3/4 cup sugar
3/4 cup molasses
3/4 cup water
2 1/4 cups Gold Medal™ all-purpose flour
3/4 teaspoon salt
3/4 teaspoon baking soda
2 1/4 cups fresh or frozen (thawed) cranberries
3/4 cup butter
3/4 cup heavy whipping cream
1 1/2 cups sugar

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, beat eggs, 3/4 cup sugar, the molasses and water with whisk. In medium bowl, mix flour, salt and baking soda. Stir flour mixture into liquid mixture just until moistened; fold in cranberries. Pour mixture in pan.
  • Bake 37 to 42 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes.
  • In 2-quart saucepan, heat Sweet Butter Sauce ingredients to simmering over medium heat, stirring constantly, until slightly thickened and sugar is dissolved.
  • Spray edge of sharp knife with cooking spray; cut warm cake into 5 rows by 4 rows. Serve cake with warm butter sauce.

I cannot remember where I found this recipe but it has been enjoyed many times. Uses whole berry cranberry sauce which gives the cake a pretty swirl effect. This works well served as a dessert or served during a brunch.

3/4 cup butter (softened)
1 1/2 cups sugar
3 eggs
1 1/2 teaspoons almond extract
3 cups all-purpose flour
1 1/2 teaspoons baking powder

1 1/2 cups sour cream (12 oz container)
1 (16 ounce) can whole berry cranberry sauce
1/2 cup pecans (finely chopped)
3/4 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, cream together butter and sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in extract.
  • Combine flour, baking powder, baking soda, and salt.
  • Add to the creamed mixture alternately with the sour cream, beating well after each addition.
  • Spoon one-third of the batter into a greased and floured 10-inch Bundt pan.
  • In a small bowl, pour out whole berry cranberry sauce and stir ingredients together as in the can they are separated.
  • Top the cake mixture with one-third of the cranberry sauce (make sure not to bring it to the sides as it is difficult to remove from the pan).
  • Repeat layers two times.
  • Sprinkle top with finely chopped pecans.
  • Bake at 350 degrees for 65-70 minutes or until toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing cake from pan onto a wire rack.
  • Cool completely then place on cake plate.
  • Combine icing ingredients until smooth.
  • Drizzle icing over cake.
  • Let set before serving.

  • Heat oven to 350 degrees.

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9-inch round cake pan.

2 box vanilla instant pudding
1 can(s) apricot nectar
1 can(s) strawberry nectar
8 eggs
1 c sugar
1 1/3 c oil
2 c dried cranberries or craisins
HOT ALMOND BUTTER SAUCE
1 c butter
2 c sugar
1 c half and half
2 tsp vanilla
4 tsp almond extract
2 tsp coconut extract

  • 1. To make the cake, empty cake mixes into a large bowl. Add eggs, oil, apricot and strawberry nectars, sugar and vanilla pudding. Mix until smooth. Place the dried cranberries into a large ziplock bag with a 1/2 cup of flour. Shake vigorously until they are coated. Fold the cranberries into the batter.
  • 2. Pour into two 13 x 9" pans. Bake at 350 degrees until toothpick inserted comes out clean - approximately 25 to 35 min.

1 c milk
2 c cake flour

pinch salt
1 tsp vanilla
2 c cranberries, cut in half (fresh is best or frozen)
LEMON BUTTER SAUCE
1/2 c butter
1 c brown sugar
16 oz boiling water
2 Tbsp all-purpose flour
juice of one lemon
1 tsp pure vanilla extract

Steps:

  • 1. Beat sugar and butter. Add vanilla.
  • 2. In a separate bowl, sift flour, baking powder, and salt together.
  • 3. Alternate adding flour and milk to sugar/butter mixture.
  • 4. Mix until combined.
  • 5. Fold in cranberries.
  • 6. Pour into a greased and floured square 8 or 9 inch pan.
  • 7. Bake in a 375 degree oven for 30 minutes.
  • 8. While the cake is baking you can prepare the sauce. In a saucepan combine the butter, brown sugar, flour, and boiling water. Bring to a boil. Boil 1 minute or until thickened. The sauce should be thick like gravy, not too thick. Remove from heat. Add lemon juice and vanilla.
  • 9. Cool the cake. Cake can be served warm from the oven or cool. Serve cake with hot sauce. TIP: Mom always made the cake and sauce ahead of time. She stored the sauce in a glass jar in the refrigerator and reheated it when she served the cake.

FOR THE CAKE:
2 c flour
2/3 c sugar
2 tsp baking powder
2/3 c skim milk
1 large egg
1/2 tsp lemon extract al
2 c whole cranberries
FOR THE SAUCE:
1/3 c sugar
1 Tbsp cornstarch
1 c boiling water
3 Tbsp lemon juice
2 Tbsp butter
1 Tbsp lemon rind

Steps:

  • 1. Preheat the oven to 360F. Combine flour, sugar, and baking powder in a bowl. In another bowl combine milk, egg, oil and lemon extract.
  • 2. Combine wet and dry ingredients and mix until well blended. Add the cranberries.
  • 3. Pour into a grease baking dish (I used a 9" square pan)...the recipe calls for a 9" circle baking dish. Bake for 50 minutes or until toothpick comes out clean.
  • 4. While the cake is baking, make the topping.
  • 5. Combine boiling water with sugar and cornstarch to make a thick sauce.
  • 6. Add the lemon juice, butter and lemon zest. Pour over the cake and serve.

Sauce:
1 cup sugar
1 stick butter
3/4 cup evaporated milk

Steps:

  • Beat cake ingredients except cranberries for 2 minutes. Fold in cranberries. Bake 350 for 1/2 hour in greased and floured 9x13 pan. Bring sauce ingredients to boil. Can make ahead and reheat. Pour (hot) over slices of cake just prior to serving.

1 cup sugar
2 eggs, slightly beaten
1/2 cup canola oil
2 teaspoons vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 rib allspice
1 teaspoon salt
1 cup raisins
3/4 cup butterscotch chips
1 cup broken nuts
1 cup chopped fresh cranberries
BOURBON SAUCE
1/2 cup brown sugar
3 teaspoons butter
1/4 cup bourbon whiskey

  • Instructions:Preheat over to 325. Prepare pans. Sometimes I make this in loaf pans, sometimes as muffins, sometimes in ramekins. It's up to you.Mix apples and sugar in a large bowl and set aside. Mix eggs, oil and vanilla in a separate bowl. Combine flour, baking soda, cinnamon, allspice and salt with a fork in yet another bowl. Next, combine egg mixture with apples and sugar. Combine flour mixture with apple mixture. Mix thoroughly it's very chunky. Then add raisins, cranberries, nuts and butterscotch bits into mixture until evenly distributed. Bake for 25-30 minutes. You may need to bake a little longer for loaf or bundt pans. Check with toothpick. Serve warm or at room temp. For added moisture, drizzle with Bourbon Sauce. (see below.)Melt butter over medium heat. Add brown sugar and Bourbon. Simmer on low heat, stirring often to cook off some of the alcohol, about 5 minutes. Poke holes in surface of warm cake with wooden skewer and drizzle with sauce. Cover and let stand for a least an hour before serving. 1/3 cup orange juice

Steps:

  • Mix all cake ingredients well.
  • Place in sprayed tube pan, I put waxed paper in the bottom before I spray it.

  • Cool in pan 10 minutes, turn over onto plate.
  • Cool completely.
  • Mix icing ingredients well and drizzle over cooled cake.

1 box (4-serving size) vanilla instant pudding and pie filling mix
2/3 cup water
1/2 cup butter, melted

3 eggs
1 1/4 cups sugar
2 tablespoons cornstarch
1 1/2 cups fresh or frozen cranberries
1/2 cup fresh orange juice
1 teaspoon grated orange peel
1/8 teaspoon ground nutmeg

Steps:

  • Heat oven to 325°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray.
  • In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 1 minute. Spoon into pan; spread evenly in pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool completely, about 1 hour.
  • Meanwhile, in 2-quart saucepan, mix sugar and cornstarch. Add cranberries and orange juice. Heat to boiling over high heat. Reduce heat to medium. If you make cranberry sauce at the holidays, you use a whole bag of berries that yields a quart of sauce. If you have less than 12 at your table, chances are you are left with at least 2 cups of your sauce. This recipe provides a new use for that leftover sauce. It can also be used "the morning after" for topping buckwheat pancakes or waffles.

1 tablespoon butter
2 medium apples, peeled and chunked, such as McIntosh
1 medium Bosc pear, peeled and chunked
1 tablespoon brown sugar
1 teaspoon lemon juice
1/8 teaspoon ground nutmeg
1 cup apple cider
1/2 to 2/3 cup prepared whole berry cranberry or cranberry-orange sauce
4 (1-inch) slices packaged pound cake
1 pint French vanilla ice cream

Steps:

  • Place a small saucepan, over moderate heat and add butter. Work close to the stove and add apples and pear to the pot as you chop them. Sprinkle the fruit with brown sugar, a teaspoon of lemon juice and nutmeg. Add cider and raise heat a little. Allow liquid to come to a boil, then add cranberry sauce to the pot. When sauce returns to a boil, turn heat back to moderate, and cook sauce 5 minutes until apples and pears are softened but sauce remains fairly chunky in consistency. Spoon the warm fruit sauce over pound cake slices and top with scoops of vanilla ice cream.
