7 whole large eggs
3 large egg whites
1/2 cup milk
1 green bell pepper, chopped
1 small onion, chopped
2 tablespoons olive or vegetable oil
4 ounces bulk breakfast sausage (1/2 cup)
1 cup coarsely grated sharp or extra-sharp Cheddar (1/4 pound)

Steps:

  • Preheat broiler.
  • Whisk together whole eggs and whites, milk, and 1/2 teaspoon each of salt and pepper.
  • Cook bell pepper and onion in oil in an ovenproof 12-inch nonstick skillet over medium-high heat, stirring occasionally, until softened and golden, about 8 minutes. Add sausage and cook, breaking up large clumps, until no longer pink, about 2 minutes. Add egg mixture and half of cheese and cook, lifting up cooked egg around edges to let uncooked egg flow underneath, 3 to 5 minutes (top will still be moist).
  • Sprinkle top with remaining cheese and broil 4 to 6 inches from heat until set, puffed, and golden brown, about 3 minutes.
  • Cool 5 minutes, then loosen edges with a spatula and slide onto a plate. Serve warm or at room temperature.

1 lb ground sausage
1/2 cup chopped onion
6 eggs
1 (8 ounce) package cream cheese, room temperature
1/4 cup whipping cream
2 cups French bread, 1/2 inch pieces
2 cups shredded swiss cheese
2 zucchini, cut into 1/4-inch slices
1/4 cup chopped seeded green bell pepper
1/4 cup chopped celery
1/4 cup sliced black olives
2 teaspoons salt
2 teaspoons ground black pepper
1/2 teaspoon crushed garlic

Steps:

  • Preheat oven to 300°F.
  • In a large skillet crumble sausage and cook with onion until sausage is browned; drain thoroughly.
  • In a medium bowl beat together eggs, cream cheese and cream until smooth. Stir in bread pieces, Swiss cheese, zucchini, green bell pepper, celery, black olives, salt, pepper and garlic.
  • Transfer to sausage mixture and toss until mixed together. Pour into greased 10-inch springform pan, or 9-inch square cake pan.
  • Bake for 30 to 45 minutes or until center is firm.
