Delicata Squash Salad with Kale and Cranberry Beans image

Delicata squash is tossed with kale, cranberry beans, and a tangy balsamic dressing in this delicious recipe. Compounds in kale prompt the liver to release enzymes that may fight cancer.

2 medium delicata squashes (about 2 pounds), halved lengthwise and seeded
1 tablespoon plus 1 teaspoon extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons honey
1/2 bunch kale (5 ounces), large stems removed, cut into 1-inch pieces
1 large shallot, finely chopped
1 garlic clove, minced
1 tablespoon red-wine vinegar
1 teaspoon coarse salt
Freshly ground pepper
1 can (15 ounces) cranberry or cannellini beans, drained and rinsed

Steps:

  • Preheat oven to 400 degrees. Cut squashes into 1/2-inch-thick semicircles. Toss with 1 teaspoon oil, and spread onto a parchment-lined baking sheet. Bake until just tender, 15 to 18 minutes. Mix together balsamic vinegar and honey. Brush some of the mixture onto squash slices; reserve remaining mixture. Bake for 5 minutes more.
  • Meanwhile, place kale in a large bowl. Heat remaining tablespoon oil in a small saucepan over medium heat. Add shallot and garlic, and cook until slightly softened, about 4 minutes. Add red-wine vinegar and remaining vinegar-honey mixture to saucepan, and bring to a boil. Immediately pour hot dressing over kale, and sprinkle with salt. Season with pepper. Add squash and beans. Cover with plastic, and let stand for 5 minutes. Toss until kale wilts slightly. Serve warm or at room temperature.

⅛ cup sunflower seeds
¼ cup goat cheese
3 tablespoons raspberry salad dressing
1 dash balsamic vinegar
salt and ground black pepper to taste

Steps:

  • Combine kale, onions, cranberries, walnuts, and sunflower seeds in a large bowl. Crumble goat cheese and add to salad. Add raspberry dressing and balsamic vinegar to the bowl and toss gently to coat. Season with salt and pepper.

From Whole Living. I used peanut oil and light balsamic vinegar. I didn't end up with enough dressing to wilt the kale, so I just stuck it all in the microwave for a couple of minutes. It's also good cold, as it turns out; I had to refrigerate it overnight.

1 teaspoon olive oil
1 bunch kale, stemmed and torn into pieces
1 clove garlic, minced
½ cup water, or as needed
½ cup olive oil
¼ cup red wine vinegar
½ cup orange juice
2 tablespoons soy sauce
1 teaspoon dried minced onion
1 teaspoon ground ginger
salt and ground black pepper to taste
⅓ cup dried cranberries
¼ cup pepitas (pumpkin seeds)
¼ cup slivered almonds

Steps:

  • Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Saute kale and garlic in hot oil until fragrant and kale is bright green, 2 to 3 minutes. Add water to skillet; cook and stir until kale wilts, about 5 minutes more. Drain.

Sea salt

Zest and juice of 1 lemon, preferably organic

1/2 cup dried cranberries

  • To make the vinaigrette: combine olive oil, garlic, vinegar, dijon mustard, lemon juice and salt and pepper in a medium bowl, whisking to combine. Add to salad mixture and massage the vinaigrette into the kale for two minutes. This will help to make the kale less bitter and soak in the flavors. Add in cranberries, tossing again to combine. Cover salad and place salad in refrigerator at least an hour and up to overnight. This helps the flavors soak in and breaks down the kale. I find that the salad is always better the next day! While salad is marinating or before serving, preheat oven to 350 degrees F. Add sliced or chopped almonds to a baking sheet and place in oven for 10-12 minutes until slightly golden and toasted, flipping almonds once halfway through. Once ready to serve, add toasted almonds and parmesan to salad; toss to combine then serve in salad bowls. Garnish with more parm or almonds if desired. Serves 6.

1/2 cup fresh cranberries, rinsed and picked over
1 medium navel orange
2 Tbs. red wine vinegar
1 Tbs. cranberry juice
1 Tbs. honey
4 Tbs. extra-virgin olive oil
2 tsp. finely grated peeled fresh ginger
Kosher salt and freshly ground black pepper
5 oz. mature curly kale leaves, trimmed and coarsely chopped, or baby kale (5 cups)

Steps:

  • Pulse the cranberries in a mini or regular food processor until finely chopped, about fifteen 1-second pulses. Set aside. Using a sharp paring knife, cut off the ends of the orange to expose a circle of flesh. Stand the orange on an end and pare off the peel and pith in strips. Quarter the orange lengthwise; slice each quarter crosswise into 1/4-inch-thick pieces. Whisk together the vinegar, cranberry juice, and honey in a large bowl. Slowly whisk in the olive oil. Whisk in the ginger and chopped cranberries and season to taste with salt and pepper. Toss the kale and the orange pieces in the dressing. Season to taste with salt and pepper. Let sit for 15 minutes to 1 hour before serving
