CUCUMBER SANDWICH RECIPE

- Peel the cucumber, and slice it thinly. I used a simple OXO slicer for quick, even slices.
- Spread soft/room temperature cream cheese on two slices of bread.
- Arrange the cucumber slices, overlapping slightly, on one slice of bread and top with the other.
- Slice off the edges with a sharp serrated knife, wiping with a damp paper towel after each cut. Next, cut into fingers (or triangles). Whether you cut them into fingers or triangles, you'll end up with two finger sandwiches.
- If you need to make cucumber sandwiches ahead of time, keep them in a sealed container with a paper towel inside for a few hours, and refrigerate them.

EASY CUCUMBER SANDWICHES WITH CREAM CHEESE
Easy cucumber sandwiches with cream cheese. A great appetizer for traditional afternoon tea, cucumber sandwiches is healthy and quick to make.

- Slice cucumber very thinly using a mandolin and if your knife skill is great, then use a knife but ensure that the cucumber slices are paper-thin.
- Make the cream cheese filling. Add the cream cheese and mayonnaise together in a bowl until smooth. Add dill and stir to combine. Finally, season with some salt and pepper to taste.
- This step is optional, you may or may not cut the crust off the white bread before you assemble the sandwich
- Finally, assemble the sandwich, start by spreading the cream cheese filling on bread slices. Followed by the cucumber slices, layer it on the cream cheese spread and top it with another slice of bread. Using a sharp or serrated knife, cut off the crust if you haven't done this beforehand. Then cut the sandwich into 3 fingers.
- Serve immediately or store in an airtight container for up to a day
CUCUMBER CREAM CHEESE TEA SANDWICHES
Steps:
- Gather the ingredients.
- Lay 2 slices of bread on a work surface and spread each slice evenly with 1 tablespoon cream cheese.
- Cover 1 side of the sandwich with sliced cucumber.
- Season with a squeeze of lemon juice , salt and pepper, and chives, if using.
- Cover the cucumbers with the other slice of bread, cream cheese side down.
- Cut off the crusts and slice the sandwich diagonally 2 times to create 4 triangular finger sandwiches. Repeat with the remaining ingredients. Serve.

- Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.

Steps:
- Combine the cucumbers and cream cheese, then blend in the onion.
- Add in a tablespoon or two of mayonnaise and blend until the mixture is soft and spreadable. Add a little more mayonnaise to soften further.
- Cut the crusts off the bread, then either cut each piece into fourths or cut into diamonds.
- Spread mixture over half the bread pieces, then top with another piece of bread.
- Garnish with parsley or cucumber.

- Combine the cream cheese with the red onion, chives, dill, green onions, carrot, celery and garlic in the bowl of a food processor. Pulse until mixed together and the spread reaches the consistency you want.
- On 4 slices of bread, top one side of each with 2 tablespoons of the mixture. Top each with another slice of bread. Spread the tops of the second round of bread slices with 2 tablespoons more of the garden spread, then top with the remaining bread slices. Wrap the sandwiches and refrigerate for 1 hour.
- When ready to serve, cut off the crusts, then cut each sandwich into 3 even fingers or 4 triangles.
