15 ounces frozen french fries
1 ounce Fry Seasoning, recipe follows
2 ounces Char Grill Butter, recipe follows, melted
4 ounces Char Grill Cheese, recipe follows
2 ounces lump crabmeat
4 ounces Crab Mayo, recipe follows
3/4 cup paprika
3/4 cup kosher salt
1/2 cup chili powder
1/2 cup granulated garlic
2 tablespoons cayenne pepper
2 pounds butter
1/2 cup lemon juice
1/4 cup minced garlic
1/4 cup hot sauce
1/4 cup Worcestershire sauce
2 tablespoons kosher salt
1 1/2 tablespoons granulated garlic
1 ounce liquid smoke
3 1/2 cups shredded Parmesan
1 1/2 cups shredded mozzarella
1 tablespoon granulated garlic
1 bunch fresh parsley, chopped
1 bunch fresh parsley, finely chopped
1/2 red onion, small dice
3/4 cup mayonnaise
1/4 cup lemon juice
1/4 cup hot sauce
1 tablespoon honey
1 tablespoon seafood seasoning, such as Old Bay

Steps:

  • Prepare your preferred method for frying french fries, such as oil on a stovetop, countertop fryer or air fryer at 350 degrees F.
  • Drop the frozen fries into the oil and cook for 8 minutes (if you prefer a little extra-crisp, cook for an additional 2 minutes). Transfer to a medium bowl.
  • Season with the Fry Seasoning to taste. Drizzle with the Char Grill Butter and toss until the fries are all covered.
  • To a bowl or plate of your choice, add a layer of fries, an even layer of the Char Grill Cheese, lump crab and a drizzle of the Crab Mayo on top, then repeat the process.
  • In a medium bowl, combine the paprika, salt, chili powder, granulated garlic and cayenne. Stir with a whisk until all ingredients are incorporated. Store in an airtight container, up to 1 month.
  • In a medium stockpot, combine the butter, lemon juice, garlic, hot sauce, Worcestershire, salt, granulated garlic, liquid smoke and 1/2 cup water. Melt the butter on low heat, then turn the heat to medium and bring to a simmer. Cook for 5 minutes, then turn off the heat. (Be sure not to bring the mixture to a boil.) Store in an airtight container for up to 7 days.
  • Combine the Parmesan, mozzarella, granulated garlic and parsley in a large mixing bowl. Transfer to a food processor and pulse until chopped into small pieces. Can be stored in the refrigerator for up to 7 days.
  • In a large bowl, combine the parsley, onion, mayonnaise, lemon juice, hot sauce, honey and seafood seasoning until all ingredients are fully incorporated. Refrigerate in an airtight container for up to 7 days.

3 tablespoons extra-virgin olive oil
3 andouille sausages (about 10 ounces), quartered lengthwise and sliced 1/2 inch thick
2 stalks celery, chopped
1 onion, chopped
1 red bell pepper, chopped
3 cloves garlic, finely chopped
1 1/4 teaspoons Cajun seasoning
4 cups cooked white rice, cooled (thawed if frozen)
1 8-ounce package frozen cooked crawfish tail meat, thawed (or 8 ounces cooked peeled small shrimp)
Kosher salt
3 scallions, thinly sliced
Fresh cilantro leaves, for topping

Steps:

  • Heat the olive oil in a large nonstick skillet over high heat. Add the sausage and cook, stirring occasionally, until browned, about 3 minutes. Transfer to a plate using a slotted spoon; set aside. Add the celery, onion and bell pepper to the skillet and cook, stirring occasionally, until lightly browned and crisp-tender, about 3 minutes. Add the garlic and Cajun seasoning; cook, stirring, 30 seconds.
  • Add the rice and cook, stirring, until warmed through, about 3 minutes. Add the crawfish and sausage; cook, stirring, until warmed through, about 2 minutes. Season with 1/2 teaspoon salt and stir in the scallions. Top with cilantro.

Cajun popcorn is an irresistible appetizer made with deep-fried crawfish. Paul Prudhomme, the chef and owner of K-Paul's Restaurant in New Orleans, shared this recipe in 1983 with Craig Claiborne. It was featured in a menu for an economic summit held in Williamsburg, Va. Mr. Claiborne created three days of meal programming that he hoped would display the geographic and gastronomic diversity of the United States. If crawfish is not readily available where you live, look for frozen crawfish tails online.

2 pounds crawfish tails, peeled, or very small shrimp, peeled and deveined
2 eggs, well beaten
1 1/4 cups milk
1/2 cup corn flour (see note)
1/2 cup all-purpose flour
1 teaspoon sugar
Salt to taste if desired
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
1 teaspoon finely ground white pepper
1/8 teaspoon finely ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon dried thyme leaves
1/8 teaspoon pulverized ground bay leaves
Oil for deep frying
Garlic mayonnaise

Steps:

  • Prepare the crawfish or shrimp and set aside.
  • Blend eggs and milk; beat well.
  • In a large bowl, combine the corn flour and all-purpose flour, sugar, salt, garlic, onion, peppers, thyme and bay leaves. Blend well. Gradually add the milk mixture, stirring well with a whisk. Let stand one hour at room temperature.
  • Heat one inch of oil in a black iron skillet or use a deep-fat fryer. It is important that the oil be heated to a temperature as close to 370 degrees as possible. Coat the seafood with batter and drop it a few pieces at a time in the hot fat. This will be done in several batches. Cook, stirring occasionally, until golden brown all over, about two minutes total cooking time.
  • As the food is cooked, drain well of paper towels. Serve with garlic mayonnaise on the side.

1 (32 ounce) frozen french fries
2 Tbsp creole seasoning,divided
6 bacon strips
3 tsp pickled jalapeno liquid,divided
1 lb crawfish tails,rinsed and drained
1 green bell pepper,chopped
1 vidalia sweet onion,diced
1/2 c margarine
1 c heavy cream
1 Tbsp hot sauce
1 package cream cheese,softened
2 c shredded mexican cheese blend,divided

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Line a baking sheet with a aluminum foil and coat with cooking spray.
  • 3. Add frozen french fries onto a foil covered baking sheet.Season with 1 tablespoon creole seasoning.
  • 4. Bake for 35 to 40 minutes or until crispy.
  • 5. In a large skillet,cook bacon over medium-low heat,for 4 minutes until the bacon are cooked.Use the tongs to get the bacon out of the skillet,save the drippings.
  • 6. Place the bacon on the paper towel filled plate,pat dry and crumbled.Set aside.
  • 7. Add 2 teaspoons jalapeno liquids into the skillet with bacon drippings over medium heat,mix well.
  • 8. Add crawfish tails and season with remaining creole seasoning.Saute for 5 minutes until crawfish tails are browned.Stir in chopped bell pepper and diced onion,Saute for 5 minutes more,until are tender.
  • 9. In a medium saucepan over medium heat,combine margarine,remaining jalapeno liquids,heavy cream,hot sauce,cream cheese and 1 cup mexican cheese,stir for 6 minutes or until thickened.
  • 10. Add crawfish mixture onto the cheese sauce,mix well.
  • 11. Pour crawfish/cheese sauce mixture into the fries.Add bacon bits and remaining mexican cheese blend.
  • 12. Back to the oven for 3 minutes,until the cheese is bubbly.
