Here's what you need: sweet potatoes, cornstarch, grapeseed oil, pepper, paprika, garlic powder, salt

2 sweet potatoes
1 tablespoon cornstarch
2 tablespoons grapeseed oil
½ teaspoon pepper
1 ½ teaspoons paprika
1 teaspoon garlic powder
salt, to taste

Steps:

  • Peel the sweet potatoes on a cutting board.
  • Trim the ends of the potatoes and cut into ½-inch (1 cm) thick matchsticks.
  • Add the cut potatoes to a large bowl of water and soak for 1 hour.
  • Drain the potatoes in a colander, and rinse with cold water.
  • Preheat the oven to 425˚F (220˚C).
  • Thoroughly dry the sweet potato matchsticks with paper towels.
  • Add the sweet potatoes to a large bowl and sprinkle with cornstarch, tossing until fully coated.
  • Drizzle the grapeseed oil over the potatoes, add the paprika, garlic powder, and pepper. Toss to coat.
  • Arrange the sweet potatoes in a single layer on a greased, foil-lined baking sheet.
  • Bake for 15 minutes. Use a spatula to turn the sweet potato fries over.
  • Bake for another 15 minutes.
  • Turn off the oven and crack the door open, then let the sweet potatoes rest in the oven for 10 minutes.
  • Season the fries with salt.
  • Enjoy!

1/4 cup sugar
1-1/2 teaspoons active dry yeast
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 to 4-1/2 cups all-purpose flour
1 cup 2% milk
1/4 cup shortening
2 tablespoons water
2 large eggs, room temperature
1/2 cup mashed sweet potatoes
1/2 cup finely chopped dried cranberries
Oil for deep-fat frying
1 cup confectioners' sugar
2 to 3 tablespoons apple cider or juice

Steps:

  • In a large bowl, combine the sugar, yeast, cinnamon, salt and 1-1/2 cups flour. In a small saucepan, heat the milk, shortening and water to 120°-130°; add to dry ingredients. Beat on medium speed for 2 minutes. Add the eggs, mashed potatoes and cranberries; beat 2 minutes longer. Stir in enough remaining flour to form a firm dough., Do not knead. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; roll out to 1/2-in. thickness. Cut with a floured 2-1/2-in. doughnut cutter; reroll scraps. Place 1 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes., In an electric skillet or deep fryer, heat oil to 375°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Combine confectioners' sugar and apple cider; dip warm doughnuts in glaze.

Steps:

  • Heat the oven to 400.
  • Cut the sweet potatoes into sticks 1/4 to 1/2 inch wide and 3 inches long, and toss them with the oil.
  • Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.

CRANBERRY TAPENADE:
2/3 cup dried cranberries
1/4 cup pitted Greek olives, chopped
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 garlic clove, minced
1 teaspoon minced fresh rosemary
1 teaspoon minced fresh thyme
BURGERS:
2 pounds ground beef
1 teaspoon salt
1 teaspoon pepper
4 slices provolone cheese, quartered
3/4 cup mayonnaise
16 dinner rolls, split and toasted
2 cups fresh arugula
3 plum tomatoes, cut into 16 slices
8 bacon strips, halved and cooked

Steps:

  • In a food processor, place first 6 ingredients; pulse until cranberries are finely chopped. Transfer to a small bowl; stir in thyme. In a large bowl, combine the beef, salt and pepper. Shape into 16 patties, about 1/2 inch thick., In a large nonstick skillet, cook patties in batches over medium heat for 3-4 minutes on each side or until a thermometer reads 160° and juices run clear, topping with cheese during last minute of cooking., Spread mayonnaise over cut sides of rolls. Layer bottoms with arugula, tomatoes, burgers, bacon and cranberry tapenade; replace tops.
