Seared ahi salad with wasabi dressing is a fresh, vibrant, nutritious dinner!

1 pound sushi-grade ahi tuna fillet
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/8 teaspoon ground turmeric
¼ teaspoon sea salt
2 tablespoons sesame seeds
5 ounces mixed greens*
1 ripe mango, peeled and diced
½ ripe avocado, diced
1 small heirloom tomato, diced
¼ red onion, thinly sliced
¼ cup crystallized ginger, chopped, optional
¼ cup rice vinegar
3 tablespoons olive oil
1 tablespoon sesame oil**
1 tablespoon tahini
1 tablespoon liquid aminos***
1 teaspoon wasabi paste
1 teaspoon agave nectar, or honey

Steps:

  • Heat a cast iron skillet to medium-high with enough oil to coat the surface, about 2 tablespoons.
  • Stir together the ground cumin, smoked paprika, turmeric, cloves, and sea salt in a small bowl. Sprinkle both sides of the ahi fillet with the spice blend.
  • Carefully place the ahi fillet on the center of the surface of the hot skillet. Cook 1 to 1-½ minutes, or until the fillet is golden-brown and crispy. Flip and cook on the other side for 1 to 1-½ minutes, or until tuna reaches desired done-ness. Transfer to a cutting board and allow fish to cool. Once cool enough to handle, cut the tuna into strips. Refrigerate until ready to use.
  • Combine all of the ingredients for the dressing in a small blender. Blend until completely smooth.
  • Add all of the ingredients for the salad in a large serving bowl. Toss in desired amount of creamy wasabi dressing. Serve salad with seared ahi tuna on top.

This is a nice, tangy dressing, and also makes a good topping for crab cakes! Prep time includes refrigeration.

2 tablespoons hot wasabi
1 ripe avocado, peeled,seeded,and chunked
1 tablespoon plain yogurt or 1 tablespoon sour cream
3 tablespoons apple cider vinegar
1/2 teaspoon lemon juice
1/4 teaspoon garlic powder
1 pinch salt, to taste
1 pinch sugar, to taste
1 pinch black pepper, to taste
sake or dry white wine

Steps:

  • Puree all ingredients together well, adding sake or other dry white wine to the desired consistency, then chill for at least 1 hour.
  • Serve as dressing.
  • Also good with crab cakes!
  • Note: make sure to use a fully ripe avocado for this recipe! It needs to be ripe and rich - Californian (Haas or Gwen) avocados have a buttery and richer flavor than avocados from Florida or other areas. Otherwise your dressing will come out tasting a little flat.

⅓ cup honey
2 tablespoons soy sauce
2 tablespoons wasabi paste

Wasabi, the paste that adds a hot peppery bite to sushi, peps up this creamy combo of avocado and prawns

2 tsp wasabi paste
4 tbsp olive oil
2 tbsp lime juice, plus 6 wedges, to serve
1 tsp clear honey
2large ripe, but firm avocados
250g pack chilled large peeled prawns
2heads of chicory, red if possible, separated into leaves
few sprigs of watercress
prawn crackers, to serve

Steps:

  • In a large bowl, mix dressing ingredients until blended. Season with salt, then set aside.
  • To serve, halve and stone the avocados. Dice the flesh while it's still in the skin then scoop into a bowl. Add the prawns and toss in the dressing. Line six small serving bowls or tumblers with two or three chicory leaves. Pile in avocado and prawn mixture. Top with watercress and lime wedges. Serve with prawn crackers.
