1-1/2 cups uncooked penne pasta
1 jar (15 ounces) Alfredo sauce
1-1/2 cups imitation crabmeat, chopped
1 medium yellow summer squash, sliced
1 medium zucchini, sliced
1 tablespoon dried parsley flakes
1/8 to 1/4 teaspoon crushed red pepper flakes
1-1/2 cups shredded part-skim mozzarella cheese
2 tablespoons dry bread crumbs
2 teaspoons butter, melted

Steps:

  • Preheat oven to 325°. Cook pasta according to package directions. , Meanwhile, in a large bowl, combine Alfredo sauce, crab, yellow squash, zucchini, parsley and pepper flakes. Drain pasta; add to sauce mixture and toss to coat. Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese. , Cover and bake 35 minutes or until heated through. Toss bread crumbs and butter; sprinkle over casserole. Bake, uncovered, 5-6 minutes longer or until browned.

2 packages (8.8 ounces each) ready-to-serve long grain and wild rice
1/4 cup butter, cubed
2 celery ribs, chopped
1 medium onion, chopped
3 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
1 teaspoon seafood seasoning
3/4 teaspoon salt
1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
1-1/2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
2 cans (6 ounces each) lump crabmeat, drained
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. Spread rice into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat. Add celery and onion; cook and stir until tender, 6-8 minutes. Stir in flour until blended; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes., Stir in seafood seasoning, salt, pepper sauce and pepper. Fold in shrimp and crab. Spoon over rice. Sprinkle with cheese. Bake, covered, until shrimp turn pink, 40-45 minutes. Let stand 5 minutes. To Make Ahead: Can be made a day in advance. Prepare recipe as directed, cooling sauce slightly before adding shrimp and crab. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed.

After several days of craving a crab bake casserole like the one at my local Chinese buffet, I came up with this recipe by tweaking one that I found online. To me, this tastes pretty close to those that I've had at several chinese buffets.

1 lb imitation crabmeat (or real, if preferred)
1/2 large onion, finely chopped
1/4 cup mayonnaise
1/4 cup sour cream
4 ounces cream cheese (1/2 a block)
1 cup shredded swiss cheese
2 teaspoons garlic powder
1 teaspoon dried parsley (or handful fresh)
1/2 cup shredded cheddar cheese

Steps:

  • Mix all ingredients together. Place into pan and sprinkle cheddar cheese on top. Bake in 350 degree oven for approximately 30 minutes.
  • VARIATION: You can mix seafood types -- use 1/2 lb. crab and 1/2 lb. shrimp, lobster, or other seafood.

5 tablespoons butter
1 medium onion, chopped
2 (8 ounce) cans crabmeat, drained
1 (15 ounce) can artichoke hearts, drained and chopped
2 tablespoons parsley
1/4 teaspoon salt
2 -3 cups chicken, cut into bite-sized pieces
1 -2 cup shredded cheese
1/2 teaspoon paprika
1 cup coarse breadcrumbs

Steps:

  • Grease a 9x13 baking dish and preheat the oven to 350°F.
  • Cook the chicken (I use tenderlions and sauté them in a skillet with a tablespoon of olive oil).
  • In 3 quart or larger sauce pan, sauté onion in 2 tbsp butter until tender at a medium heat. Add the chicken, crab, artichokes, parsley, salt and paprika. Stir occasionally until everything is hot.
  • Mix in the cheese; I didn't have room in my 3 quart pan to add the cheese, so I layered cheese and the contents of the pan in the baking dish and mixed it up there.
  • Put the contents of the pan into the baking dish. Cover and bake at 350 for 15 minutes.
  • Melt the remaining 3 tbsp butter and stir it into the bread crumbs so that they are a little moist and stick together. Sprinkle over the baking dish and bake uncovered until bread crumbs are golden (about 10 minutes).

1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup milk
1 tablespoon grated onion
1/2 teaspoon paprika
3/4 cup diced cooked chicken
3/4 cup flaked crabmeat
1 (8 ounce) can mushrooms, drained
1/2 cup buttered bread crumbs or 1/2 cup corn flake crumbs

Steps:

  • Position the rack in the center of the oven and preheat to 325°.
  • In a saucepan, combine the mushroom and chicken soups, the milk, onion, and paprika and bring to a boil. Remove from the heat and stir in the chicken, crabmeat, and mushrooms.
  • Pour into a casserole dish and sprinkle with the buttered crumbs/corn flake crumbs.
  • Bake for about 15 minutes, or until browned and bubbly.

CRAB ENCHILADA CASSEROLE

ALL SUMMER LONG we find thousands of uses for crab. Crab soup, crab salad, crab sandwiches-there's no dish that doesn't taste better with crab. We created this recipe with leftover Easiest Crab Salad (page 46), but if you can't get Dungeness crab, substitute blue crab, chopped prawns or bay shrimp, or even lobster in this recipe.

Yield serves 4 to 6

10 6-inch corn tortillas
1 7-ounce jar salsa verde (medium to hot)
1 7 1/2-ounce container crème fraîche
1 teaspoon extra-virgin olive oil
Easiest Crab Salad (page 46)
8 ounces semihard cheese (page 23), grated (2 cups)
Kosher salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 375°F.
  • Using either a gas stove or a broiler, toast the tortillas over or under the flame until they are partially crisp and the edges are just blackened, about 30 seconds per side. The tortillas will burn easily, so check them often while they are toasting.
  • In a small bowl, combine the salsa verde and crème fraîche to make a creamy sauce. Set aside.
  • Drizzle the olive oil in the bottom of an 8-inch baking dish. Trim 3 to 4 tortillas to fit the contours of the baking dish and make one complete layer of tortilla over the bottom of the dish. On top of the tortillas, layer one-third of the crab salad, one-third of the cheese, and one-third of the sauce. Top with another layer of tortillas, another third of the crab salad, another third of the cheese, and another third of the sauce. Make one final layer of the remaining tortillas and tortilla trimmings, crab salad, and cheese. (You will have formed three layers in the dish.) Pour the remaining sauce over the top, making sure to cover any exposed crab or tortilla pieces. Sprinkle the top with salt and pepper.
  • Bake for 30 minutes, or until the edges are brown and bubbly and the casserole is hot throughout. Let rest for 5 minutes before serving.
  • Once baked, the enchiladas can be stored in the refrigerator, covered, for up to 2 days.

¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crabmeat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese.
  • Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.
