This dessert is easy to assemble and offers a great way touse extra cranberries. Just serve the tart compote and sweetmascarpone atop store-bought cookies.

1 cup fresh or frozen (not thawed) cranberries
1/3 cup packed light-brown sugar
1/3 cup brandy
3 tablespoons water
1/3 cup mascarpone cheese
8 store-bought Italian shortbread cookies, such as Rigoli

Steps:

  • Bring cranberries, sugar, brandy, and water to a simmerin a small saucepan over medium heat. Cook, stirring occasionally, until cranberries are tender and liquid is syrupy,about 15 minutes. Let cool slightly, about 10 minutes. Cover,and keep warm.
  • Just before serving, spread mascarpone onto cookies. Topeach with compote (reheat compote over low heat if needed).

3 cups orange juice
3 medium Fuji apples, peeled and finely chopped
1 (12 ounce) package fresh cranberries
1 ½ cups white sugar
½ cup brown sugar
¼ teaspoon pumpkin pie spice, or more to taste
2 tablespoons butter, softened

Steps:

  • Combine orange juice, apples, cranberries, white sugar, brown sugar, and pumpkin pie spice in a saucepan over medium-high heat. Bring to a boil, reduce heat, and simmer until apples are tender and sauce has thickened slightly, 20 to 25 minutes.
  • Transfer sauce to a dish; stir in softened butter and refrigerate for 1 to 2 hours. Sauce will continue to thicken.

2 medium tart apples, peeled and sliced
1 package (12 ounces) fresh or frozen cranberries
1-1/4 cups sugar
1 cup golden raisins
1/4 cup orange juice
1 teaspoon grated orange zest
1 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1 can (15-1/4 ounces) sliced peaches, drained
1 can (15 ounces) apricot halves, drained
1 cup chopped pecans

Steps:

  • In a saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until cranberries pop and apples are tender. Add the peaches and apricots; heat through. Stir in pecans; serve warm or chilled. Store in the refrigerator.

1 medium onion, chopped (1/2 cup)
2 cups fresh or frozen cranberries
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/2 cup water
1/4 teaspoon salt
1 teaspoon red wine vinegar
8 oz or more desired cheese (Brie, cream cheese, goat cheese, etc.)

Steps:

  • In 1-quart saucepan, heat oil over medium heat. Add onion; cook about 2 minutes or until soft. Add cranberries, brown sugar, cinnamon and water. Cook 8 to 10 minutes or until cranberries have started to pop. Stir in salt and vinegar; cool slightly.
  • Place cheese on desired serving platter. Pour compote over cheese, and serve with chips.

1/2 pound fresh cranberries
1 tablespoon grated orange zest
1 teaspoon grated lemon zest
1/4 cup fresh orange juice
3 tablespoons fresh lemon juice
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 cups water
3 tablespoons cornstarch

Steps:

  • Put the cranberries, orange and lemon zest, orange and lemon juice, sugar, vanilla, and 1 1/2 cups of the water in a medium-size nonreactive saucepan over medium-high heat. Bring to a boil and cook for 8 minutes.
  • Dissolve the cornstarch in the remaining 1/2 cup of water and add to the pan. Reduce the heat to medium, then stir constantly until the mixture thickens, about 2 minutes.
  • Remove from the heat and cool completely.
