COWBOY STEAK WITH COFFEE AND CHILI RUB



Cowboy Steak with Coffee and Chili Rub image

1 1/2 teaspoons ancho chili powder, or other chili powder
1 1/2 teaspoons fine ground espresso coffee
1/2 teaspoon brown sugar
1/4 teaspoon dry mustard
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/4 pound shoulder center steak (Ranch Steak), or top sirloin, about 1 1/4-inch thick

Steps:

  • Spray a large nonstick skillet with cooking spray and preheat it over medium-high heat. In a small bowl combine all the ingredients for the rub and coat the steak well on both sides. Cook steak for 14 minutes, turning once, for medium to medium-rare. Allow steak to sit for 5 minutes before slicing.

This is excellent on a nice thick steak. Make sure to dry the meat before you apply. If the steak is thin, use sparingly. Makes enough for 4 steaks.

1 tablespoon white peppercorns
1/8 teaspoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon sea salt
1 tablespoon lawrys seasoning or 1 tablespoon all purpose seasoning

Steps:

  • Combine all ingredients in a spice or coffee grinder.
  • Finely grind the mixture.

2 1/2 cups flour
2 cups brown sugar
1/2 teaspoon salt
2/3 cup shortening
1 cup milk
2 eggs
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • Mix flour, sugar, salt and shortening until crumbly.
  • Reserve l/2 cup.
  • To remaining crumbs add baking powder, soda, and spices.
  • Mix well.
  • Add milk and eggs.
  • Mix well.
  • Pour into a 9 x 13 greased and floured pan.
  • Top with reserved crumbs.

2/3 cup shortening
2 teaspoons baking powder

2 well-beaten eggs
1/2 cup chopped nuts

Steps:

  • Combine flour, sugar, salt& shortening- mix until crumbly.

1 cup coffee grounds
1 cup cold water
Dash salt, optional

Steps:

  • Fill coffee pot with water to the start of the spout. Bring water in coffee pot to a boil on high heat. Add coffee grounds and reduce heat to medium. Stir down with spoon if boil gets too high. Return to high heat and bring mixture to another boil, about 1 minute, or until froth is gone. Turn off heat and let coffee grounds settle. Pour cold water around the top of the coffee pot. If using salt, sprinkle on top, to taste. Keep coffee pot on low heat to keep warm. Do not allow to boil again.

1/2 cup freshly ground coffee
1/2 cup coarsely ground black pepper
1/4 cup kosher salt
1/4 cup brown sugar
4 (14 to 16 ounce) rib-eye steaks
2 tablespoons vegetable oil

Steps:

  • To prepare the coffee blend, combine all the ingredients in a jar with a tight-fitting lid. Shake well.
  • To prepare the steaks, preheat the oven to 450 degrees F. Season each steak with the coffee blend, evenly coating all sides and edges. Heat the oil in a large heavy skillet over high heat until just to the smoking point. Add as many steaks to the pan as will fit without overcrowding and sear well, 2 to 3 minutes per side. Transfer the steaks to a baking sheet and repeat with the remaining steaks. Place the steaks in the oven and cook for 5 to 10 minutes for medium-rare. Let stand for at least 5 minutes before serving. Or finish on the grill.

  • Add 1 cup water to your pot and bring it to a boil over high heat. Remove the pot from the heat and let it sit for 30 seconds. (This will lower the water temperature to 200 degrees F.)
  • Stir the coffee into the water. Let the brew sit for 2 minutes and stir again, then let it sit for 2 more minutes.
  • Sprinkle a little cold water on the grounds. Slowly pour the coffee, leaving behind the ground in the bottom of the pot.

2/3 c Butter

  • Grease 13xp pan, set aside. Combine flour, brown sugar & salt. Cut in butter until mixture resembles coarse crumbs, set aside 1/2 cup for topping. Stir remaining dry ingredients except nuts into remaining crumb mixture. Combine eggs & buttermilk. Add egg mixture to drin mixture & mix well. Put in pan, combine reserved crumbs mixture & nuts, sprinkle atop batter. Bake 350 35-40 minuted or until toothpick comes clean.

A great way to prepare a lesser expensive cut of steak. The rub will "lock in" the moisture over high heat, for a less fatty cut.

- rub
3 tablespoon(s) dark roast coffee, medium ground
1 teaspoon(s) garlic powder
1 teaspoon(s) smoked paprika
1 teaspoon(s) brown sugar
1 pinch(es) cayenne pepper
- fresh ground sea salt & pepper

Steps:

  • Brush your steak with the olive oil
  • Mix all your rub ingredients;thoroughlly rub your steak with the rub, store refrigerated in a zip lock bag 2-24 hours.
  • Remove from the fridge, let stand at room temperature at least 30 mns.
  • Prepare coals to medium high to high heat. Cover and cook over direct heat 8 minutes per side for medium rare.
