CRANBERRY PARFAIT
My grandmother used to make this, but she used saltines and straight cranberry. I've adapted it to fit our family's taste.

Steps:
- Chill a large metal bowl in the refrigerator or freezer, about 15 minutes.
- Mix whole berry cranberry sauce and jellied cranberry sauce together in a bowl.
- Place graham crackers in a large resealable plastic bag and crush with a rolling pin into crumbs.
- Pour heavy cream into the chilled bowl and whip with an electric mixer on high speed until soft peaks form, about 2 minutes. Add sugar and vanilla extract; whip until medium peaks form, about 2 minutes more.
- Place half of the graham cracker crumbs in the bottom of a trifle bowl. Top with half of the cranberry mixture and whipped cream. Repeat layers, ending with whipped cream. Chill until set, at least 3 hours.

CRANBERRIES, CRACKERS, AND CREAM (YIFTA)
Found this on SatelliteSisters.com and made it last year for Thanksgiving. I got lots of comments on how good it was so I'm making it again this year. Thank you to the reviewer who gave me the true name of this dish.

Steps:
- Combine water and 1 1/4-2 cups of sugar depending on taste in a saucepan and heat until sugar dissolves. Add cranberries and cook until cranberries split. Set aside to cool.
- Whip the cream and 2 tablespoons of sugar until it turns into whipped cream.
- Using a glass bowl, put a layer of cranberries in the bottom of bowl. Layer soda crackers to cover well over the cranberries, then a layer of whipped cream. Start over with cranberries, crackers and cream until bowl is full, ending with the cream. A little spoon of cranberries on the top looks nice.
- Refrigerate until ready to serve.

LAYERED CRANBERRY DESSERT
On occasion, I like to "fancy up" one of my favorite gelatin desserts with a buttery graham cracker crust and a layer of cream cheese filling. Mandarin oranges add color and pair well with the cranberry gelatin. -Margery Bryan, Moses Lake, Washington

- In a large bowl, dissolve gelatin in boiling water. Stir in cranberry sauce and cold water until blended. Refrigerate for 45 minutes or until partially set., Meanwhile, in a small bowl, combine the cracker crumbs, 1/4 cup sugar and butter. Press into an ungreased 13-in. x 9-in. dish. Refrigerate until set., In a large bowl, beat cream cheese and remaining sugar until smooth. Fold in half of the whipped topping. Spread filling over crust. , Fold oranges into gelatin mixture; spoon over cream cheese layer. Refrigerate for 4 hours or until firm. Cut into squares; dollop with remaining whipped topping.

"GIFTA" SALAD (CRANBERRIES & CREAM)
This is from my Great Aunt Helen, a well loved cook and baker. I miss her, but enjoy making many of her recipes she shared with us at the last family reunion before her death. Thank You Aunt Helen!

- 1. Boil Cranberries in 1 Cup water until skins 'pop'.
- 2. Add Sugar and bring to a boil, chill thoroughly.
- 3. Just before serving, mixed crushed saltines with melted butter.
- 4. Whip cream, i whip mine so its stiff.
- 5. Cover bottom of clear glass bowl with a layer of cracker/butter crumbs (half the crumbs)
- 6. Layer on half the cooled cranberries, then a layer of whipped cream.
- 7. Repeat layers in same order. DELICIOUS!!!
