1 (12 ounce) pork tenderloin, cut into 1/2 inch circles (boneless loin chops work well also)
1/2 lemon, juice of
1/3 cup all-purpose flour
1/4 teaspoon poultry seasoning
2 large eggs
1 tablespoon dijon-style mustard
1 cup Italian breadcrumbs
2 tablespoons canola oil or 2 tablespoons vegetable oil, for frying
2 tablespoons unsalted butter
2 tablespoons minced shallots
1/3 cup dry white wine
1/3 cup chicken broth
1/4 cup heavy cream
1/4 cup jarred lemon curd
1/4 cup small caper, drained, room temperature

Steps:

  • Pound pork circles between pieces of plastic wrap to flatten to 1/4 inch thickness.
  • Sprinkle both sides of medallions with lemon juice.
  • Combine flour and poultry seasoning in shallow dish. Coat medallions with flour mixture; shake off excess flour and set aside.
  • In a deep pie plate, beat the eggs and mix in the mustard.
  • Place bread crumbs in another pie plate. Dip the pork medallions into the egg mixture; coat well with bread crumbs.
  • Place in refrigerator for 15 minutes.
  • For the cream sauce, melt the butter in a small heavy saucepan.
  • Add shallots and sauté over medium heat until fragrant (approximately 2 minutes).
  • Remove saucepan from heat; add the wine, chicken broth and cream.
  • Return saucepan to heat and bring to a boil.
  • Reduce heat to medium-low and simmer, uncovered, for 12 to 15 minutes to reduce by half.
  • Meanwhile, heat 1 tablespoon of oil in a large heavy skillet.
  • Add half of the medallions; fry over medium-high heat on both sides for 1-2 minutes or until no longer pink.
  • Transfer to a plate and tent with foil. Repeat with remaining oil and medallions.
  • Remove sauce from heat and stir in lemon curd & capers.
  • Serve with buttered spaetzle and garnish with lemon wedges.

4 skinless, boneless chicken breasts
1 cup all-purpose flour
3 eggs
2 tablespoons water
4 cups bread crumbs
2 mangos, peeled and coarsely chopped
1 (8 ounce) package cream cheese, softened
1 cup heavy whipping cream
2 tablespoons mango jam
¼ cup vegetable oil, or as needed
2 shallots, chopped
sea salt to taste

Steps:

  • Place chicken on a solid, level surface. Firmly pound with the smooth side of a meat mallet to an even 1/4-inch thickness.
  • Pour flour into a shallow bowl. Whisk eggs with water in a separate bowl. Spread bread crumbs on a shallow plate.
  • Dredge each chicken breast in flour. Dip into the egg mixture; press into the bread crumbs to coat both sides. Place breaded chicken on a large plate.
  • Combine mangoes, cream cheese, heavy cream, and mango jam in a blender; puree into a smooth sauce. Transfer sauce to the refrigerator to thicken up.
  • Heat oil in a large skillet over medium heat. Cook breaded chicken until golden brown and no longer pink in the center, about 3 minutes per side.
  • Spoon mango sauce over cooked chicken. Garnish with chopped shallots and sea salt.

4 thin, boneless pork chops
1 large egg
1/2 C seasoned flour
5 TBS butter
6-7 large button mushrooms
1 C. coarse bread crumbs
2 Tsp chicken bouillon
3/4 C sour cream
Capers for garnish

Steps:

  • Pound pork steaks to 1/4 inch thickness. Beat egg with a little milk in wide shallow bowel. Dredge cutlets in flour seasoned with salt, pepper and onion powder. Shake off excess flour, dip in egg then coat with coarse bread crumbs, pressing them into the meat. Set aside. Mix chicken bouillon with 1/3 C hot water. Preheat wide skillet to medium and add 2 TBS butter when hot. Clean & trim mushrooms and slice thin. Fry mushrooms until brown & set aside. Add most of remaining butter to skillet and fry steaks until golden on both sides, adding more butter if needed. Set aside and keep warm. Turn heat to low and scrape bread crumbs out of skillet. Mix 1 TBS remaining flour with chicken broth and add to skillet with mushrooms and sour cream. Bring to simmer and stir to loosen brown bits until thickened. Thin with water if needed. Serve cutlets with gravy and garnish with capers. Chicken or veal can be substituted for pork.

4 pork loin, 250 gr
9 ounces mixed mushrooms, sliced
1 small onion
2 tablespoons oil
pepper
salt
sugar
4 1/2 ounces cream
3 1/2 ounces dry white wine, can substitute juice from 1/2 lemon

Steps:

  • Spice loins with pepper and salt and in oil fry it on both sides until lt brown.
  • Cut onions into small pieces, and add them with the mushrooms to the meat.
  • Then add a little water and wine into the pan, and let it cook on low heat for about 10 more minutes.
  • Next, turn off heat, stir the cream to it, and let it sit for a couple of minutes.
  • Then again, spice it with pepper, salt, sugar, and thicken the sauce. Now the cuisine is ready to enjoy.

2 pounds medium Yukon Gold potatoes, peeled and cut into 1/4-inch slices
