Steps:
- Preheat oven to 350°F.
- Saute onion and mushroom stems in bacon fat until tender.
- Drain off excess fat.
- Mix crumbled bacon, onion and stems with softened cream cheese until the mixture is workable.
- Stuff each mushroom and bake for 10-15 minutes.
- Finish under the broiler just until tops are golden.

- 1. Preheat the oven to 375 degrees F. Coat baking sheet lightly with vegetable oil.
- 2. Remove stems from mushrooms and chop finely. Combine the crabmeat, cream cheese, parsley, green onions,celery, bell pepper, chopped mushroom stems, garlic, butter and bread crumbs. Add salt and pepper to taste .
- 3. Stuff the mushroom caps with the mixture. Wrap each mushroom cap with 1/2 slice of bacon. (tuck end of bacon under bottom of mushroom cap)
- 4. Place mushrooms on lightly oiled baking sheet. Bake for 20 minutes or until filling is hot and melted and bacon is crisp.
CREAM CHEESE AND BACON STUFFED MUSHROOMS
This is by far my most requested recipe. It has turned many non-mushroom lovers into converts. They will start by just trying the filling and eventually try one with the mushroom. I usually peel my mushrooms, instead of washing them. (I know you lose some of the vitamins), This way they can be prepared up to the baking point a day ahead.

- Dice bacon and fry until very crisp. Drain on paper towel.
- Mix onion and Worcestershire sauce with softened cream cheese.
- Add bacon; mix well.
- Clean and remove stems from mushrooms.
- Fill mushroom caps with cream cheese mixture.
- Mushrooms can be refrigerated at this point, if made in advance.
- Bake in preheated oven, 375°F for 13 to 15 minutes, or until tops are lightly golden.
- Watch carefully the last few minutes.

BACON AND CREAM CHEESE STUFFED MUSHROOMS
Steps:
- Preheat oven to 350F degrees. Using scissors or a sharp knife, cut raw bacon into small pieces. In a large saute pan, over medium heat, cook bacon until nice and crispy. While bacon is cooking, remove mushroom stems from caps and chop stems into small pieces. When bacon is done, remove from pan and set aside; reserve 2 tablespoons of bacon grease and pour the rest from pan. Saute onion until soft about 5 minutes, scraping up any brown bits on bottom of pan. Add chopped mushrooms stems and garlic and cook a few minutes longer. Reduce heat to low. Add cream cheese and parmesan cheese and stir until cheeses are melted. Add reserved chopped bacon and season to taste with salt and pepper. (Mixture can be made, cooled, and stored, covered, in the fridge for up to two days.) Remove mixture from heat and stuff each mushroom cap generously with mixture. Bake at 350F for about 20 minutes or until mushrooms are soft and filling is nice and hot.
