CRANBERRY-ALMOND GRANOLA

2/3 cup frozen unsweetened apple juice concentrate, thawed
1/2 cup maple syrup
1/3 cup almond oil or canola oil
1/4 cup packed dark brown sugar
1 tablespoon ground cinnamon
1/2 teaspoon salt, or to taste
5 cups rolled oats (not quick-cooking)
1 cup toasted wheat germ
1 cup whole almonds, coarsely chopped (4 1/2 ounces)
1/2 cup sunflower seeds (2 ounces)
1 cup dried cranberries, divided

Steps:

  • To Make Ahead: Store granola in airtight containers for up to 2 months.
  • If you've never made your own granola, you'll be amazed at the difference in freshness and flavor-and at how easy it is. Use this recipe as a starting point for your own creativity: substitute dried blueberries or chopped dried apricots for the cranberries, or walnuts or hazelnuts for the almonds.
  • Position racks in the top and bottom thirds of the oven; preheat to 325degreesF. Coat 2 large baking sheets with sides with cooking spray.
  • Whisk apple juice concentrate, maple syrup, oil and brown sugar in a medium saucepan. Bring to a simmer over medium-high heat, stirring occasionally. Remove from heat; stir in cinnamon and salt.
  • Mix oats, wheat germ, almonds and sunflower seeds in a large bowl. Stir in the juice mixture; toss to coat. Spread the granola evenly on the prepared baking sheets.
  • Bake the granola for 15 minutes, stirring once or twice. Reverse sheets top to bottom and back to front. Continue baking until lightly browned and aromatic, stirring frequently, about 15 minutes more. Transfer the baking sheets to wire racks; stir 1/2 cup dried cranberries into the granola on each sheet. Let cool completely.

Nonstick vegetable oil spray
3/4 cup (packed) golden brown sugar, divided
1/2 cup pure maple syrup
1/4 cup egg whites (about 2 large egg whites)
1 tablespoon vanilla extract
1 1/4 teaspoons maple extract
1 1/4 teaspoons ground cinnamon
1 teaspoon ground allspice
3 cups old-fashioned oats
1 cup walnut halves, broken in half
1 cup dried cranberries

Steps:

  • Position rack in bottom third of oven and preheat to 325°F. Generously coat heavy large rimmed baking sheet with nonstick spray. Stir 1/2 cup sugar and syrup in heavy small saucepan over low heat until sugar dissolves, occasionally brushing down sides with wet pastry brush. Pour into large bowl; cool to lukewarm. Whisk in egg whites, extracts, and spices. Add oats, nuts, and remaining 1/4 cup sugar; toss well.
  • Spread mixture in even layer on prepared baking sheet. Bake 35 minutes. Using metal spatula, turn granola over (bottom will be brown). Bake 10 minutes. Sprinkle cranberries over; bake until dry, about 10 minutes longer. Cool granola completely in pan.

I made this for holiday gifts and to have on hand for a healthier holiday snack, it is a nice way to lighten up granola using egg whites. I found the recipe in a recent 11/07 Bon Appetit Magazine and was pleasantly surprised to see the kids eating it by the handful:)

3/4 cup golden brown sugar
1/2 cup maple syrup, pure
1/4 cup egg white, 2ish
1 tablespoon vanilla extract
1 1/4 teaspoons maple extract
1 1/4 teaspoons cinnamon
1 teaspoon allspice
3 cups oats, old fashioned
1 cup walnuts, halves broken in half
1 cup cranberries, dried
cooking spray

Steps:

  • Preheat 325 degrees.
  • position rack in bottom third of oven.
  • Spray a large jelly roll pan with non stick cooking spray.
  • Stir 1/2 cup sugar and syrup in heavy small saucepan over low heat until sugar dissolves,occasionlly brush down sides with wet pasty brush.
  • Pour into large bowl,cool to luke warm.
  • Whisk in egg whites, extracts and spices.
  • Add oats,nuts and remaining quarter cup of sugar,mix well.
  • Spread mix in even layer on jelly roll.
  • Bake 35 minutes.
  • Using spatula turn granola over-bottom will be browned.
  • Bake 10 minutes.
  • Sprinkle cranberries over and continue to bake 10 more minutes or till dry.
  • Cool completely in pan.
  • Enjoy.

HOMEMADE CRANBERRY NUT GRANOLA

1/3 cup pumpkin seeds
1/4 cup sunflower seeds
Nonstick cooking spray
1/3 cup maple syrup
2/3 cup packed brown sugar
1/2 cup unsweetened cranberry juice
1 1/2 teaspoons ground cinnamon
2 cups old fashioned rolled oats
1/2 cup chopped roasted and salted almonds
1/4 teaspoon fine sea salt
1 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the pumpkin seeds and sunflower seeds on a baking sheet. Bake for 8 to 10 minutes until lightly toasted. Set aside to cool.
  • Reduce the oven temperature to 325 degrees F. Spray a baking sheet with nonstick cooking spray. Set aside.
  • In a small saucepan, combine the maple syrup, brown sugar, cranberry juice, and cinnamon over medium heat. Cook, stirring constantly, until the sugar has dissolved.
  • In a medium bowl, mix together the oats, almonds, pumpkin seeds, sunflower seeds, and salt.
  • Pour the maple mixture over the oat mixture and stir until combined. Spread the mixture onto the prepared baking sheet. Bake for 20 minutes. Remove the baking sheet from the oven. Stir in the cranberries and bake for an additional 10 to 15 minutes until the mixture begins to brown. Cool completely. Store airtight in a plastic container for up to 1 week.

She says of this recipe, "I grew up eating homemade granola that my mom made for us and have found that having a tart fruit in the granola gives it extra pizzazz. I enjoy the cranberry-walnut combination. Walnuts have healthy oils and are so good for us. The protein and fat combination of the nut helps to make the granola more filling, providing lasting energy. Granola takes a little while to bake and makes your entire house smell good. This is a good granola for breakfast." NOTE: Add fruit to granola only after the baking is done to avoid drying out the fruit and avoid making it tough to chew and less flavorful.

1 cup walnuts, coarsely chopped
1/2 cup sesame seeds
2 teaspoons orange zest, finely grated
1/4 cup evaporated cane juice, crystals
2 teaspoons sea salt, unprocessed
2/3 cup honey or 2/3 cup maple syrup
1/2 cup oil, expeller-pressed
1/2 cup dried cranberries
1/2 cup dried blueberries (optional)

Steps:

  • Preheat oven to 325°F Prepare a shallow 14x11-inch pan by greasing with cooking spray or butter.
  • In large bowl, thoroughly mix together oats, walnuts, sesame seeds, orange zest, sugar, and salt.
  • In a separate bowl combine the honey and oil. Pour over the dry ingredients. Thoroughly mix together and spoon into the prepared pan.
  • Bake for 30 minutes, turning the pan and stirring every 10 minutes, or until golden brown.
  • Remove from oven. Mix in the dried cranberries and blueberries, if using, and allow to cool.
