2 (29 ounce) cans Bruce's Yams Cut Sweet Potatoes in Syrup, drained
1 ½ cups slightly crushed cornflakes
3 tablespoons melted butter
2 tablespoons brown sugar
½ teaspoon pumpkin pie spice

Steps:

  • Heat oven to 350 degrees F.
  • Spread cranberry sauce into the bottom of a 6-cup casserole dish.
  • Spoon sweet potato chunks over the top.
  • In a small bowl, stir together the cornflake crumbs, melted butter, brown sugar, and pumpkin spice. Scatter evenly over the top of the potatoes and bake for 30 minutes, or until golden brown.

4 large sweet potatoes
2 c fresh cranberries
1/2 c packed brown sugar
2 Tbsp butter, melted
1/2 c fresh orange juice
TOPPING:
1/2 c chopped walnuts
1/4 c packed brown sugar
1/2 tsp cinnamon
3 Tbsp cold butter

Steps:

  • 1. Boil potatoes with water to cover, until tender, about 50 minutes. Drain and cool. Peel and cut into 1/4 inch slices. Place 1/2 of the potato slices in a greased 2 1/2 quart baking dish. Top with 1/2 of the cranberries, brown sugar, and butter. Repeat layers. Pour orange juice over the top.
  • 2. Cover and bake 30 minutes at 350. In small bowl combine nuts, brown sugar and cinnamon; cut cold butter in with pastry blender. Sprinkle over sweet potato mixture, and bake, uncovered for 10 minutes, or until topping is golden brown.

1/2 cup dried cranberries
1/2 cup boiling water
1 package (8-1/2 ounces) cornbread/muffin mix
1 teaspoon onion powder
1/4 teaspoon rubbed sage
1 large egg
1 can (14-3/4 ounces) cream-style corn
2 tablespoons butter, melted
1/4 cup chopped pecans
1/2 teaspoon grated orange zest

Steps:

  • Place cranberries in a small bowl; cover with boiling water. Let stand for 5 minutes; drain and set aside., In a small bowl, combine the muffin mix, onion powder and sage. In another bowl, whisk the egg, corn and butter; stir into dry ingredients just until moistened. Fold in the pecans, orange zest and cranberries., Transfer to a greased 8-in. square baking dish. Bake uncovered at 400° for 20-25 minutes or until set. Freeze option: Cool baked cornbread in pan; cover and freeze. To use, partially thaw in refrigerator overnight. LAYERED SWEET POTATO AND CRANBERRY CASSEROLE

I tried this casserole for Thanksgiving and was very pleased with it. It is lighter than the traditional sweet potato casserole and fresher tasting, too. It is an easy casserole to put together but it does take a bit of time to layer the sweet potato slices. However, it is worth it because the end result is very attractive. Usually I follow a recipe exactly the first time I am making it. But in this case, I have to admit to increasing the amounts of brown sugar and cranberries used in the layering. I upped the brown sugar to about 2/3 cup and the cranberries to 1-1/2 cups easily -- maybe a little more. Didn't hurt the casserole a bit! The time for baking or boiling the potatoes is not figured into the timing because it can be done a day or two ahead of time.

4 large sweet potatoes (about 3-1/2 pounds)
1/2 cup firmly packed brown sugar

  • Bake the potatoes in a 350 degree F. oven for about an hour or until tender. I actually baked 5 potatoes and found I needed the extra one for the casserole. You may also boil the potatoes, but I find baking them gives a sweeter taste; also, they peel easier. Drain potatoes if they were boiled. In either case let the potatoes cool enough to handle and peel the potatoes. You can do this step a day or two ahead of time. Place potatoes in a covered container and refrigerate.
  • Preheat the oven to 350 degrees F. Cut the potatoes in 1/4-inch slices. Grease a 9x13-inch baking dish and layer the slices in the dish, overlapping them slightly. You'll have 3 or 4 vertical rows depending on how "fat" your potatoes are.
  • Sprinkle the potatoes with half the brown sugar; dot with 1-1/2 teaspoons butter. Top with 1/2 of the cranberries. Repeat layers, using remaining brown sugar and cranberries. Pour orange juice over the top of the casserole.
  • Cover casserole and bake in preheated oven for 45 minutes.
  • Combine the walnuts, 2 tablespoons of melted butter, 1 tablespoon brown sugar and cinnamon; stir well. Sprinkle this mixture over the top of the casserole and return to the oven. Bake, uncovered, an additional 10 minutes.

1 1/2 c quick oatmeal (uncooked)

1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup fresh cranberries
1 cup walnut pieces or 1 cup pecan pieces (optional)
1/2 cup oatmeal (not instant)
1/4 cup flour
1/2 cup packed brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

1/2 cup marshmallows

Steps:

  • Preheat over to 350 degrees.
  • Spray a 13x9 inch pan with cooking spray.
  • Cut yams into one inch cubes.
  • Place in baking dish.
  • Add in the cranberries and nuts.
  • Sprinkle with cinnamon and nutmeg.
  • Prepare Topping:.
  • Mix oatmeal, flour, packed brown sugar, cinnamon and nutmeg together in a separate bowl.
  • Cut in the butter.
  • Consistancy should be lumpy.
  • Sprinkle over the top of the Yam mixture.
  • Bake at 350 degrees for 30 minutes.
  • The cranberries should have burst.
  • Sprinkle marshmallows on top and bake five more minutes or until marshmallows are browned.

3 1/2 lbs sweet potatoes or 3 1/2 lbs yams, peeled and cut into 3/4-inch cubes
2 large onions, cut into 3/4-inch chunks
lite olive oil or vegetable oil
2 cups fresh cranberries (do not thaw if using frozen cranberries) or 2 cups frozen cranberries (do not thaw if using frozen cranberries)
2/3 cup golden brown sugar
2 tablespoons melted butter or 2 tablespoons margarine
1 large orange, juice and rind of
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400°F.
  • Mix Sweet potatoes and onions and put mixed veggies in two sprayed shallow oven proof dishes (about 8x12 each).
  • Spray the veggies lightly with oil and bake until sweet potatoes are just tender (a bit under done) About 20-25 minutes.
  • Lower heat on oven to 350°F.
  • Combine the remaining ingredients, mix well and pour equally into the two casseroles.
  • Mix well to coat all the pieces of vegetable.
  • Bake uncovered about 30-40 min or until tender and getting sticky, Stir once during cooking.
  • You may freeze the casseroles, tightly covered, before the final baking.
  • Then on the day of your dinner defrost and follow through the final baking.
  • Or you may hold it in your refrigerator, tightly covered, for a day and then bake on the day of your dinner.

1 1/3 c oatmeal

This dish can easily be prepared in advance and chilled in the refrigerator until ready to bake and serve. I came across a recipe from Cooking Light which I adjusted to include more common ingredients that I had in my pantry. It's a great dish for using up all those leftover dinner rolls and cranberry sauce (or cranberry relish) from your holiday dinner. The great thing about this dish is that it's rather verastile. It's not so sweet, so it can be served as a dinner side dish. Or, it can easily be served as a tart dessert because it is similiar in appearance and taste as a fruit cobbler. NOTE: For Step #6...The longer the dish sits, the thicker the dish will turn out after baking. Setting it aside for the minimum of 20 minutes will result in a cobbler-like consistency. But if you prepare this dish in advance (several hours to a day before baking) and letting it chill in the refrigerator will result in a quiche-like consistency.

3 medium apples, diced
1/4 teaspoon ground cinnamon

6 crescent rolls (or any day-old leftover dinner rolls)
2 cups whole berry cranberry sauce
1 1/4 cups apple juice or 1 1/4 cups apple cider
1 1/4 cups milk (I use 1%)
1/2 teaspoon grated lemon peel
1/4 teaspoon ground nutmeg
6 large eggs, beaten
1/4 cup chopped walnuts or 1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°. LIghtly coat the bottom of a 9x13-inch baking dish with a non-stick cooking spray.
  • Melt butter in a large skillet. Add the diced apples, cinnamon, cloves and brown sugar. Cook over medium heat for 10 minutes or until the apples are tender. Remove from heat and set aside.
  • Slice crescent rolls in half lengthwise. Arrange crescent roll halves in the bottom of the baking dish, with the cut side up (crust side down).
  • Spread the cranberry sauce evenly over the tops of the dinner rolls.
  • Spread the apple mixture evenly over the cranberry layer.
  • Add the apple cider, milk, lemon peel, nutmeg, and beaten eggs to a bowl, and blend well with a whisk. Pour the milky mixture over the top of the cranberry and apple layers. Sprinkle the nuts over the top. Let stand for at least 20 minutes, or cover the dish and place it in the refrigerator for several hours), to allow the milky mixture to soak into the rolls. JUST A QUICK NOTE ABOUT THIS STEP -- The longer the dish sits, the thicker the dish will be after baking. Setting it aside for at least 20 minutes will result in a cobbler-like consistency. But if you prepare this dish in advance (several hours to even a day ahead of time) and letting it chill in the refrigerator (covered) will result in a thicker, quiche-like consistency.
  • Bake at 350° for 50-55 minutes. Remove the baking dish from the oven, and let the dish stand for about 10 minutes before serving.

1/2 cup heavy cream
1 tablespoon vanilla extract

  • In a medium saucepan, combine cranberries, water and sugar. Layer apples on top of cranberries and sprinkle with cinnamon. Cover and cook over medium-low for 15 minutes. Uncover and continue cooking for 5 minutes to allow sauce to thicken. Stir cranberry-apple filling and transfer to a 9″x13″ dish. Arrange bread slices in two layers over the filling. In a bowl, combine eggs, milk, cream and vanilla. Slowly pour over bread so that it doesn't splash or spill. Sprinkle generously with cinnamon. Cover and refrigerate overnight. When ready to serve, bake at 350 degrees for 50 minutes. The top should be nice and crispy, while the inside will have more of a bread pudding consistency. 3/4 c sugar
1/4 c uncooked oatmeal
1/3 c flour

2 lbs medium sweet potatoes
1 (16 ounce) can whole cranberry sauce
1 teaspoon ground cinnamon
2/3 cup flour
2/3 cup packed lilght brown sugar
2/3 cup quick-cooking rolled oats
6 tablespoons butter
1 cup miniature marshmallow

Steps:

  • Place sweet potatoes in large pot, add water to cover sweet potatoes. Bring to boiling. Cover and cook 20 to 25 minutes or until tender, let cool.
  • Preheat oven to 375 degrees. Pell and mash sweet potatoes. Stir in cranberry sauce and cinnamon. Spoon into lightly greased 2-quart casserole.
  • Combine flour, sugar, and oats, cut in butter with pastry blender until mixture resembles coarse crumbs. Spoon over sweet potato mixture. Bake 20 minutes. Top with marshmallows and bake 5 minutes or until golden brown.

I peeled and cut my potatoes and then baked the whole thing. It took longer to cook, but oh, so worth the wait. It was scrumptious! Very good as an addition to a Thanksgiving or Christmas meal, very hearty and sweet and tangy, all at the same time. I loved the apple cider, probably will never use the orange juice it calls for....

4 large sweet potatoes
1/2 c light brown sugar, packed
2 Tbsp butter
1 c fresh cranberries
1/2 c fresh orange juice (i used apple cider)
for walnut topping:
1/2 c chopped walnuts
2 Tbsp melted butter
1 Tbsp brown sugar
1/2 tsp cinnamon

Steps:

  • 1. Cook sweet potatoes, drain and cool slightly. Peel and cut into 1/4 inch slices. (I peeled and cut first. Took a longer cooking time. Good for a time bake oven. Picture shown is prior to cooking.) Arrange half sliced potatoes in greased 1 1/2 quart casserole and sprinkle with 1/4 cup brown sugar.
  • 2. Dot with butter and sprinkle 1/2 cup cranberries over top. Cover with remaining sweet potatoes, brown sugar and cranberries. Pour juice over all.
  • 3. Cover and bake at 350 degrees for 45 minutes. Uncover, distribute walnut topping over top and bake 10 minutes longer.

This came from a Southern Living Cookbook. It's a holiday tradition at our home. The recipe is requested everytime it is served. I hope you enjoy it as much as we do. It is a cinch to put together, but tastes so heavenly.

1 (40 ounce) can yams, drained
3 cups fresh cranberries, whole
1 1/2 cups white sugar
1 small orange, sliced
1/2 cup pecan halves
1/4 cup orange juice
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon mace

Steps:

  • Combine whole cranberries, white sugar, orange slices, pecan halves, orange juice, cinnamon, nutmeg and mace in 2 quart casserole. Bake uncovered at 375* degrees for 30 minutes.
  • Stir drained yams into cranberry mixture. Return to oven and bake until heated through (about 15 minutes). Enjoy!
