2 cups California red grapes, picked from stem and rinsed
1 each 12 oz. package Cranberries, fresh or frozen
1 each orange juiced and zested
1/2 cup sugar

Steps:

  • Place all ingredients in heavy saucepan and bring to a boil over high heat. Reduce heat to medium and cook stirring occasionally for 10 minutes until thick and shiny.
  • Let cool thoroughly, then store in airtight container in refrigerator for up to one week.
  • This is great served alongside roast pork, turkey or ham.
  • Shelf Life: 1 week, refrigerated

1 package (12 ounces) cranberries, fresh or frozen (no need to thaw)
3 cups seedless red grapes
1 cup sugar
1/8 teaspoon salt

Steps:

  • In a large saucepan over medium-high, bring cranberries, grapes, sugar, and 1/2 cup water to a boil. Reduce heat, and simmer until most of the cranberries have popped and grapes are falling apart, 10 to 15 minutes.
  • Remove from heat; add salt and stir to combine. Let cool to room temperature (compote will thicken as it cools). Serve at room temperature.

3 cups seedless red grapes
2 cups apple cider
3 cups sweetened dried cranberries
1 tablespoon fresh lemon juice
1 teaspoon grated orange peel
1 large navel orange, peeled, chopped (3/4 cup)

Steps:

  • In food processor, place grapes. Cover; process, with on-and-off pulses, until grapes are coarsely chopped, scraping bowl occasionally.
  • In 3-quart saucepan, heat apple cider to boiling over medium-high heat. Boil about 12 minutes or until reduced to 1 cup. Add cranberries and half of the grapes. Cook over medium-high heat 8 minutes. Remove from heat; place cranberry mixture in medium bowl. Stir in lemon juice, orange peel, chopped orange and remaining grapes. Cover and refrigerate at least 1 hour or until well chilled. Serve with a slotted spoon, if desired.

1 tablespoon unsalted butter
1 cup red seedless grapes
2 bay leaves
1 pound cranberries, thawed if frozen
1 3/4 cups sugar
1/2 cup grape juice
Kosher salt

Steps:

  • Melt the butter in a medium saucepan over medium-high heat. Add the grapes and bay leaves and cook, stirring occasionally, until the grapes begin to split, 3 to 5 minutes. Add the cranberries and stir to coat. Add the sugar, grape juice, 1/2 cup water and a pinch of salt.
  • Bring the mixture to a boil, then reduce the heat to a simmer and cook, stirring occasionally, until the cranberries burst and the sauce thickens, about 20 minutes. (If the berries aren't bursting after 15 minutes, gently smash with a spatula.)
  • Discard the bay leaves. Transfer the cranberry sauce to a blender and puree until smooth. Strain through a fine-mesh sieve into a 2-quart dish. Press a piece of plastic wrap directly onto the surface and refrigerate until set, at least 3 hours and up to 1 week.

2 tablespoons canola oil
2 tablespoons finely grated fresh ginger
1 small red onion, finely diced
1 cup fresh Texas Red grapefruit juice
1 cup fresh orange juice
1/2 cup pure cane sugar, plus more if needed
1 pound fresh or frozen cranberries
2 teaspoons finely grated orange zest
2 Texas Red grapefruits, segmented
Salt and freshly ground black pepper
Salt and freshly ground black pepper
Chopped fresh parsley

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the ginger and onions and cook until soft, about 5 minutes. Add the grapefruit and orange juices and sugar and bring to a boil. Cook until the sugar has melted and the mixture reduces slightly.
  • Stir in half of the cranberries and cook, stirring occasionally, until the berries pop and break down and the mixture begins to thicken. Add the remaining cranberries and cook just until the berries pop, about 5 minutes more. Remove from the heat, stir in the orange zest and grapefruit segments and season lightly with salt and pepper. Transfer to a bowl, stir in the parsley and serve at room temperature.

SPICY RED PEPPER CRANBERRY RELISH



Spicy Red Pepper Cranberry Relish image

A kicky condiment, usually made with cranberries, can offset the neutral (read: bland) yet rich nature of the Thanksgiving meal. This hot red-pepper cranberry relish with jalapeños and cayenne fits the bill. You can keep the seasoning somewhat tame, or ramp up the heat to taste. It will keep for 2 weeks or so; make it in advance, as soon as cranberries are available, and have it on hand in the fridge through the holiday season.

2 large jalapeños, preferably red, seeded and finely diced
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon grated ginger
12 ounces cranberries

Steps:

  • Put sugar, jalapeños, lemon juice, salt and cayenne in a heavy-bottomed saucepan over medium-high heat. Add 1/2 cup water, then stir with a wooden spoon to dissolve sugar, and simmer 2 minutes.
  • Add ginger and cranberries, and bring to a boil. Reduce heat to medium and let mixture cook, stirring occasionally, until cranberries have softened and no liquid remains in pan, about 15 minutes.
  • Let cool and taste. Add more cayenne or jalapeños if desired. It can be stored in the refrigerator for up to 2 weeks.

1 cup dry red wine
1 (12 ounce) package fresh cranberries, rinsed and sorted
1 cinnamon stick
2 tablespoons orange zest, cut into slivers

Steps:

  • Combine sugar with red wine in a medium saucepan, and bring to a boil over medium heat. Add the cranberries, cinnamon stick and orange peel. Bring the mixture back to a boil, reduce heat, and simmer, stirring often, for 10 to 15 minutes, until most of the cranberries have burst.
  • Remove from heat, allow relish to cool slightly, and spoon into sterilized glass jelly jars with tight-fitting lids. Store in refrigerator.

1 package whole fresh cranberries
1 cup sugar
1 cup orange juice (any type)
2 -3 cups grapes (red or white)

Steps:

  • Place all ingredients in a sauce pot. Cook on high heat until mixture starts to boil. Stirring occasionally until cranberries pop. Lower heat to medium and using the back of a large wooden spoon, squeeze the grapes against the side of pot or use a potato masher to pop grapes,leaving some whole. The pectin from the grapes and sugar will thicken the sauce as well as the heat the reducing the mixture.

2 apples - peeled, cored and chopped
2 celery, chopped
3 cups white sugar

  • Grate peel of orange; reserve. Peel oranges and discard white membranes. Separate oranges into sections and place half in a food processor or blender. To the food processor add half of the cranberries, apples and celery. Process until coarsely chopped. Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery. Stir in sugar and reserved orange peel. Cover and refrigerate overnight.
