A nice thing to have around during the holidays, but don't expect them to stay around long. These orange-flavored cranberry cookies are tart and delicious, not to mention beautiful. Not really a favorite of kids.

1 cup butter, softened
1 cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 cups chopped cranberries
½ cup chopped walnuts
½ teaspoon grated orange zest
3 tablespoons orange juice
1 ½ cups confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.
  • In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.

This is posted per request. The recipe is from the "Gifts for the Cookie Jar" cookbook. I have not yet made these. Times are guesstimates for assembling the jar mix. Note: dried orange peel is generally available in the spice section of a grocery store.

1 cup packed light brown sugar
1/2 cup sugar
2 1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon dried orange peel
3/4 cup chopped dried sweetened cranberries
1 cup butter, softened
2 eggs

Steps:

  • *JarMix Instructions*.
  • In 1-qt jar, place brown sugar and pack down.
  • Next, pour in sugar and smooth top.
  • In medium bowl, combine flour, baking soda, salt and orange peel, mixing well.
  • Pour in half of flour mixture and press down.
  • Pour in remaining flour mixture and smooth top.
  • Pour in cranberries and press down to level.
  • Place lid on jar.

  • Preheat oven to 350°F.
  • Empty jar contents into large bowl.
  • Add butter and eggs.
  • Beat until thoroughly mixed.
  • Drop rounded teaspoonfuls onto ungreased cookie sheet.
  • Bake 10- 12 minutes until lightly browned edges.
  • Cool on cookie sheet for 1 minute.
  • Transfer cookies to cooling rack.

⅝ cup all-purpose flour
½ cup rolled oats
½ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
⅓ cup packed brown sugar
⅓ cup white sugar
½ cup dried cranberries
½ cup white chocolate chips
½ cup chopped pecans

Steps:

  • Layer the ingredients in a 1 quart or 1 liter jar, in the order listed.
  • Attach a tag with the following instructions: Cranberry Hootycreeks 1. Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet or line with parchment paper. 2. In a medium bowl, beat together 1/2 cup softened butter, 1 egg and 1 teaspoon of vanilla until fluffy. Add the entire jar of ingredients, and mix together by hand until well blended. Drop by heaping spoonfuls onto the prepared baking sheets. 3. Bake for 8 to 10 minutes, or until edges start to brown. Cool on baking sheets, or remove to cool on wire racks.
