14 ounces artichokes (drained)
4 ounces cream cheese (softened)
2 tablespoons mayonnaise
1 clove garlic (minced)
⅓ cup parmesan cheese (shredded)
1 teaspoon lemon juice
salt and pepper to taste

Steps:

  • Combine cream cheese, mayonnaise, garlic, parmesan cheese and lemon juice in a food processor. Pulse until mixed.
  • Add artichokes and pulse until chopped and combined.
  • Chill 1 hour before serving. Serve with nacho chips or pita wedges.

This delicious Artichoke Dip is one of my favorite easy appetizers, made with simple ingredients in less than 30 minutes! We love it served warm, with crackers or bread chunks for dipping.

8 ounce can artichoke hearts ((not marinated), drained and chopped)
1/2 cup sour cream
1/2 cup mayonnaise
8 ounces cream cheese (, softened)
1 1/4 cups freshly grated parmesan cheese
1 clove garlic (, minced)
dried dill weed (, to taste (fresh or dried))

Steps:

  • Preheat oven to 350 degrees F.
  • To a mixing bowl add sour cream, mayo, cream cheese, garlic and 1 cup of parmesan cheese. Combine until smooth.
  • Stir in chopped artichoke hearts and a little bit of dill weed, to taste.
  • Place in a greased baking dish (most pan sizes around 8x8 in or a little smaller will work. You could even use a pie pan).
  • Sprinkle remaining 1/4 cup of parmesan cheese on top. Sprinkle with a little extra dill weed, if desired.
  • Bake in preheated oven for about 20 minutes or until hot and bubbly. Serve warm with crackers, bread, or veggies.

2 cans (14 ounces each) water-packed artichoke hearts, rinsed, drained and coarsely chopped
2 cups shredded part-skim mozzarella cheese
1 package (8 ounces) cream cheese, cubed
1 cup shredded Parmesan cheese
1/2 cup mayonnaise
1/2 cup shredded Swiss cheese
2 tablespoons lemon juice
2 tablespoons plain yogurt
1 tablespoon seasoned salt
1 tablespoon chopped seeded jalapeno pepper
1 teaspoon garlic powder
Tortilla chips

Steps:

  • In a 3-qt. slow cooker, combine the first 11 ingredients. Cover and cook on low for 1 hour or until heated through. Serve with tortilla chips.

I was at my friend Kym's place yesterday and we shared some of this for lunch... it was so good, we ended up eating almost 3/4 of a box of crackers with this yummy dip! This recipe was originally from Homebasics.ca, but was altered slightly. I hope you enjoy it as much as we did!

1 cup Hellmann's mayonnaise or 1 cup Hellmann's light mayonnaise
1 (1 7/8 ounce) package Knorr Leek mix (the recipe recommends the 1.8 oz. pkg of Knorr Cream of Leek soup mix... but 'Zaar doesn't recognize)
1 cup sour cream
1 (14 ounce) can artichoke hearts, drained and chopped
1 cup mozzarella cheese, shredded
1 -2 garlic clove, minced

Steps:

  • Mix all ingredients and spread into a 1 L casserole dish. Bake uncovered in a preheated 350ºF oven for approximately 30 minutes (or until heated).
  • Serve with sliced crusty French bread, crackers or tortilla chips.
  • (As my friend and I learned, this recipe is also wonderful served cold the next day - but we did find that it was a little oily [from the cheese], so make sure you mix it really well or drain off some of the oil if you're re-serving this.).
  • Note: I have no idea how many servings there actually are - I'm "guesstimating" 1/4 cup per person, but that's completely a guess!

LEEK AND ARTICHOKE BREAD PUDDING



Leek and Artichoke Bread Pudding image

8 cups (1-inch-diced) day-old bakery white bread, crusts removed
3 ounces thinly sliced pancetta
6 cups (1/2-inch-diced) leeks, white and light green parts (5 leeks)
3 tablespoons unsalted butter
1/2 cup dry white wine, such as Pinot Grigio
Kosher salt and freshly ground black pepper
1 (9-ounce) package frozen artichoke hearts, defrosted
3 tablespoons minced fresh chives
2 teaspoons minced fresh tarragon leaves
4 extra-large eggs
2 cups heavy cream
1 cup good chicken stock, preferably homemade
1/4 teaspoon ground nutmeg
2 cups grated Emmentaler Swiss cheese (8 ounces)

Steps:

  • Preheat the oven to 350 degrees F. Place the bread cubes on a sheet pan and bake for 15 minutes, tossing once, until lightly browned. Place the pancetta in one layer on another sheet pan and bake in the same oven for 15 to 20 minutes, until lightly browned. Place the pancetta on a plate lined with paper towels and set aside.
  • Soak the leeks in water until they're clean, and spin them dry in a salad spinner. Heat the butter in an 11-inch pot over medium heat; add the leeks and cook for 10 minutes, stirring occasionally. Add the wine, 1 teaspoon salt and 1 teaspoon pepper and cook for 5 minutes, until the wine almost evaporates and the leeks are tender. Off the heat, mix in the artichokes, toasted bread cubes, chives and tarragon.
  • Whisk the eggs, cream, chicken stock, nutmeg and 1 teaspoon salt together in a large bowl. Spoon half of the bread mixture into a 9-by-13-by-2-inch baking dish. Sprinkle with half the Emmentaler and add the remaining bread mixture. Pour on the cream mixture, sprinkle with the remaining Emmentaler and press lightly to help the bread absorb the liquid. Dice or crumble the pancetta, scatter on top and sprinkle with pepper. Set aside at room temperature for 30 minutes to allow the bread to absorb the cream mixture. Bake for 45 to 50 minutes, until the custard is set and the bread pudding is puffed and golden. Serve hot.

1 leek, sliced very thin and sauteed in
butter
2/3 cup parmesan cheese
2/3 cup mayonnaise
1/3 cup heavy whipping cream (I added a tad more)
1 (14 ounce) can artichoke hearts, drained and chopped
1 tablespoon chopped pimento pepper

Steps:

  • Preheat oven to 325 degrees.
  • Lightly grease a medium baking dish.
  • Blend together the leeks, cheese, mayonnaise and whipping cream.
  • Stir in the artichokes and pimentos.
  • Mix well, and transfer to the prepared baking dish.
  • Bake 25 minutes in the preheated oven, until lightly browned.
