BLACK SEA BASS WITH CORN AND JUMBO LUMP CRAB SAUTE

8 ounces black sea bass fillet, cleaned and scaled, skin on
Salt and freshly ground black pepper
2 ounces blended olive oil, plus 2 ounces
2 ears fresh sweet corn, cut off the cob
1/4 cup diced onion
1/2 red bell pepper, diced
1 teaspoon diced poblano pepper
2 ounces jumbo lump crab, picked over and cartilage removed
1 tablespoon minced chives
1 teaspoon chopped fresh thyme leaves, plus 1 sprig for garnish
1/2 cup chicken stock
2 tablespoons sweet butter, cold
2 to 4 roasted fingerling potatoes

Steps:

  • Score the skin side of the sea bass fillet (make a few small slit marks in the skin with a sharp knife). Season the fish with salt and pepper.
  • Preheat a medium saute pan over high heat and add 2 ounces of olive oil. When the oil is smoking, add the fish, skin side down. Reduce heat to medium and press fillet with a spatula to crisp the skin. When the skin is browned, flip fish. (The total cooking time for the fish should be 5 minutes). Remove from pan and keep warm.
  • Add the remaining 2 ounces olive oil to the saute pan. Add the corn, onion, red pepper, and poblano pepper and saute for 1 minute. Add the crabmeat, chives, and chopped thyme, stirring to blend. Adjust seasoning to taste. Add the chicken stock and whisk in the butter to form a sauce. Reduce until sauce consistency.
  • Arrange the sauteed vegetable mixture in a large serving bowl. Top with the warm bass fillet and roasted fingerling potatoes. Garnish with a sprig of thyme.

1 bunch asparagus (about 12 ounces), woody ends removed, cut into 1-inch pieces
2 teaspoons fresh lime juice
3 teaspoons olive oil
1 cup lump crab meat, picked over for shells
Salt and freshly ground black pepper to taste
2 tablespoons all-purpose flour
4 3-to-4-ounce flounder fillets or 2 8-ounce fillets, split down the center

Steps:

  • Bring a medium-size pot of water to a boil. Add the asparagus and blanch until tender, but not soft, about 3 minutes. Drain and place under cold running water until cool. In a medium-size bowl, whisk together the lime juice and 2 teaspoons of the olive oil. Toss in the asparagus and crab meat and season with salt and pepper. Set aside.
  • Place the flour on a plate and season to taste with salt and pepper. Lightly dust the flounder on both sides with the seasoned flour. Heat the remaining teaspoon of olive oil in a large, heavy nonstick skillet over high heat. Place the flounder in the pan and saute on one side for about 90 seconds. Turn the fish over and immediately divide the asparagus and crab mixture evenly among each fillet, spooning the mixture into a mound. Remove from the heat. Cover the pan and let stand for 1 minute. Divide among 4 plates and serve immediately.

1 teaspoon salt
1/2 teaspoon ground turmeric
2 cooked Dungeness crabs (4 1/2 pounds total), cleaned, cracked, each cut into 8 pieces
5 dried chiles de árbol*
8 whole black peppercorns
5 whole cloves
1 teaspoon coriander seeds
1 teaspoon aniseed
1 teaspoon cumin seeds
1/2 cinnamon stick
1/8 teaspoon ground nutmeg
1 cup unsweetened shredded coconut**
1/4 cup vegetable oil
2 1/2 cups finely chopped onions
1 cup canned unsweetened coconut milk**
1/2 cup water
Lime wedges
Steamed rice

Steps:

  • Mix garlic, 1 teaspoon salt, and turmeric in bowl. Place crab on rimmed baking sheet; smear garlic mixture over. Cover; chill 2 hours.
  • Heat medium skillet over medium heat. Add chiles and next 7 ingredients; stir until toasted, about 3 minutes. Transfer to spice grinder; cool. Add coconut to skillet and stir until light brown, about 5 minutes; cool. Add 1/3 cup coconut to spices in grinder; blend well. Add remaining coconut, 1/3 cup at a time, grinding finely.
  • Heat oil in large deep skillet over medium heat. Add onions; saute until golden, about 20 minutes. Add crabs and coconut-spice mixture; reduce heat to low. Cook until heated, tossing with tongs, about 5 minutes. Add coconut milk and 1/2 cup water; bring to simmer. Cover; simmer 15 minutes, turning often. Transfer crab to platter. Serve with lime wedges and rice.

1 medium onion, diced
1 cup sliced mushrooms (fresh or canned, drained)
1 cup diced tomatoes with juice (fresh or canned)
2/3 cup fresh shrimp or 2/3 cup frozen shrimp, thawed
2/3 cup fresh crabmeat or 2/3 cup frozen crabmeat, thawed
1 tablespoon tarragon

10 oz Spinach and Ricotta Ravioli, cooked in salt water, per instructions 1 tbsp olive oil, divided 1 small bunch of asparagus, wooden ends removed, cut into thirds 1 cup of grape tomatoes Pinch of crushed red pepper flakes 2 cloves of garlic 1 tbsp

Steps:

  • Cook the ravioli in salted water, per instructions. Drain ravioli reserving 3 tablespoons of pasta water.
  • While the ravioli is cooking, heat two tablespoons of olive oil in a large sauté pan over medium heat. Add the asparagus and grape tomatoes along with the crushed red pepper flakes then cook, stirring occasionally, for 4-5 minutes, until the asparagus is crisp tender and the tomatoes are ready to burst. Add the minced garlic, remaining olive oil, and butter. Toss to mix well then gently add the cooked & drained ravioli to the pan along with a few tablespoons of pasta water; season with sea salt and freshly cracked pepper, to taste. Pour into a serving bowl then top with shredded Parmesan, toasted pine nuts, and fresh basil. Serve immediately. Enjoy.
