Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tub pan.
  • Beat cream cheese and confectioners' sugar in a bowl until smooth; set aside. Beat 1 cup white sugar and butter in a bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in apples and vanilla extract.
  • Combine flour, baking soda, and baking powder in another bowl; stir into apple mixture. Add sour cream, stirring until batter is just combined. Pour half the batter in prepared tube pan. Spread cream cheese mixture over batter in tube pan; cover with remaining batter.

Steps:

  • Cake: Preheat oven to 350 degrees. Butter three 8-inch round cake pans; line with parchment. Butter and flour parchment, tapping out any excess.
  • In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, and salt. In a large bowl, whisk together butter, brown sugar, and eggs until well combined; fold in grated and diced apples. Add flour mixture; mix just until combined. Divide batter among prepared pans; smooth tops.
  • Bake until a tester inserted in centers comes out clean, 35 to 40 minutes. Let cakes cool in pans 20 minutes, then invert onto wire racks; remove parchment. Invert cakes again; let cool completely on racks.

  • Make cake:

3 c all-purpose flour
1 c granulated sugar
1 c packed brown sugar

2 tablespoons sugar

1 (21 ounce) can apple pie filling

Steps:

  • Heat oven to 425°F Lightly grease cookie sheet.
  • In medium bowl, beat 8 ounces cream cheese, 1/3 cup sugar, the lemon peel and lemon juice with electric mixer on medium speed until smooth; reserve.

Steps:

  • Prepare Filling: Beat first 3 ingredients at medium speed with an electric mixer until blended and smooth. Add egg, flour, and vanilla; beat just until blended.
  • Prepare Batter: Preheat oven to 350º. Bake pecans in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through.   • CREAM CHEESE FILLING: Beat cream cheese, butter and sugar at medium speed with an electric mixer until blended and smooth. Add egg, flour, and vanilla; beat just until blended; set aside.
  • CAKE BATTER: Preheat oven to 350º. Bake pecans in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Remove from oven; set aside.
  • In a large bowl: whisk together 3 cups flour and next 7 ingredients; stir in eggs, canola oil, apple pie filling and vanilla; stirring just until dry ingredients are moistened. 1/2 cup fresh or frozen cranberries
1 cup powdered sugar, divided
1 tsp. flour
1/4 tsp. ground cinnamon

1 tsp. fresh lemon juice
1 can (8 oz.) refrigerated crescent dinner rolls, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 egg white
1/2 tsp. vanilla
1-1/2 tsp. milk
2 Tbsp. chopped toasted pecans

Steps:

  • Heat oven to 350°F.
  • Toss apples with cranberries in large microwaveable bowl. Combine 1/2 cup powdered sugar, flour and cinnamon. Add to fruit; toss to evenly coat fruit with sugar mixture. Add butter and lemon juice; mix lightly. Microwave on HIGH 7 min., stirring after 4 min. Set aside until ready to use.
  • Unroll crescent dough; separate into 2 squares. Press 1 square onto bottom of 8-inch square pan sprayed with cooking spray, firmly pressing perforations and seams together to seal.
  • Beat cream cheese, egg white, vanilla and 1/4 cup of the remaining powdered sugar in medium bowl with mixer until blended; spread onto crust. Cover with fruit mixture.

1/2 stick butter, plus extra for loaf pan
3 Granny Smith apples, peeled and cored, cut into 1/2-inch dice and tossed with a little lemon juice
1/2 lemon, juiced
1 cup apple cider
1 3/4 cups all-purpose flour, plus extra for loaf pan
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
3/4 cup brown sugar
3/4 cup sugar
Pinch kosher salt
1 egg
1 teaspoon vanilla extract
1/2 cup toasted and chopped walnuts
1/2 cup golden raisins
Cream Cheese Icing, recipe follows
One 8-ounce package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
  • In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
  • Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
  • Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
  • Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
  • Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

I get recipe requests every time I make this cake. I think the original recipe came from Taste of Home. I have a Kitchenaid mixer with the shredder attachment and use that to shred up the carrot, apple, and even the toasted pecans, but any shredder will do, or you could chop with a good old-fashioned kitchen knife instead! Note: Be sure to both grease AND flour your tube pan as this cake is very moist and needs the flour to help it release from the pan! Enjoy!
