Easy Cranberry Orange Relish image

A delightful change from the ordinary...the only relish most of my family will eat! Relish can be chilled up to 3 days.

1 navel orange
1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

Cranberry Sauce With Orange Liqueur image

I use either Grand Marnier or Cointreu in this recipe. The additions of liqueur and orange zest make this cranberry sauce a holiday favorite at our house.

12 ounces fresh cranberries
1 cup sugar
1 cup water
2 teaspoons orange zest
2 tablespoons Cointreau liqueur

Steps:

  • Combine sugar and water in a medium saucepan.
  • Bring to a boil; add cranberries, return to a boil.
  • Reduce heat and boil gently for 10 minutes, stirring occasionally.
  • Remove from heat. Add orange zest and Cointreau (or Grand Marnier) and stir.
  • Let cool at room temperature.
  • Refrigerate until cold, or serve at room temperature.

1 package (12 ounces) fresh or frozen cranberries
3/4 cup sugar
2 teaspoons grated orange zest
3 medium oranges, peeled and sectioned
2 tablespoons orange liqueur or orange juice
1/2 to 1 teaspoon minced fresh rosemary or 1/8 to 1/4 teaspoon dried rosemary, crushed

Steps:

  • In a large saucepan, combine the cranberries, sugar and orange zest. Cook over medium heat until the berries pop, about 15 minutes., Remove from the heat; stir in the oranges, liqueur and rosemary. Transfer to a small bowl. Cover and store in the refrigerator.

  • In nonreactive 4-quart saucepan, mix cranberries, sugar, orange peel, water and lemon juice. Cook over medium-low heat, stirring frequently, until juices start to flow and sugar is dissolved.
