1 (8 ounce) package cream cheese, at room temperature
1 cup chopped dill pickles, or more to taste
¼ cup finely chopped sweet onion
2 tablespoons pickle juice, or more to taste
1 teaspoon dried dill weed
½ teaspoon kosher salt
1 pinch freshly ground black pepper, or to taste

Steps:

  • Stir cream cheese in a bowl with a wooden spoon until smooth. Stir in dill pickles, onion, pickle juice, dill weed, salt, and pepper until evenly distributed. Refrigerate before serving, at least 1 hour.

DILL PICKLE CREAM CHEESE SANDWICH

I got this recipe from a good friend, and it is delicious!

250 g cream cheese, room temperature, (8 oz)
1/3 c dill pickle, diced
1 Tbsp dill pickle juice
1 Tbsp fresh dill, minced
salt to taste, as desired
red pepper flakes, as desired
4 slice sandwich bread
lettuce leaves, as desired

Steps:

  • 1. Add the cream cheese to a mixing bowl, left soften, use a fork to mash to make it nice and soft, clean off the fork with a spoon. Photo shows the cream cheese mashed, my homemade fridge pickles, and 1/3 cup of the pickles chopped. The dill is not in the photo but that is from my yard.
  • 2. Use a sturdy spoon and fold in the pickles, juice, and dill until combined, season with salt and red pepper flakes as desired.
  • 3. Lay out two slices of bread, places lettuce slices on one slice as desired, spoon cream cheese, generously, on lettuce and spread out, top with remaining slices of bread. Repeat with remaining bread. Enjoy.

20 slices bread, edges trimmed
20 dill pickle spears
1 (8 ounce) package cream cheese
mayonnaise
1 teaspoon onion juice

Steps:

  • Soften cream cheese with a small amount of mayonnaise.
  • (There was no measurement given in the book. I used 1/4 c of mayo, but you may use more or less depending on your taste.) Add onion juice to cream cheese/mayonnaise.
  • Mix well.
  • Spread a layer of this mixture on each slice of bread.
  • Put a dill pickle spear on each slice of bread.
  • Roll up jelly roll fashion.
  • Wrap each roll tightly in wax paper and refrigerate overnight.
  • Slice each roll in 5 slices.

This is a very easy, delicious appetizer. A creamy mixture flavored with onion is spread on white bread and rolled with a crisp baby dill pickle. I usually at least triple the recipe for parties, because it disappears quickly.

1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
1 tablespoon onion juice
1 tablespoon grated onion
1 (1 pound) loaf white bread, crusts trimmed
1 (22 ounce) jar baby dill pickles

Steps:

  • In a medium bowl, mix cream cheese, mayonnaise, onion juice and grated onion.
  • Spread the mixture thinly on the white bread slices. Roll 1 baby dill pickle in each slice of bread. Place in a medium glass baking dish with the seam side down. Cover and chill in the refrigerator 8 hours, or overnight.
  • To serve, slice each bread roll into 1 inch slices.

thinly sliced ham

Steps:

  • Let the cream cheese sit at room temperature for at least 30 minutes before you make these.
  • Cut dill pickles lengthwise into fourths or sixths, depending on how thick the pickles are. You need as many cut pickle spears as you have ham slices.
  • Spread each slice of ham with a very thin layer of cream cheese. (I used about 1 teaspoons cream cheese on each ham slice. The ham doesn't need to be completely covered with cream cheese.).
  • Put a dill pickle on the edge of each ham slice and trim the ham if it's very much bigger than the dill pickle spear. Roll up the ham around the dill pickle, then place toothpicks where you want each piece to be cut. Cut into pieces so that each piece has a toothpick. Arrange on plate and serve.
