4 cups (1 12 ounce bag) cranberries
1 cup water or orange juice
1 cup sugar
1 jalapeno pepper, seeded and diced
1 tablespoon lime juice
2 tablespoons tequila

Steps:

  • Bring the cranberries, water, sugar and jalapeno to a boil, reduce the heat and simmer until the cranberries burst and the the sauce starts to thicken, about 10-15 minutes.
  • Mix in the lime juice and tequila and remove from heat.

Number Of Ingredients 6

2 medium limes
1 package (12 ounces) fresh or frozen cranberries
1/2 cup sugar
1/2 cup packed light brown sugar
1/3 cup tequila
1/2 teaspoon kosher salt

Steps:

  • Finely grate zest from limes. Cut limes crosswise in half; squeeze juice from limes. Transfer zest and juice to a small saucepan. Stir in remaining ingredients. Bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until berries pop, 12-15 minutes, stirring occasionally. Remove from heat., Transfer to a small bowl; refrigerate, covered, until cold.

Nice change from the usual cranberry orange sauce, a bit more tart to taste and goes great with chicken and turkey.

Number Of Ingredients 8

1 cup cranberries, fresh or frozen
1/3 cup water
1/2 teaspoon lime zest
1/2 lime, juice of
1/3-1/2 cup Splenda sugar substitute, to taste (I use 1/3 cup)
1 pinch salt
1 teaspoon cold water
1/2 teaspoon cornstarch

Steps:

  • Add to a medium saucepan, cranberries, 1/3 cup water, lime zest, lime juice, splenda and the pinch of salt.
  • Bring to boil, reduce heat and simmer until the cranberries start to burst, 3 or 4 minutes.
  • Make a slurry with the teaspoon of water and cornstarch.
  • Add the slurry to the saucepan, stir and simmer 1 minute longer or until thickened.
  • Cool and serve with poultry.

1/2 c sugar
1/2 c pure maple syrup or maple-flavor syrup
1/2 c water
1 1/2 tsp finely shredded lime peel
2 Tbsp lime juice
1 (12-ounce) package fresh or frozen cranberries
1 tsp minced fresh ginger

Steps:

  • 1. In a medium heavy saucepan, stir together sugar, maple syrup, water, lime peel, and lime juice. Bring to boiling; reduce heat. Simmer, uncovered, about 3 minutes or until sugar is dissolved.
  • 2. Stir in cranberries. Simmer, uncovered, for 5 minutes, stirring occasionally. Stir in ginger. Simmer, uncovered, about 6 minutes more or until berries have popped and mixture starts to thicken, stirring occasionally. Cool. Makes 12 servings.
  • 3. Can be made ahead. Prepare sauce as directed; cool. Transfer to an airtight container and chill for up to 3 days. Let stand at room temperature for 30 minutes before serving.
