This is Day 4: Breakfast, on the 21 day Wonder Diet. This recipe makes 6 servings. If you don't feel like making any of the breakfasts on this diet, you are allowed to have this muesli instead, but remember it is ONLY 1/3 cup per serving! You can make larger batches of this, and store it in an airtight container. If you don't like cranberries, you can use sultanas or raisins instead. This breakfast is to be followed by a mid-morning snack of 1 carrot, cut into sticks.

1 cup rolled oats
3/4 cup all-bran cereal
1/4 cup dried cranberries
2/3 cup skim milk
1/2 cup fresh blueberries

Steps:

  • Combine oats, All-Bran, and cranberries in a small bowl to make muesli mixture.
  • Place 1/3 c muesli in each bowl; top with milk and berries.
  • Store remaining muesli mixture in an airtight container for Day 12 and Day 20 (the muesli is used in recipes on those days.).

This is Day 17: Breakfast, on the 21 Day Wonder Diet. You can use sultanas instead of cranberries, if you prefer. This breakfast is to be followed by a mid-morning snack of 2 cups of plain popcorn.

3/4 cup rolled oats
1/3 cup unsweetened apple juice
1 small green apple, grated coarsely
1/4 cup dried cranberries

Steps:

  • Combine yogurt, oats and juice in a small bowl; cover, refrigerate 3 hours or overnight.
  • Just before serving, stir in remaining ingredients.

170 g craisins
1/2 cup Cointreau liqueur
2 large eggs
4 egg whites
1/2 cup canola oil
1 cup sugar
2 1/2 cups self raising flour
5 large apples (peeled, cored & cubed into approx 1cm cubes)

Steps:

  • Pre heat oven to 180c.
  • Line a 13x9x2" baking tin with silicone paper.
  • In a small bowl combine craisins & cointreau and put to one side.
  • In a large bowl combine eggs, egg whites, canola oil & sugar until well combined.
  • Using a large metal spoon, fold in flour, apple, cointreau & craisins until JUST combined. The mixture may look too thick but the apples will release a lot of moisture when cooking. If you feel it needs thinning add a splash more cointreau.
  • Spoon into lined baking tin & spread evenly.
  • Bake for 40 minutes until tests done with a skewer.
  • Wonderful served warm with a cold glass of milk & also freezes well.

1 cup granny smith apple, washed, pared and chopped
1 cup frozen fresh cranberries, chopped if wished (I leave mine whole)
1 teaspoon organic grated orange rind
1/2 cup minus 2 tbs dark brown sugar
2 tablespoons butter or 2 tablespoons a little oil
plain yogurt (to serve)

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients except yogurt and through into a small baking dish.
  • Bake 25 minutes.
  • Serve warm or room temperature with plain yogurt on top.

Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

1 (12 ounce) package fresh cranberries
2 apples, or more to taste, cut into 1-inch pieces
½ cup raisins
¼ cup walnuts
1 ¼ cups white sugar, divided
ground cinnamon
1 cup all-purpose flour

¼ teaspoon salt
1 egg
¼ cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch glass baking pan.

1/4 teaspoon mixed spice
1 tablespoon demerara sugar

  • Combine muesli, oil, yogurt, egg, flour, rind and spice in medium bowl. Mix with fork.
