CREAM OF CELERY SOUP

4 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 onion, sliced
Kosher salt
1 bunch celery, chopped
1 small celery root (about 12 ounces), peeled and chopped
1 bay leaf
4 cups low-sodium chicken broth
1 cup heavy cream
1 cup mixed fresh herbs (such as parsley, tarragon and/or dill)
1/4 teaspoon celery salt
Celery Leaves
Celery Salt
Cooked prosciutto
Toasted sliced almonds
Fried leeks

Steps:

  • Melt the butter with the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with 1/2 teaspoon salt and cook, stirring occasionally, until softened but not browned, about 4 minutes. Add the celery, celery root and 1 teaspoon salt. Cook, stirring occasionally, until the celery is tender, about 7 minutes.
  • Add the bay leaf, chicken broth and 2 cups water and bring to a boil. Reduce the heat to medium low and cook until the celery root is very soft, about 20 minutes. Discard the bay leaf. Add the heavy cream and return to a simmer, then remove from the heat and let cool slightly.
  • Working in batches, transfer the soup to a blender and puree until smooth, adding some herbs to each batch; return to the pot and reheat if needed. Stir in the celery salt and serve with toppings.

3 quarts chicken stock
3 pounds celery, coarsely chopped
½ pound carrots, julienned
½ pound onions, chopped
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground white pepper
3 quarts hot milk
1 cup margarine

Steps:

  • Pour the chicken stock into a large pot, and bring to a boil. Add the celery, carrots and onion to the pot.
  • Whisk together the flour, salt, pepper, and milk; add to the pot along with the margarine.
  • Boil for 10 minutes, then strain out the vegetables by pouring through a sieve, or if the vegetables are large enough, a colander may be used.

DEVILED HAM ON TOAST

1/2 pound cooked ham
1/4 cup chopped onion
1/4 cup Dijon mustard
2 tablespoons mayonnaise
1/2 teaspoon prepared horseradish
1/8 teaspoon cayenne pepper
10 slices very thin white bread, crusts removed
3 tablespoons butter, melted
2 tablespoons finely chopped parsley

Steps:

  • In a food processor chop ham and onion finely. Add mustard, mayonnaise, horseradish and cayenne. Blend well. Cover, and refrigerate until needed, as long as 24 hours.
  • Heat oven to 350 degrees. Cut bread slices into thirds. Lightly brush each side with melted butter, and place on a baking sheet. Bake 5 minutes, turn the slices over and bake 5 minutes more, or until lightly browned. Let them cool, and store in an airtight container until needed.
  • Before serving, add more horseradish if desired. Spread the deviled ham on the toasts and sprinkle with parsley.

1/2 cup (1 stick) unsalted butter
10 pale-green inner ribs celery, coarsely chopped (about 3 1/2 cups)
1/3 cup coarsely chopped shallots
1 small russet potato (about 6 ounces), peeled and cut into 1/2-inch cubes
Coarse salt
6 cups homemade or low-sodium store-bought chicken stock
1/4 teaspoon plus a pinch of freshly grated nutmeg
1/4 cup heavy cream, or to taste
Very thin baguette, toasted
Pale-green celery leaves, for garnish

Steps:

  • Melt butter in a large saucepan over medium heat. Add celery, shallots, potato, and a pinch of salt. Partially cover; cook, stirring often, until vegetables are soft but not browned, about 15 minutes.
  • Add stock; bring to a simmer. Reduce heat to low; cover, and cook 30 minutes. Stir in nutmeg. Let cool.
  • Puree soup in a blender or food processor in batches until completely smooth. Pour through a fine sieve into a large bowl, pressing with the back of a spoon to extract as much liquid as possible. Return soup to pan; stir, and season with salt. Just before serving, heat soup over medium heat (do not boil). Stir in cream, and serve topped with baguette slices; garnish with celery leaves.

2 tablespoons unsalted butter or extra virgin olive oil
2 leeks, white and light green parts only, halved lengthwise and thinly sliced crosswise
1 large celery stalk, finely chopped
Salt to taste
1 1 1/2-pound celery root
1 large waxy potato, peeled, quartered lengthwise and thinly sliced crosswise
1 meaty ham bone
1 sprig thyme, 6 parsley stems and 1 bay leaf, tied in a bundle
1/2 cup heavy cream (optional)
Freshly ground white pepper to taste
1 tablespoon chervil leaves or snipped chives

Steps:

  • In a 4-quart saucepan, melt butter. Add leeks, celery and salt. Cover and cook over low heat, stirring occasionally, until soft, about 10 minutes. Meanwhile, quarter celery root and thickly peel, using a knife. Cut into 1-inch dice. Add celery root, potato, 6 cups water, ham bone and herb bundle to pot, and bring to a boil. Reduce heat to medium-low and simmer, uncovered, until potato is tender, about 30 minutes.
  • Discard herb bundle. Remove ham bone, remove meat from bone, chop meat and return meat to soup. Using an immersion blender, purée soup. Add cream, if desired, and heat. Taste and add salt if needed. Ladle soup into bowls and season with white pepper. Garnish with herbs, and serve.

1 cup chopped fully cooked ham
1/3 cup chopped green pepper
1/4 cup sliced celery
2 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 cups milk
1/4 teaspoon pepper
1/4 teaspoon celery seed
1 hard-boiled large egg, chopped
5 slices process American cheese, quartered
3 slices toast, cut into triangles

Steps:

  • In a skillet, saute the ham, green pepper and celery in butter for 4-5 minutes. Sprinkle with flour; stir until smooth and bubbly. Add the milk, pepper and celery seed; bring to a boil. Cook and stir for 2 minutes. Remove from the heat. Add egg and cheese; stir until cheese melts. Serve over toast.
