Time 1h35m

Number Of Ingredients 13

1½ cups (3 sticks) unsalted butter, (at room temperature)
1½ cups granulated white sugar
4 large eggs
1 cup orange juice
1 cup sour cream
2 tablespoons finely grated orange zest
2 teaspoons vanilla extract
4 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1½ cups dried cranberries
2 cups powdered sugar
6 to 8 tablespoons Grand Marnier ((or orange juice))

Steps:

  • Preheat the oven to 330°F. (yep, you read that correctly!). Spray two 5x8-inch loaf pans nonstick spray (or, if making mini loaves, spray six 2-cup capacity pans).
  • With an electric or standing mixer on medium speed, combine the butter and sugar together in a large bowl until pale and fluffy, about 3 minutes. Add the eggs, one at a time, mixing well after each. Add the orange juice, sour cream, orange zest, and vanilla; mix until blended.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Add the flour mixture and cranberries to the wet ingredients and mix just until the dry ingredients are absorbed; do not overmix.
  • Divide the batter evenly between the prepared loaf pans. Bake until a toothpick inserted into center of the breads comes out clean, 70 to 75 minutes for large loaves and 55 to 60 minutes for mini loaves.
  • Meanwhile, in a small bowl, whisk together the powdered sugar and 6 tablespoons Grand Marnier (or orange juice). The glaze should have the consistency of thick maple syrup or corn syrup. If it is too thick, thin with an additional tablespoon or two of the liqueur.
  • Let the loaves cool in the pans for 10 minutes, then remove and transfer to a cooling rack set over a large baking sheet. With a thin skewer or long toothpick, poke deep holes in the tops of the loaves. Drizzle with Grand Marnier glaze so that it coats the top, runs down the sides, and seeps through the holes.
  • Let the loaves cool completely, then slice and serve, or wrap and freeze.

EASY ORANGE CRANBERRY GLAZE

Easy Orange Cranberry Glaze image

A good, easy, yummy glaze that can be used on chicken or turkey. I came up with this a few years ago for Thanksgiving, to change up the old boring turkey. Everyone loved it. There was no left-over turkey that year.

Time 15m

Yield 30

Number Of Ingredients 4

1 cup orange juice
1 cup packed dark brown sugar
1 (16 ounce) can jellied cranberry sauce
1 (3 inch) cinnamon stick

Steps:

  • Mix together the orange juice, brown sugar, and cranberry sauce in a saucepan, stirring to dissolve the sugar. Bring the mixture to a boil, drop in the cinnamon stick, and reduce heat to a simmer. Cook, stirring frequently, until the cranberry sauce is melted and the glaze is hot and bubbling, about 10 minutes.
  • To use: brush the glaze all over a roasted turkey during the last 45 minutes of cooking. Return the turkey to the oven and bake for 10 to 15 minutes to set the glaze. Repeat several more times before the end of cooking time.

CRANBERRY ORANGE BREAD WITH ORANGE BUTTER GLAZE

Cranberry Orange Bread With Orange Butter Glaze image

I came up with this recipe myself. I hope you like it. It isn't as sweet as some quick breads because of the cranberries, but I like the tartness. Let me warn you, though. It smells really good fresh out of the oven, but PLEASE let it sit overnight in the refrigerator before trying it. When it is still warm, but flavors haven't blended and it is extremely tart. The longer it's allowed to sit, the better it gets. We had this for Thanksgiving and I received several compliments on it. Prep time is an estimate. Enjoy!
