One 12-ounce bag of fresh cranberries, cleaned
1 3/4 cups sugar
1 Granny Smith apple, peeled, cored, and chopped
1 orange, zest grated and juiced
1 lemon, zest grated and juiced
3/4 cup raisins
3/4 cup chopped walnuts or pecans

Steps:

  • Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat and add the raisins and nuts. Let cool, and serve chilled.

10 oz fresh cranberries
1 teaspoon lemon juice
2 teaspoons lemon zest
½ cup maple syrup

Steps:

  • Preheat the oven to 170°F (80°C). Line a baking sheet with parchment paper.
  • In a food processor, combine the cranberries, lemon juice, lemon zest, and maple syrup. Process until smooth.
  • Spread the puree on the prepared baking sheet into an 8x11-inch (20x28 cm) rectangle about ¹⁄₁₆ inch (1 mm) thick.
  • Bake for 6 hours, or until no longer sticky to the touch. Let cool completely.
  • Roll the fruit sheet in the parchment paper. Trim the ends, then slice crosswise into 1-inch (2 cm) pieces.
  • Enjoy!

2 cups boiling water
1 pkg. (8-serving size) JELL-O Cranberry Flavor Gelatin, or any other red flavor
1-1/2 cups cold ginger ale
2 cups halved green and/or red seedless grapes
1 can (11 oz.) mandarin oranges, drained

Steps:

  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in ginger ale. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  • Add fruit; stir gently until well blended. Spoon into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover dessert in refrigerator.

2 c raw cranberries, washed
3 c apples, peeled and sliced
8 oz crushed pineapple
3/4 c sugar
1/4 c uncooked oatmeal
1/3 c flour
1 c brown sugar
1 c chopped pecans
1/2 c butter, melted

Steps:

  • 1. Place cranberries in a 9 x 13 inch casserole dish.
  • 2. Top with sliced apples and crushed pineapple
  • 3. Mix sugar, oatmeal, flour, brown sugar, and pecans; spread over fruit.
  • 4. Pour melted butter over all.
  • 5. Bake at 350 degrees until brown, about 30 minutes.

1 envelope unflavored gelatin
1/4 cup lemon juice
2 tablespoons orange juice
1-1/2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. 8 cups fresh or frozen cranberries
1-1/2 cups sugar
1/2 cup lemon juice
1/2 cup orange juice

Steps:

  • In a Dutch oven or large saucepan, bring water and cranberries to a boil. Reduce heat; cover and simmer until berries begin to pop, 20 minutes., Strain through a fine strainer, pressing mixture with a spoon; discard berries. Return cranberry juice to the pan. Stir in the sugar, lemon juice and orange juice. Bring to a boil; cook and stir until sugar is dissolved. , Remove from the heat. Cool. Transfer to a pitcher; cover and refrigerate until chilled.
