Nov. 2013 note - the bars bought from Starbucks have gone down-hill this year with icing that is flavorless and no real ginger flavor to the bars. Skip Starbucks and make your own! 1 cup butter (2 sticks, very soft)
1 cup brown sugar (some cooks reduce this to 2/3 cup)
1/3 cup granulated sugar
3 large eggs
2 teaspoons orange extract or 2 teaspoons vanilla extract
2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon ground ginger
3/4 cup craisins (dried cranberries)
3/4 cup white chocolate chips
3 ounces cream cheese, softened
2 tablespoons butter, softened
3 cups confectioners' sugar
1 teaspoon orange extract (or vanilla)
1/3 cup craisins, chopped
1 -2 tablespoon grated orange rind
1/3 cup white chocolate chips
1/2 teaspoon canola oil

Steps:

  • Preheat the oven to 350 degrees (325 for a glass or dark pan). Prepare a 10x15 by lining it with parchment paper or use a non-stick spray.
  • BARS: With an electric mixer, beat together softened butter and sugars 3-5 minutes until light; gently blend in eggs and orange extract (don't overbeat eggs). Add the flour, baking powder, and ginger and beat briefly. Add the cranberries and chips, stirring just until incorporated.
  • Spread thick batter in prepared 10x15 pan. Bake 350 for 20-24 minutes until light brown AT EDGES and a skewer tests clean. Don't overbake or your bars will be dry. Let it cool completely. NOTE: If you use a 9x13 pan, the bars will be thicker and will take 26-28 minutes.
  • FROSTING: Blend cream cheese and butter until fluffy. Add orange extract and confectioners sugar and beat until frosting is fluffy and spreadable (adding 1 t. milk if needed). Spread evenly over COOLED bars.
  • GARNISH: Use a zester to remove rind from an orange; sprinkle zest over frosted bars. Chop 1/3 cup Craisins coarsely; sprinkle over frosted bars.
  • DRIZZLE: Mix white chocolate and oil in a glass measuring cup. Microwave 1 minute; stirring every 15 seconds until melted. Use a fork or whisk to drizzle the white chocolate diagonally across the bars.
  • Allow one hour for the white chocolate to set before cutting. **To make signature Starbuck triangles, cut into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally to create triangles.

This is a simple version of Recipe #203229, #203229, which is my signature recipe. This easier version makes a 9x13 pan (the original recipe is for a 10x15 pan) and uses a simpler list of ingredients. The result is a chewy iced "blondie" dotted with orange-flavored Craisins and white chocolate.

1/2 cup butter, melted, then cooled a bit
1 1/4 cups brown sugar, packed
2 large eggs
1 teaspoon vanilla
1 3/4 cups flour
1/2 teaspoon baking powder

1/2 cup white chocolate chips
1/2 cup orange-flavored craisins
1 (12 ounce) can ready-made cream cheese frosting
1/4 cup orange-flavored craisins
1/4 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees. Prepare a 9x13 pan by lining it with parchment paper for easy removal (or spray with non-stick spray).
  • Melt butter; cool slightly. In a mixer bowl, blend butter and brown sugar until smooth. Add all other ingredients except chips and Craisins. Once the mixture is just about blended, add 1/2 cup chips and 1/2 cup Craisins.
  • Spread the thick batter into a 9x13 pan. Bake 350 degrees for 23-25 minutes or until a toothpick tests clean. Do not overbake.
  • Allow to cool thoroughly.
  • When cool, frost with ready-made Cream Cheese frosting. Chop remaining 1/4 cup Craisins into small bits and scatter the bits over the top of the frosting.
  • Melt remaining 1/4 cup white chocolate chips in the microwave (hint: add 1/2 t. canola oil to create a thin drizzle); use a fork to drizzle the melted chocolate on top. Cut into 18 squares.

Make your own Starbucks Cranberry Bliss bars at home! This recipe is arguably an improvement over the original, the cake is less dense than at Starbucks, which most people have enjoyed. The difficult ingredient in this recipe is candied ginger - most of us not only don't have it, but probably don't even know what it is. Crystallized Ginger is the same thing, and I found it at HEB with the dried fruit and store brand trail mixes. It was on a rack located in/near the produce section. It was cheap as well, just a dollar or two.

  • Preheat oven to 350°F. Lightly spray a 9 x 13 inch non-stick baking pan with cooking spray. In a large bowl, combine the flour, baking soda, salt and cinnamon and stir to blend. In another bowl, whisk the sugars with the butter, egg whites, applesauce and vanilla until light and fluffy. Whisk the dry ingredients into the wet ingredients in two additions until the batter is very well blended. If the batter looks more "crumbly" than smooth, add just a drop of water at a time (ONLY if needed) until it smooths out. Fold in white chocolate chips and 1/3 cup cranberries. Spread batter onto the baking pan using the back of a measuring cup to smooth evenly. Bake 10 - 14 minutes, until the edges are light brown and a toothpick inserted comes out clean. 3/4 c butter,softened
1 1/4 c packed light brown sugar
3 large eggs
2 Tbsp minced crystallized ginger
2 tsp vanilla extract

1/2 c vanilla or white chocolate chips
FROSTING:
4 oz cream cheese, softened
3 c powdered sugar
4 tsp lemon juice

DRIZZLE: FOR GARNISH
1/2 c powdered sugar
1 Tbsp milk
2 tsp olive oil or shortening

  • 1. Preheat oven to 350^.Butter a 9x13-inch baking pan. Set aside.
  • 2. Bars: Beat together the butter and brown sugar with electric mixer until smooth. Add the eggs one at a time, then add the ginger,vanilla and salt. and beat well.
  • 3. Gradually mix in the flour and baking powder until smooth. Mix the chopped cranberries and chocolate chips into the batter by hand. Pour batter into the prepared pan. Use a spatula to spread evenly across the pan. Bake 25-30 minutes, until the bars are lightly browned on top. Cool on wire rack.
  • 4. Frosting: Combine ingredient,except cranberries, in a mixer bowl and beat until smooth. Spread on bars when completely cooled. Sprinkle the cranberries over top of frosting. --- Drizzle Garnish: Whisk together ingredients and drizzle over cranberries in a back and forth motion using a squirt bottle or plastic storage bag, corner cut off. --- Cover bars and chill for 2 hours. Then cut bars length-wise down the center -then cut then across 4 times making 8 bars and cut those bars in half diagonally making 16 triangular bars.

1 1/2 cups quick-cooking oats
3/4 cup light brown sugar, firmly packed (plus 1 tbsp., divided)
1 cup butter, softened

1 (14 ounce) can sweetened condensed milk
1/4 cup fresh lemon juice
1 teaspoon vanilla
2 tablespoons cornstarch
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Preheat oven to 350 degrees F. Grease a 13 x 9 inch baking pan.
  • Combine flour, oats, 3/4 cup brown sugar and butter. Mix until crumbly. Reserve 1 1/2 cups of crumb mixture and set aside. Place remaining crumbs in baking dish and spread out to form a crust. Bake for 15 minutes.

I love Cranberry Bliss Bars and Seven Layer Bars so I marryed two favorite bars into one. A buttery graham cracker crust, topped with white chocolate chips, chocolate chips, walnuts, dried cranberries, coconut, and sweetened condensed milk. It's a fast, easy, one-bowl, no-mixer recipe that's as easy as sprinkling and layering ingredients in a pan. There's a slightly crunchy graham cracker crust, extra crunch from the walnuts, with chewiness from the cranberries and coconut. If you need a holiday dessert that's virtually effortless but that tastes like a million bucks, this is the one.

1/4 cup butter, melted (I use unsalted, but saltedtamessome of the sweetness)
scant 3/4 cup graham cracker crumbs
3/4 cup white chocolate chips
1/4 cup semi-sweet chocolate chips
1/4 cup chopped walnuts
1 cup dried cranberries (I use orange-flavored dried cranberries)
1 cup sweetened shredded coconut flakes, measured loosely and not packed
about two-thirds can (14-ounce) sweetened condensed milk (eyeball it)

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  • To a large, microwave-safe bowl addthe butter and heat on high power to melt, about 1 minute.
  • Add the graham crackers crumbs and toss lightly with a fork to coat crumbs evenly.
  • Turn mixture out into prepared pan, forming an even, smooth, flat crust layer by tapping crumbs into place with a spatula or your fingertips. The amount of crust is skimpy and barely covers the pan, but it's okay.
  • Evenly sprinkle with the white chocolate chips, chocolatechips, walnuts, cranberries, and coconut (in that order).
  • Evenly drizzle sweetened condensed milk over the top.
  • Bake for about 20minutes, or until lightly golden brown around edges and the center is mostly set. Keep an extremely close eye on bars in the final minutes of baking because coconut can go from raw-looking to burnt in one minute.I've baked the bars in different ovens and have baked for as long as 27 minutes and as short as 20 minutes; watch your bars and not the clock.
  • Place pan on a wire rack and allow bars to cool in pan for at least 2 hours, or overnight, before slicing and serving.Bars firm up as they cool. Bars will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.

These Makeover Cranberry Bliss Bars are SO good, with more than half the calories and fat of the ones you buy at Starbucks and so much cheaper to make yourself! A blondie cookie bar with chunks of white chocolate chips and dried cranberries, topped with sweet cream cheese icing, tart dried cranberries and white chocolate drizzle - perfect for the holidays!

Number Of Ingredients 17

2 cups all purpose flour (Gold Medal)
1/2 tsp baking soda
1/4 tsp salt
1/8 teaspoon ground cinnamon
2/3 cup granulated sugar
2/3 cup brown sugar (unpacked)
1/4 cup melted unsalted butter
2 large egg whites
1/4 cup unsweetened apple sauce
2 tsp vanilla extract
2/3 cup white chocolate chips or chopped white chocolate
1/3 cup dried cranberries (chopped)
8 oz 1/3 less fat cream cheese (softened)
1/2 cup powdered sugar
2 ounces white baking chocolate (melted*)
1/3 cup dried cranberries (chopped)
1/2 tsp vanilla extract

Steps:

  • Preheat oven to 350°F. Lightly spray a 9 x 13 inch non-stick baking pan with cooking spray.
  • In a large bowl, combine the flour, baking soda, salt and cinnamon and stir to blend.
  • In another bowl, whisk the sugars with the butter, egg whites, applesauce and vanilla until light and fluffy.
  • Whisk the dry ingredients into the wet ingredients in two additions until the batter is very well blended. If the batter looks more "crumbly" than smooth, add just a drop of water at a time (ONLY if needed) until it smooths out.
  • Fold in white chocolate chips and 1/3 cup cranberries. Spread batter onto the baking pan using the back of a measuring cup to smooth evenly.
  • Bake 10 - 14 minutes, until the edges are light brown and a toothpick inserted comes out clean. Don't over-bake or your bars will be dry. Let it cool completely on wire rack.
  • Meanwhile, prepare the frosting; in a large bowl, use an electric mixer to beat the cream cheese, powdered sugar and vanilla until well-blended. Frost bars and sprinkle with remaining cranberries. Drizzle with the melted white chocolate.
  • *To melt the chocolate, place in a microwave safe cup and heat 15 seconds; stir. Another 15 seconds; stir until the chocolate is melted.
  • When the chocolate sets, cut into 15 large squares (5 cuts by 3 cuts with the knife). Then cut each square in half diagonally to create triangles. Store in the refrigerator until ready to serve.
