1 package (12 ounces) fresh or frozen cranberries, thawed
1 package (8 ounces) chopped dates
3/4 cup chopped pecans
2 tablespoons plus 1/2 cup sugar, divided
2-1/3 cups all-purpose flour, divided
2 cups old-fashioned oats
1/2 cup packed brown sugar
1/2 teaspoon baking soda
1 cup butter, melted
3/4 cup caramel ice cream topping

Steps:

  • In a small bowl, combine the cranberries, dates, pecans and 2 tablespoons sugar; set aside. , In a large bowl, combine 2 cups flour, oats, brown sugar, baking soda and remaining sugar. Stir in butter; set aside 1 cup for topping. Press remaining crumb mixture into a greased 13-in. x 9-in. baking dish. Bake at 350° for 15 minutes. , Meanwhile, place the remaining flour in a small bowl. Stir in caramel topping until smooth; set aside. Sprinkle cranberry mixture over crust; drizzle with caramel mixture. Sprinkle with reserved crumb mixture. , Bake for 30-35 minutes or until golden brown and bubbly. Cool on a wire rack. Cut into bars. Store in the refrigerator.

This is a variation on classic, fresh Ocean Spray® cranberry sauce! My grandma has made it for years and people who don't like cranberry sauce request that I make this at our events! It's different and great! This is a nice change of pace. and I've yet to meet anyone who doesn't like it! Tastes best if stored in refrigerator overnight.

1 (16 ounce) can pineapple chunks with juice
water as needed
1 cup white sugar
1 (12 ounce) bag fresh cranberries

Steps:

  • Drain juice from canned pineapple into a measuring cup. Fill the measuring cup with enough water to equal 1 cup liquid altogether.
  • Stir pineapple juice mixture and sugar together in a saucepan; bring to a boil, stirring constantly. Add cranberries and return to a boil. Reduce heat to low and simmer until cranberries burst, about 10 minutes.
  • Mix pineapple chunks into cranberry mixture. Cool to room temperature before serving.

1 can (8 oz.) crushed pineapple in juice, undrained
1 pkg. (12 oz.) cranberries
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
1/2 cup sugar
1/2 cup chopped walnuts

Steps:

  • Drain pineapple, reserving juice. Add enough water to reserved juice to measure 1 cup; pour into medium saucepan. Add cranberries, dry gelatin mix, sugar and pineapple; mix well. Bring to boil, stirring frequently.
  • Reduce heat to medium; cook 3 to 5 min. or until cranberries are softened, stirring occasionally. Remove from heat; stir in nuts. Cool 30 min.
  • Spoon cranberry relish into small bowl. Refrigerate 6 hours or until firm. Stir before serving.

1 cup packed brown sugar
1/2 cup butter, melted
1 can (20 ounces) sliced pineapple, drained
1 cup fresh or frozen cranberries
CAKE:
1 cup butter, softened
1-1/4 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
3/4 cup sour cream
1 cup fresh or frozen cranberries, halved
Sweetened whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small bowl, mix brown sugar and butter; spread onto the bottom of a greased 13x9-in. baking pan. Top with pineapple slices. Place a whole cranberry in the center of each pineapple; sprinkle remaining cranberries around pineapple., For cake, in a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, salt, cinnamon and allspice; add to creamed mixture alternately with sour cream, beating well after each addition. Fold in cranberries; spoon over pineapple., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool 10 minutes; invert onto a serving plate. Serve warm; if desired, top with whipped cream.

1/2 fresh pineapple, peeled, cored and diced
8 ounces fresh cranberries
1 cup chopped onion
Juice and grated rind of 1 orange
1/4 cup cider vinegar
2 tablespoons dark rum
1 cup light brown sugar, packed
1 teaspoon black peppercorns, crushed
1/8 teaspoon ground cloves

Steps:

  • Put all the ingredients in a heavy saucepan and stir to combine. Bring to a boil and cook over medium heat about 20 minutes, until the mixture is thick.
  • Transfer to sterilized canning jars and seal according to manufacturer's directions, or put in plastic containers and refrigerate. The chutney can be prepared several days in advance. Serve at room temperature.

This goes back a long time, and I still make it to serve with a turkey dinner. It is one of my favorite cranberry recipes, and is always enjoyed by everyone. Serve this at your holiday dinner table and you will receive rave reviews! You can make this up to a week in advance.... this has the perfect balance of sweet and tart with the the right texture! No need to double the recipe this makes close to 6 cups, plan ahead the sauce needs to chill for 24 hours before using and you may omit the walnuts if desired

1 (20 ounce) can crushed pineapple in juice
2 (12 ounce) packages cranberries (fresh or frozen, preferably fresh)
1 1/4 cups sugar (can use more)
1 1/4 cups walnuts, chopped (optional)
1 tablespoon fresh lemon juice
1/4 teaspoon clove

Steps:

  • Drain the pineapple thoroughly in a fine sieve set over a large measuring cup (push the pineapple against the sieve to drain out any extra juice).
  • Add enough water to the measuring cup (with the juice in it) to make 2 cups liquid.
  • Place the liquid in a saucepan.
  • Add in cranberries and sugar.
  • Stir over medium heat until sugar dissolves and the mixture comes to a boil.
  • Continue to boil until most of the berries pop (you might want to keep a splatter screen or a lid over until the berries are finished popping) and the mixture is thick, stirring occasionally (about 10 minutes) remove from heat.
  • Add in drained pineapple, walnuts, lemon juice and cloves; mix until well combined.
  • Transfer to a bowl and cool to room temperature.
  • Cover and refrigerate for 24 hours.
  • Delicious!

1 pastry for a 9-inch double crust pie
2 tablespoons lemon juice
4 Granny Smith apples
½ cup butter
1 tablespoon all-purpose flour
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon vanilla extract
½ cup white sugar
½ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup dried cranberries
1 tablespoon white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Press one of the pie pastries into a 9-inch pie plate; reserve the remaining pastry.
  • Pour the lemon juice into a container that large enough for the apples and fill halfway with cold water. Peel and slice the apples into the lemon water; set aside.
  • Melt the butter in a large saucepan over medium heat. Stir in the flour and cornstarch to form a paste. Stir in 2 tablespoons of water along with the vanilla extract, 1/2 cup white sugar, brown sugar, 1 teaspoon cinnamon, and nutmeg; bring to a simmer. Drain the apples and add them to the sugar mixture along with the cranberries. Cook and stir 5 minutes; remove from the heat and allow to cool slightly.
  • Pour the fruit into the pie plate and press on the top crust. Stir together 1 tablespoon of white sugar and 1/2 teaspoon of cinnamon; sprinkle over the pie.
  • Bake in the preheated oven for 15 minutes; reduce the oven temperature to 350 degrees F (175 degrees C) and continue baking until the top crust is golden brown, 35 to 40 minutes.
