Steps:
- Preheat the oven to 400 degrees F.
- Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg and cayenne and bring to a simmer. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Mix in the spinach, 1/2 teaspoon salt and 1/4 cup of the Parmesan. Add the cream cheese and stir until melted. Season with salt and pepper to taste.
- Transfer the mixture to a 1 1/2- to 2-quart baking dish and sprinkle with the panko and remaining 1/4 cup Parmesan. Bake until bubbling and light golden on top, about 15 minutes.

- Drain spinach. In a medium mixing bowl combine spinach, soup mix and sour cream. Spoon into greased casserole dish and top with cheese.

CHEESY CREAMED SPINACH CASSEROLE
I found this recipe in our local grocery store's (Hannaford) sale circular. I plan on making this as one of my side dishes on Easter Sunday so posting on Zaar for safe keeping. The only changes I will make with the recipe is in place of the canned spinach, I will be using 2 10 oz. boxes of frozen chopped spinach that I will defrost and squeeze dry. I will probably also double the recipe because we are all spinach lovers here.

- Grease or butter a one quart casserole dish.
- In a medium bowl combine spinach, eggs, soup, sour cream, milk and 3/4 cup cheddar cheese; mix well.

- Sauté onion in oil until tender. Set aside to cool. Mix half and half and cream cheese with a mixer until creamy. Add spinach, cayenne pepper, nutmeg, kosher salt, 1/2 cup sharp cheddar cheese, 1/2 cup Asiago cheese and sautéed onions. Mix well. Pour into a 9-inch buttered casserole dish. Mix together remaining cheese and spread over casserole. Bake at 350°F for 45 minutes or until casserole is bubbling and top browns.
BUTTERNUT SQUASH AND CREAMED SPINACH CASSEROLE
I don't know where I got this recipe but it's on a 3x5 card in my file if that gives you a hint. My family has enjoyed this at Thanksgiving and all through the winter months for years. It is REALLY BAD FOR YOU. Probably why it tastes so good.

- Thaw, drain and press the spinach until very dry. Set aside in colander or on paper towels.
- Peel and seed the squash, cut lengthwise into pieces about 2-3 inches wide.
- Adjust your mandoline to about 1/4 in thick and slice all pieces (about the size of very thick potato chips).
- In a heavy skillet, melt half the butter on low heat and sauté the onion, leek and garlic until they are tender and translucent. Mix well with the spinach.
- Season spinach mix with salt and pepper.
- Preheat oven to 400°F.
- Use as much of the remaining butter as you like to grease a 13x9-inch Pyrex casserole.
- Layer the bottom of the casserole tightly with squash. Then put a layer of the spinach mixture over that. Sprinkle parmesan over each layer of spinach.
- Continue layering squash and spinach mixture until you have 5 layers of squash and 4 layers of spinach.
- Pour cream over entire mixture until it nearly reaches the top layer of squash.
- Sprinkle a heavy layer of parmesan over the entire casserole.
- Cover with aluminum foil and bake for 40-45 minutes or until squash is tender. The cream will be boiling.
- Remove foil and bake for another 15 minutes or until parmesan starts to crust.
- Remove and let cool for 10-15 minutes.

- Cook spinach in chicken stock. Drain well and chop.
- In a heavy skillet, cook bacon, drain fat and set aside.

BUTTERNUT SQUASH AND CREAMED SPINACH CASSEROLE

- Preheat oven to 400º F. Once youâve removed the seeds, cut your butternut squash into small, equal-sized cubes and transfer to a bowl. Toss cubed squash with olive oil, then season with salt and pepper and lay out in a single layer on a baking sheet. Place in oven and roast for 20-25 minutes, or until fork tender. Remove from oven and set aside. Heat butter in a large pan or skillet over medium-high heat and saute onion until softened and translucent, about 8 minutes. During the last 1 minute of cooking, add garlic and cook until fragrant. Season with salt and pepper. Lower heat to medium and add cooked creamed spinach to onions and garlic. For a creamier gratin, stir in heavy cream 1 tablespoon at a time, until desired creaminess is achieved. Add nutmeg, stir everything together and cook for 5 minutes, or until thickened. Transfer mixture to a large 9x13-inch baking dish and sprinkle gruyere and parmesan cheese evenly over the top. Place baking dish in oven and bake for 15-20 minutes, or until cheese is melted and bubbly. Remove from oven and let cool 5 minutes before serving.
