:

  • Melt butter in saucepan.
  • Add 1/2 of Milk.
  • Add Velveeta.
  • Stir frequently until thouroughly melted.
  • Add more milk if you would like a creamier sauce. To equal out flavor you may need additional butter or cheese, judge to taste.
  • Add steamed broccoli and stir lightly together.
  • Serve alone or over potatoes.

6 Tbsp butter
2 tsp minced garlic
1 small onion, chopped
1/4 c flour
2 c light cream
3 c lowe-sodium chicken broth
2 bay leaves
1/4 tsp nutmeg
salt and pepper to taste
4 c broccoli florets
1 carrot, diced
2-1/2 c shredded sharp cheddar cheese

Steps:

  • 1. Melt butter in lg pot over medium heat. Add onion and garlic. Cook, stirring for 5 mins. Whisk in flour. Whisk in light cream slowly. Whisk until smooth.
  • 2. Pour in chicken broth. Add bay leaves and nutmeg. Season w/ salt and pepper. Bring to a simmer. Reduce heat to med-low. Cook, stirring occasionally, until thickened, about 20 mins.
  • 3. Add broccoli and carrot. Simmer another 20 mins. Discard bay leaves. Puree soup, in batches in a blender. Return to pot. Add cheese, whisk until cheese is melted.
