3/4 cup cornmeal
1 1/4 teaspoons salt
1/8 teaspoon pepper
1/4 cup milk
2 tablespoons butter
1 teaspoon chopped fresh marjoram (or 1/4 teaspoon dried)

Steps:

  • Preheat oven to 425 degrees. In an ovenproof saucepan with a lid, whisk together 3 cups water, cornmeal, salt, and pepper. Cover, and bake 30 minutes, stirring halfway through.
  • Remove from oven, and add milk, butter, and marjoram; whisk briskly until smooth. Serve immediately.

i love polenta-- but i hate stirring, my micro recipe is easier but this is good too. you can add parmesan cheese, bleu cheese or cheddar if you want to make it thicker

Steps:

  • preheat oven to 425.
  • in a dish with a lid whisk together water, cornmeal, salt& pepper.
  • cover and bake 30 minutes, stirring halfway through.
  • remove from oven, add milk, butter, marjoram, adjust seasonings with salt& pepper, whisk until smooth.

1 ounce dried porcini
3/4 cup hot water
1/2 pound fresh cultivated white mushrooms
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon freshly milled white pepper
1/2 cup heavy cream
Olive oil or vegetable oil for oiling boards and baking dish
1 recipe Basic Polenta
1-1/2 cups cornmeal, 6 cups water, and 2 teaspoons salt
1/2 pound (2 cups) shredded fontina
1/3 cup freshly grated parmigiano

Steps:

  • To begin to prepare the sauce, in a small bowl combine the dried porcini and hot water and let stand for 45 minutes to 1 hour. Remove the porcini and squeeze out excess water. Using scissors, cut them into pieces about the size of your thumbnail. Set aside. Strain the mushroom liquor through a paper towel or a fine sieve; reserve. Lightly oil an 8-by-11-inch baking pan and set it aside. Lightly oil two large pastry boards or baking sheets, or a very large scratchproof counter surface. Make the polenta and when it is cooked, turn it directly out onto the boards, counter, or baking sheets. Use a large knife or rubber spatula, first dipped in cold water, to spread out the polenta to a thickness of about 1/2 inch. Allow it to cool and harden, about 20 minutes. Cut it into approximate 3-inch squares.
  • Meanwhile, preheat an oven to 400 degrees F. Continue to make the sauce. Using a soft brush or clean kitchen towel, remove any dirt from the fresh mushrooms. Don't wash them because water will alter their texture. Separate the stems from the caps, discarding the stems if they are tough. Slice the mushroom caps and tender stems thinly. In a skillet over medium-low heat, melt the butter with the oil. Add the onion and saute until softened, about 5 minutes. Add the porcini and saute for another 5 or 6 minutes to marry the flavors. Add the cultivated mushrooms and continue to saute until tender, about 5 minutes. Add the mushroom soaking liquid, salt, and pepper. Allow to simmer gently for 5 minutes, stirring occasionally. Then stir in the cream, and allow the mixture barely to reach a simmer. Immediately remove the skillet from the heat.
  • Place half of the polenta squares in a layer on the bottom of the prepared dish. Spread half of the sauce in a layer over them, then sprinkle with half of the cheeses. Place another layer of polenta squares over the cheeses. Spoon the remaining sauce on top and sprinkle with the remaining cheeses. Place on the middle rack of the oven and bake until the cheese is melted and golden and the pasticcio is bubbling, about 20 minutes. Remove from the oven and let settle for 10 minutes before cutting into squares. Serve hot.

2 cups water
2 cups milk
1 cup stone-ground cornmeal
1 ½ teaspoons salt
1 (14 ounce) can pumpkin puree
1 cup shredded Jarlsberg cheese
½ cup grated Parmigiano-Reggiano cheese, divided
¼ cup sour cream
½ teaspoon ground nutmeg
⅛ teaspoon coarsely ground black pepper
salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 3-quart baking dish with cooking spray.
  • Combine water, milk, cornmeal, and salt in the prepared baking dish; mix well. It's normal for the mixture to separate a bit.
  • Bake, uncovered, in the preheated oven for 40 minutes.
  • Remove from the oven and stir in pumpkin, Jarlsberg, 1/2 of the Parmigiano-Reggiano, sour cream, nutmeg, pepper, and salt. Return to the oven and bake for 10 minutes.
  • Remove from the oven and top with remaining Parmigiano-Reggiano. Turn on the broiler.
  • Broil until top is brown and bubbly, about 3 minutes. Let stand 5 minutes before serving.

4 ½ cups water
1 ¾ cups cornmeal
½ cup grated Parmesan cheese, divided
1 large egg yolk
4 tablespoons melted butter, divided
½ teaspoon salt
1 pinch ground nutmeg
3 tablespoons olive oil
1 tablespoon butter
1 medium onion, sliced
1 pound fresh mushrooms, sliced
⅓ cup brandy
3 cloves garlic, minced
2 tablespoons dry bread crumbs
1 tablespoon dried parsley

Steps:

  • Butter a 8x12-inch rimmed baking sheet. Bring water to a boil in a saucepan. Add cornmeal and whisk. Cook until mixture pulls away from the sides of the saucepan, stirring constantly, 5 to 7 minutes.
  • Stir in 1/4 cup Parmesan cheese, egg yolk, 2 tablespoons melted butter, salt, and nutmeg. Pour onto the prepared baking sheet and spread into a rectangle about 1/2 inch thick. Cool for at least 2 hours. Trim edges and cut into 1-inch cubes.
  • Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add onions and saute for 5 minutes. Add mushrooms and cook for 5 minutes. Stir in brandy and garlic; heat through, about 5 minutes more. The mixture should be saucy.
  • Preheat the oven to 400 degrees F (200 degrees C). Butter a large baking dish.
  • Place polenta cubes in the prepared baking dish, top with mushroom mixture, including juices. Mix remaining 1/4 cup Parmesan cheese, remaining 2 tablespoons melted butter, bread crumbs, and dried parsley together in a bowl. Sprinkle bread crumb mixture on top of mushrooms.
  • Bake in the preheated oven until browned and bubbly, about 30 minutes.

Creamy Baked Polenta With Herbs and Green Onions image

This is ultimate comfort food for me! I make this with roasted chicken and veggies and use some of the juices from the chicken to add more flavor. *For some reason, the baking time has been different for me. Sometimes it takes less baking time. It may depend on how coarse the cornmeal is. Just keep watching it and make sure it stays creamy and doesn't get hard. Once you stir in the herb mixture, you can make it more creamy by adding more broth or cream or you can thicken it up by putting it back in the oven for a few minutes. It's very versatile. You can use any herbs you like to go with your meal. This one is definately a keeper in our house. From the April 2001 Bon Appetit, modified by me.

6 cups water (can substitute some with chicken broth)
1 1/2 cups yellow cornmeal
2 teaspoons salt (less if using chicken broth)
1/4 teaspoon fresh ground black pepper
2 tablespoons butter
4 green onions, thinly sliced
3 garlic cloves, minced
3 -4 tablespoons fresh Italian parsley, minced
1 1/2-2 teaspoons fresh thyme, minced
1/3 cup whipping cream
3/4 cup parmesan cheese, freshly grated
1 teaspoon lemon peel, grated

Steps:

  • Preheat oven to 350. Pour 6 cups water into sprayed 13x9 glass baking dish. Whisk polenta, salt and pepper into water. Bake uncovered about 30 minutes. Could be a little more or less. Make sure it doesn't get hard.
  • Meanwhile, melt butter in small skillet over medium heat. Add green onions and garlic, saute 2 minutes. Stir in parsley, thyme and cream. Season with salt and pepper. Remove from heat.
  • Stir polenta to blend. Stir green onion mixture, cheese and lemon peel into polenta. If liquid isn't completely absorbed, bake a little longer.

3 tablespoons butter, thinly sliced
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 ounces provolone cheese, grated
2 ounces parmesan cheese, finely grated

Steps:

  • Preheat oven to 350ºF.
  • Combine 4 cups of water, cornmeal, butter, salt and pepper in a 1 1/2 quart baking dish.
  • Bake uncovered, on the top shelf of the oven for 40 minute.
  • Remove the polenta from the oven, give it a stir, and bake for another 10 minute.
  • Remove it from the oven again and this time stir in the provolone and salt and pepper to taste.
  • Let it stand for 5 min before serving.
  • Serve topped with the Parmesan cheese.

1/4 whipping cream
3/4 C. grated dry Jack cheese or freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350. Pour 6 C. water into 13x9 in. glass baking dish. Whisk polenta, salt and pepper into water. Bake uncovered 40 min. Meanwhile, melt butter in small skillet over medium heat. Add green onions and saute 2 min. Stir in parsley and thyme, then cream. Season with salt and pepper. Remove from heat. Stir polenta to blend. Stir green onion mixture, cheese and lemon peel into polenta. Continue to bake uncovered until polenta is creamy and liquid is completely absorbed, about 10 min longer. Let stand 5 min.; serve.
