CRANBERRY PUFFS
Yummy cranberry and cream cheese filled wontons. A little sweet, a little spicy, and a little salty! A perfect snack for the holidays.

- In a food processor, combine the cranberries, jalapeno pepper, sugar and mayonnaise. Process until smooth. This will be your cranberry relish. Set aside half of this mixture, and pour the rest into a medium bowl. Mix cream cheese into this half until well blended.
- Lay a few wonton wrappers at a time out on a clean surface. Spoon about 1 teaspoon of the cream cheese mixture onto the center of each one. Pinch the corners together to make a triangle shape. If they don't stick, wet them with a little water using your finger. Set aside on a piece of waxed paper while you assemble the remaining puffs.
- Heat the oil in a large deep skillet over medium to medium-high heat. When the oil is hot, carefully set 5 to 10 of the dumplings in the pan. Do not over crowd the pan. Fry on each side until golden brown. Remove from the hot oil using tongs and place on paper towels to drain. Serve on a platter with the reserved cranberry relish as a dipping sauce. The sooner you eat them, the better they taste.

- In a small saucepan, combine broth and mushrooms; bring to a boil. Remove from the heat; let stand for 15-20 minutes or until mushrooms are softened. Using a slotted spoon, remove mushrooms; coarsely chop. Strain remaining broth through a fine mesh strainer. Set aside mushrooms and broth., In a large skillet, saute onion in butter until softened. Reduce heat to medium-low; cook, stirring occasionally, for 10 minutes or until golden brown. Add the tarragon, salt, pepper and reserved mushrooms and broth. Bring to a boil; cook over medium heat until liquid is evaporated., On a lightly floured surface, unfold puff pastry. Roll each sheet into a 12x10-in. rectangle; cut each into two pieces. Transfer to a greased baking sheet. Spoon mushroom mixture onto each pastry; top with turkey and cream cheese., Lightly brush pastry edges with water. Bring long sides over filling, pinching seams and ends to seal. Turn pastries seam side down. Cut small slits into pastry. Brush tops with egg. Bake at 400° for 20-25 minutes or until golden brown., Meanwhile, in a small saucepan, combine the broth, wine and vinegar. Bring to a boil; cook until liquid is reduced by half. Stir in cranberry sauce until melted. Serve with pastries.

EASIER CRANBERRY PUFFS
A more simple version of an already wonderful recipe. Sweet and spicy blended together for a fast and tasty snack! I recommend serving this with a red chili Asian dipping sauce. Yum! Also note that if you want a less spicy version, feel free to seed your jalapeno, choose to omit the jalapeno or curry powder, or both.

- Mix the cream cheese, cranberry sauce, curry powder, and jalapeno peppers in a bowl until slightly lumpy. Lay a few wonton wrappers at a time out on a clean surface. CRANBERRY BRIE PUFFS
Steps:
- Preheat oven to 400 degrees and thaw 1 sheet of puff pastry from a (17.3 oz) package for 30 minutes. Roll into a 14 inch square on a lightly floured board and cut into 36 equal squares. Press into 36 mini muffin cups. Drain 1 (15 oz) can Bartlett pears and coarsely chop. Cut an 8 oz wedge of Brie into small cubes and place equal amounts of pears and cheese in each cup; top each with 3-4 cranberries. Bake for 12-15 minutes or until very puffed and golden brown. Serve warm.
SPICY CRANBERRY PUFFS
These get snarfed up as soon as they come out of the oven over here. They're a quick and easy hors d'oeuvre and are perfect for holiday parties and potlucks. I will often double the recipe because they go so fast. You'll use about 16 TBSP of cheese and about 16 TSP cranberries (with liquid from the sauce to make a glaze)

- 1. Preheat oven to 400 and unfold pastry sheet. Cut pastry into roughly 2 inch squares. Place squares on baking sheet with a silpat or parchment.
- 2. Drain chiles and mix well into cranberry sauce.
- 3. Roll cheese into large marbles and smoosh into each pastry on the top middle.
- 4. Using a pastry brush, brush the liquid from the cranberry mixture over each pastry square to create a glaze.
- 5. Finally top each piece with a rounded teaspoon of the cranberries.
- 6. Cook 25 to 30 minutes, until pastry is puffy and golden.
