Time 50m

Yield 4

Number Of Ingredients 12

4 boneless, skinless chicken breasts
½ cup grated Asiago cheese
½ cup light mayonnaise
¼ cup low-fat plain Greek yogurt
¼ cup dry white wine
1 ½ teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch ground nutmeg
freshly ground black pepper to taste
1 tablespoon aged balsamic vinegar, or to taste
2 tablespoons grated Asiago cheese, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Place chicken breasts in the prepared baking dish. Whisk together Asiago cheese, mayonnaise, Greek yogurt, wine, oregano, garlic powder, onion powder, and nutmeg in a small bowl. Pour evenly over chicken breasts.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and the juices run clear, 40 to 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Top with black pepper, balsamic vinegar, and additional Asiago cheese just before serving.

EASY CREAMY BAKED CHICKEN BREASTS

It doesn't get much easier than this! If desired you could add a can of whole or sliced mushrooms to the recipe. I like to add in 1/4 cup grated parmesan cheese to the soup mixture, also if desired you can sprinkle grated cheddar cheese on top the last 5 minutes of baking, and brown the breasts in butter firstly and reduce cooking time slighty.

This recipe was submitted by a mom for the Brother Martin High School cookbook. I have modified it slightly. My sons love this dish and think I am a wonderful cook for fixing it! They are so easy to please.

Yield 4

Number Of Ingredients 8

4 (4-6-oz.) fresh boneless, skinless chicken breasts
4 (1-oz.) slices Swiss cheese
1 can (10.75-oz.) cream of chicken condensed soup
1/4 cup white wine
1 cup stuffing mix, crushed
1/4 cup butter, melted
1/2 teaspoon garlic powder
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350°F. Arrange chicken breasts in a lightly greased 13x9x2-inch baking pan. Top each breast with a slice of Swiss cheese. In a small bowl, combine cream of chicken soup and white wine; stir well. Spoon the sauce over the chicken breasts and sprinkle with crushed stuffing mix. Drizzle melted butter over the stuffing and sprinkle with garlic powder and Parmesan cheese. Bake for 45 to 55 minutes until chicken is cooked* and sauce is bubbly. Serve hot. *Chicken Test for Doneness (per Washington Fryer Commission, 1994) No matter what method you use for cooking chicken, the most accurate test for doneness is a meat thermometer. Since chicken is never ready to be served unless it is done, always be sure it is completely cooked. Whole or bone-in chicken should reach an internal temperature of 180 degrees, and boneless chicken should be cooked to 165°F. Other indicators for doneness include: 1) A fork or toothpick can be inserted with ease. 2) The juices should be clear, not pink. 3) Bone joints move easily.
