Number Of Ingredients 4

20 ounces melting chocolate, such as almond bark
1 cup raisins, dried cranberries or dried cherries
1/2 cup slivered almonds
1/2 cup whole peanuts

Steps:

  • Line two baking sheets with parchment paper.
  • Melt the chocolate in a microwave or in a bowl set over a pan of boiling water. Pour in the raisins, almonds and peanuts and stir to combine.
  • Use a spoon or small cookie scoop to place mounds of the mixture onto the prepared baking sheets. Leave to sit at room temperature or in the fridge for 5 minutes to set. Package in gift sacks!

My family and friends love these cookies and request these all the time. When I ask what do you want for your birthday, the answer is usually Cow patties!!!

Number Of Ingredients 8

2 c sugar
3 Tbsp cocoa
1/2 c milk
1 stick butter or margarine
dash(es) salt
3 1/2 c quick cooking oatmeal
1/2 c peanut butter, crunchy or plain
1 tsp vanilla flavoring

Steps:

  • 1. Mix first 5 ingredients in 3 qt sauce pan. Stir until well blended. On Medium heat, heat to a rolling boil. Boil for 3 minutes.
  • 2. Remove from heat and add oatmeal, peanut butter and vanilla. Stir until peanut butter is melted and all ingredients are well blended.
  • 3. Drop by spoonfuls onto wax paper. When set, Enjoy!

COOKIES
1 c butter, softened
2/3 c sugar
2 eggs
2 tsp vanilla extract
2 tsp baking soda
1 tsp salt
2 2/3 c all purpose flour
1 c semi-sweet chocolate chips
FROSTING
1/2 c butter, melted
2 Tbsp cocoa powder, unsweetened
3 Tbsp milk
1 1/2 tsp vanilla extract
2 3/4 c powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  • 2. Cream sugar and butter. Add eggs, vanilla, baking soda, and salt. Slowly add flour.
  • 3. Melt semi-sweet chocolate chips in the microwave, taking care to stir every 15 seconds to prevent burning.
  • 4. Mix melted chocolate chips in with the cookie batter.
  • 5. Drop by 1-2 tablespoons onto baking sheet. Bake for 7-8 minutes. *DO NOT OVERBAKE!* The perfect cookie will be crispy around the edges but soft and cake-like in the center!
  • 6. While cookies are cooling, mix all frosting ingredients using the low speed setting on your mixer.
  • 7. Once the cookies are cooled, pipe frosting onto them in a swirl pattern starting at the outside and working your way in.

2 1/4 c ap flour
1/2 c cocoa powder unsweetened
1 tsp baking powder
1/4 tsp salt
1 c softened butter
1 1/2 c sugar
1 tsp vanilla extract
1 egg
1-12` oz milk chocolate chips or semi sweet
1-12 oz vanilla or white chocolate chips* optional
1 c broken nuts, ... pecans or walnuts. possibly macadamia
confectioners' sugar
pretty paper doily

Steps:

  • 1. Mix flour, cocoa, baking soda, and salt; set aside
  • 2. Cream butter well. Gradually beat in sugar until mixture is light and fluffy. Beat in egg and vanilla until well blended.
  • 3. Stir in chocolate and nuts, gradually stir in flour mixture until well-blended, chill dough for 30 minutes or until firm enough to handle.
  • 4. Shape into 18 balls using about ¼ cup dough for each. Place 4 inches apart on lightly greased cookie sheet; flatten to 3 & ½ inch diameter. Bake on middle rack in preheated 350º oven15 minutes or until medium firm to touch. Cool on sheet until firm; Remove to racks to cool completely.
  • 5. To decorate, place a lacy doily on cookie; dust with confectioners sugar stirred through a strainer; remove doily. Store cookies lightly covered with waxed paper between layers. Makes 18. it is a very stiff dough

WAFFLE:
1 1/2 c corn meal
1/2 c flour
2 1/2 tsp baking powder
2 Tbsp sugar
3/4 tsp salt
1 large egg, beaten
1/1/2 c milk
1/4 c butter, melted
TOPPINGS:
1 onion, chopped
... shredded cheddar cheese
... jalapeno slices
... sour cream
2 large cans chili (not hot dog sauce) with or without beans as per preference

Steps:

  • 1. WAFFLE: Stir together first 5 ingredients in a large bowl. Stir together egg, milk and butter; add to cornmeal mixture, stirring just until dry ingredients are moistened. Bake in a preheated, oiled waffle iron just until crisp.
  • 2. Place waffle on a plate and spread chili to cover top of waffle. Top chili with any combination of the following to taste: cheese, onion, jalapeno slices, and sour cream.
