ORANGE SCONE WEDGES WITH CREAM CHEESE FILLING



Orange Scone Wedges with Cream Cheese Filling image

Surprise-these scones have their cream built right in! Grated orange peel gives both the filling and the scone itself sweet citrus appeal.

6 oz cream cheese, softened
1/4 cup granulated sugar
1 tablespoon grated orange peel
1 3/4 cups Gold Medal™ all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons firm butter or margarine
1 tablespoon grated orange peel
1/4 cup whipping cream
1 egg
1 egg, beaten
2 tablespoons coarse white sugar

Steps:

  • Heat oven to 400°F. In small bowl, beat all filling ingredients with electric mixer on medium speed until smooth; set aside.
  • In large bowl, mix flour, 3 tablespoons sugar, the baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions) until mixture looks like fine crumbs. Stir in 1 tablespoon orange peel, whipping cream and 1 egg.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead lightly 10 times. Divide dough in half. Pat or roll each half into 9-inch round, about 1/4 inch thick. Spread filling over half of each round.
  • Fold each dough round in half over filling. With sharp knife, cut each half-round into 6 wedges. On ungreased cookie sheet, place wedges 1 inch apart. Brush tops with beaten egg; sprinkle with coarse sugar.
  • Bake 10 to 15 minutes or until light golden brown. Immediately remove from cookie sheet to cooling rack. Serve warm.

I landed my first job in a bakery when I was sixteen. I would come in after school and make huge batches of scone mix to help the morning baker. After I graduated from high school, I became the principal baker --and spent the summer waking up at 2 a.m. Even though I had to go to bed at 7 p.m., I felt like the coolest kid in town. The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

361 grams (3 cups) all-purpose flour
132 grams (2/3 cup) granulated sugar
12 grams (1 tablespoon) baking powder
2 grams (1 teaspoon) ground cinnamon
1 gram (1/4 teaspoon) fine sea salt
142 grams (5 ounces) (10 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
340 to 425 grams (2 to 2 1/2 cups) chopped apples, peeled if desired
242 grams (1 cup) heavy cream
Egg wash: 57 grams (1 large) egg, beaten with 15 grams (1 tablespoon) water and a small pinch of fine sea salt
Turbinado or coarse sugar, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
  • Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
  • Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
  • Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.

Steps:

2 1/2 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup sugar
1/4 cup butter
4 ounces cream cheese
3/4 cup milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 425 degrees.
  • Measure dry ingredients into food processor and pulse until well combined. Cut butter and cream cheese into small chunks and distribute throughout processor bowl.
  • Hit pulse about 10 times for 1-2 seconds each pulse until course crumbs develop.
  • Pour milk and vanilla through feed tube in a slow stream while pulsing until cohesive but crumbly dough forms.
  • Turn dough onto floured surface and gently squeeze it into a ball. Flatten and gently shape into an 8 by 8 inch square. Cut into 16 even squares.
  • Place on ungreased baking sheet and bake 15-18 minutes until lightly browned.

8 graham crackers, finely crushed (about 1 cup)
1/4 cup plus 2 tsp. sugar, divided
2 tsp. baking powder
3/4 tsp. ground cinnamon, divided
1/4 cup cold butter, cut into small pieces
1 Granny Smith apple, peeled, chopped
2 eggs, beaten
3 Tbsp. milk, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup chopped pecans

Steps:

  • Heat oven to 375°F.
  • Combine flour, graham crumbs, 3 Tbsp. sugar, baking powder and 1/2 tsp. cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add apples, eggs and 2 Tbsp. milk; stir just until blended. (Do not overmix.)
  • Mix cream cheese, nuts, remaining milk and 1 Tbsp. of the remaining sugar until blended.
  • Divide dough in half; pat each half into 6-inch round on lightly floured surface. Place 1 dough round on baking sheet sprayed with cooking spray; spread with cream cheese mixture to within 1/4 inch of edge. Cover with remaining dough round; press edges together to seal. Mix remaining sugar and cinnamon; sprinkle over dough.
  • Bake 25 to 28 min. or until top is golden brown and toothpick inserted into center of top layer of dough comes out clean. Cool on baking sheet 10 min. Transfer to cutting board. Cut into 12 wedges. Serve warm or at room temperature.
