CRANBERRY AND ORANGE WILD RICE



Cranberry and Orange Wild Rice image

Number Of Ingredients 7

1/2 cup dried cranberries
1 1/4 cups water
1 cup fresh orange juice
1 tablespoon unsalted butter
1 (8-ounce) package long-grain and wild rice (recommended: Uncle Ben's)
1 orange, zested
1/2 cup sliced almonds

Steps:

  • Put cranberries in a medium bowl and pour in enough hot tap water to cover. Set aside while you make the rice.
  • In a medium pot over medium-high heat, add the water, orange juice, and butter, and bring to a boil. Stir in the rice, and the included contents of the seasoning packet, and return to a boil. Turn the heat to low, cover, and cook until the rice is tender, about 20 to 25 minutes. Drain the cranberries and add them to the rice along with the orange zest, and almonds. Gently stir them in, fluffing the rice. Transfer the rice to a serving bowl, cover and keep warm until ready to serve.

2-1/2 cups chicken or vegetable broth
1/2 cup uncooked wild rice
1/2 cup uncooked brown rice
3 medium onions, cut into wedges
2 teaspoons brown sugar
3 tablespoons butter
1 cup dried cranberries
1/2 teaspoon grated orange zest

Steps:

  • In a large saucepan, bring broth to a boil. Add the wild rice. Reduce heat; cover and simmer for 10 minutes. Add the brown rice; cover and simmer for 45-50 minutes or until rice is tender and liquid is absorbed., In a large skillet over medium heat, cook the onions and brown sugar in butter until golden brown, stirring frequently. Add the cranberries, orange zest and rice; heat through.

3 cans (14-1/2 ounces each) beef broth
1/4 cup butter, cubed
1 large onion, chopped
1 cup uncooked long grain brown rice
1/2 cup bulgur
1/2 cup slivered almonds
1/2 cup dried cranberries
3/4 cup minced fresh parsley, divided
1/4 cup chopped green onions
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. In a large saucepan, bring broth to a simmer; reduce heat to low and keep hot. In a large skillet, heat butter over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add rice, bulgur and almonds; cook and stir until rice is lightly browned and has a nutty aroma, 2-3 minutes., Transfer to a greased 13x9-in. baking dish. Stir in cranberries, 1/2 cup parsley, green onions, salt and pepper. Stir in hot broth. Bake, covered, 45 minutes. Uncover and continue to cook until liquid is absorbed and rice is tender, 30-35 minutes longer. Remove from oven and fluff with a fork. Cover; let stand 5-10 minutes. Sprinkle with remaining parsley before serving.

1/2 cup pecans, chopped
2 tablespoons honey
1 cup rice, cooked according to the package
1/2 cup quinoa, cooked according to the package
1/2 cup dried cranberries
3 tablespoons chopped fresh cilantro
Salt and black pepper, to taste

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Place pecans on baking sheet and drizzle with honey, tossing to evenly coat. Bake until toasted and fragrant, about 10 minutes, mixing half way through. Set aside to cool and chop nuts. Using a large bowl, combine pecans, rice, quinoa, cranberries and cilantro.
